Healthy Apple Cinnamon Oatmeal image

A delicious twist on plain old oatmeal. Flavorful and hearty to please everyone in the family! Whole, old-fashioned oats are used.

2 cups old fashioned oats
2 cups milk
1 1/4 cups water
1 apple, peeled and chopped
1/4 cup dried cranberries or 1/4 cup raisins
1/2-1 teaspoon cinnamon (saigon cinnamon is my preference)
1 teaspoon vanilla
honey (optional) or maple syrup, to taste (optional)

Steps:

  • Place milk, water and sugar in saucepan.
  • Chop apple into small, thin chunks. Add it and the dried fruit to the milk mixture.
  • Heat the mixture on medium until boiling or near boiling.
  • Add oats and cinnamon and cook for 3-5 minutes stirring occasionally. If desired, also add honey, brown sugar or maple syrup.
  • When oatmeal is cooked, add vanilla.

This healthy, green bowl of oatmeal is the perfect breakfast for St. Patrick's Day (or any time of year). Protein-rich yogurt and antioxidant-packed matcha green tea will give you a boost of energy and keep you fueled for the day ahead.

Kosher salt
2 cups old-fashioned oats
1 cup 2-percent Greek yogurt
2 tablespoons maple syrup
1 teaspoon matcha green tea powder, plus more for sprinkling
4 tablespoons dry roasted, unsalted pistachios, finely chopped
1 Granny Smith apple, sliced into matchsticks

Steps:

  • Bring 3 1/2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan. Reduce the heat to medium-low and stir in the oats. Cook, stirring frequently, until the oats are creamy and tender, 5 to 6 minutes. Remove the saucepan from the heat, cover and rest until the oatmeal thickens slightly, about 2 minutes.
  • Whisk together the yogurt, 1 tablespoon of the maple syrup and the matcha in a small bowl until smooth and creamy. Set aside.
  • Transfer the oatmeal to four serving bowls, and top each with 1/4 cup of the matcha yogurt. Scatter the chopped pistachios over the oatmeal and drizzle with the remaining maple syrup. Top each serving with some apples and sprinkle with matcha to serve.
