SPICY ZUCCHINI OATMEAL COOKIES



Spicy Zucchini Oatmeal Cookies image

In my efforts to use the abundance of zucchini in my garden I concocted this little cookie. I prefer my oatmeal cookies to have a little jazz, so if you are not a fan of ground cloves, they can be omitted. It's a not too sweet cake-like cookie that is perfect with your cup of coffee or tea.

1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 ½ teaspoons ground cinnamon
¼ teaspoon ground cloves
½ cup butter, softened
⅔ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
1 cup shredded zucchini
½ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Stir together the flour, baking soda, cinnamon, and cloves in a bowl; set aside. Beat the butter and brown sugar with an electric mixer in a large bowl until creamy. Add the egg and the vanilla extract. Mix in the flour mixture and oats until just incorporated.
  • Wring the zucchini in a clean towel to remove any excess moisture. Stir the zucchini and raisins into the dough; mixing just enough to evenly combine. Drop batter by rounded teaspoonfuls 2-inches apart onto the prepared baking sheets. Bake for 14 to 16 minutes or until the bottom edges turn golden brown.

1 medium ripe banana, mashed
2 tbsp unsweetened applesauce
1 large egg
1 cup Bob's Red Mill Rolled Oats
1/2 cup Bob's Red Mill Whole Wheat Flour (I use the pastry flour)
1 tbsp ground flaxseed
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp fine sea salt
1 medium zucchini, grated*
1/2 cup walnuts, chopped
1/2 cup dark chocolate chips

Steps:

  • Heat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, whisk the banana, applesauce and egg until smooth.
  • Add flour, flaxseed, baking soda, cinnamon and salt. Stir to combine.
  • Grate the zucchini onto paper towels or a clean dish towel. Squeeze out the excess water.
  • Add the grated zucchini, oats, chocolate chips and walnuts to the banana mixture and stir to combine.
  • Scoop the batter onto the cookie sheet using a 3 tbsp (#20) scoop and flatten slightly, leaving about an inch between cookies.
  • Bake 11-14 minutes, or until set. (Mine take 12 minutes.) Remove from oven and cool before removing from the baking sheet.
  • Store cookies in an airtight container in the refrigerator.

1/2 cup peanut butter (Can sub for any nut or seed butter of choice)
1 1/4 cups mashed banana
1/4 cup shredded zucchini (moisture squeezed out)
1/2-1 cup chocolate chips of choice

Steps:

  • Preheat the oven to 175C/350F. Line a large baking tray with parchment paper. Alternatively, you can use a cookie sheet.
  • In a large mixing bowl, add your ingredients, except for your chocolate chips, and mix well. Fold in your chocolate chips.
  • Form 16 balls of dough with the batter. Place the balls on the lined tray and press each one into a cookie shape. Top with extra chocolate chips and bake for 12-15 minutes, or until golden on the edges.
  • Allow cooling on the tray for 10 minutes, before transferring to a wire rack to cool completely.

1 medium ripe banana (mashed)

3/4 cup coconut sugar (or brown sugar)
1 large egg
1 teaspoon vanilla extract
1 cup shredded zucchini
3/4 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine flour, oats, cinnamon, baking soda, and salt. Set aside.
  • In a separate large bowl, beat mashed banana, butter, sugar, egg, and vanilla until smooth. Fold flour mixture into liquid with shredded zucchini, walnuts, and chocolate chips until mixture forms a dough. (dough will be slightly sticky)
  • With floured hands, roll dough into 1-in balls and place on parchment paper-lined baking sheets. 2 cups grated zucchini
2 1/2 cups whole wheat flour

1/2 teaspoon salt
2 1/2 cups oats

Steps:

  • Preheat the oven to 350 degrees. In a large bowl, beat the butter and sugars together until light in color and very fluffy - 3 to 5 minutes.
  • Add the vanilla and eggs and beat for another minute.
  • Add the grated zucchini and mix until incorporated.
  • Sprinkle the flour, cinnamon, baking powder, baking soda, and salt over the wet ingredients. Mix everything together on low speed until well combined. Add the oats and mix to combine.
  • Scoop dough into balls using a 1 ounce scoop and place on a baking mat or parchment-lined baking sheet.
  • Bake for 12 to 16 minutes until the center is set and the edges are golden. Let the cookies rest on the cookie sheet for 5 minutes before transferring them to a wire rack. Store covered.
