Bacon Mac & Cheese image

Jalapeno pepper adds an extra kick to this bacon mac and cheese, giving it great grown-up taste. I serve this comforting dish throughout the year.-Shelly Boehm, South Bend, Indiana

6 cups uncooked elbow macaroni
1 pound bacon strips, chopped
1 jalapeno pepper, seeded and minced
3 cups 2% milk
2 cups shredded pepper Jack cheese
1 package (8 ounces) process cheese (Velveeta), cubed
1 cup shredded Colby-Monterey Jack cheese
1 cup shredded cheddar cheese
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
Dash hot pepper sauce
3 green onions, chopped

Steps:

  • Cook macaroni according to package directions., Meanwhile, in a Dutch oven, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings. Saute jalapeno in reserved drippings. Add milk and cheeses to pan; cook and stir until blended. Stir in the onion powder, chili powder, salt, pepper and pepper sauce. , Drain macaroni; add to pan with the onions and cooked bacon. Mix well. , Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until heated through.

This is a great breakfast, especially on the weekend. You fry bacon on a skillet, then after the bacon is crispy, fry eggs in the bacon grease. Garnish your plate with toast or fruit.

6 slices bacon
3 eggs
salt and pepper to taste

Steps:

  • Fry the bacon in a large skillet over medium heat until crisp. Remove from the pan, and set on paper towels to drain. Crack the eggs into the pan with the bacon grease so that they are about 1 inch apart. Season with salt and pepper. When the eggs look firm, flip them over, and cook on the other side to your desired doneness. Transfer to a plate and serve with bacon.

2 lbs salad macaroni, cooked and cooled
18 hard-boiled eggs, Chopped
1 1/2 cups green onions, chopped
1 1/8 cups sweet pickles, chopped
1/2 cup dill pickle, chopped
2 teaspoons prepared mustard
3 1/2 teaspoons beau monde seasoning
2 teaspoons garlic powder
2 teaspoons parsley
1 1/2 tablespoons dill
pepper
1/2 cup sweet pickle juice
8 cups mayonnaise

Steps:

  • In large bowl, combine pickles, mustard, Beau Monde, garlic, parsley and dill. Add macaroni and onions.
  • In separate bowl combine mayonaise and pickle juice. Start adding to salad mix until coated to liking. There will be some mayonaise mix remaining. Use this to moisten prior to serving.
  • Pepper to taste.
  • Chill at least one hour.
