Both my husband and I were raised on farms, and we prefer home cooking to eating out. That works out fine since I love trying new recipes! I've served this apple salsa as an appetizer and a snack. Plus, it's sweet enough to be a dessert. It's easy to transport besides. -Carolyn Brinkmeyer, Golden, Colorado

SALSA:
2 medium tart apples, chopped
1 cup chopped strawberries
2 medium kiwifruit, peeled and chopped
1 small orange
2 tablespoons brown sugar
2 tablespoons apple jelly, melted
CHIPS:
8 flour tortillas (7 or 8 inches)
1 tablespoon water
1/4 cup sugar
2 teaspoons ground cinnamon

Steps:

  • In a bowl, combine apples, strawberries and kiwi. Grate orange peel to measure 1-1/2 teaspoons; squeeze juice from orange. Add peel and juice to apple mixture. Stir in brown sugar and jelly. , For chips, brush tortillas lightly with water. Combine sugar and cinnamon; sprinkle over tortillas. Cut each tortilla into eight wedges. Place in a single layer on ungreased baking sheets. , Bake at 400° for 6-8 minutes or until lightly browned. Cool. Serve with salsa.

2 cups peeled, cored, and diced apple
2 tbsp fresh lemon/calamansi juice
3 tbsp brown sugar
1/4 tsp cinnamon
1 tsp cornstarch dissolved in 1 tsp water
♥ for the chips
5 (6-inch) wheat tortillas
2 tablespoons butter, melted
1/2 teaspoon cinnamon
1 1/2 tablespoons sugar

Steps:

  • ■You can either cook this on the stove-top or the microwave. ■Combine all the dip ingredients in a small pan/ microwaveable bowl except the cornstarch-water mixture. ■Heat for a few minutes until it's boiling and has extracted juice from the apple. ■Add cornstarch-water mixture to the "sauce" ■Put back in the microwave/stove top until boiling and the sauce has thickened. ■Set aside. You can serve this warm or chilled. It doesn't matter. It will taste delicious. ■Cut tortillas into desired size. {wedges} ■Put in a slightly greased baking pan. ■Brush the tortillas with butter. ■Sprinkle with cinnamon and sugar, and bake at 210º C until golden brown, about 5-8 minutes. ■Let them cool before serving and serve with the Apple Pie Dip

1 teaspoon ground cinnamon
4 8-inch flour tortillas
2 medium granny smith apples, chopped
1 medium pear, chopped
1/2 cup chopped red seedless grapes
1/2 cup chopped celery
1/4 cup chopped walnuts
1 tablespoon packed brown sugar
3 tablespoons orange juice
2 teaspoons grated orange rind

Steps:

  • For the Cinnamon Chips-------------.
  • Preheat oven to 375 degrees.
  • Combine sugar and cinnamon in a small bowl (I put this mixture in a spice bottle with holes so I could just sprinkle it on).
  • Brush tortillas with water.
  • Sprinkle sugar mixture evenly over both sides of tortillas.
  • Cut each tortilla into 8 wedges; arrange on baking sheet.
  • Bake 5- 7 minutes or until golden brown/crisp.
  • Remove to wire rack to cool completely.
  • For the Harvest Apple Salsa-------------.
  • Combine all ingredients in a large bowl.
  • Add walnuts just before serving as it will turn the mixture brown.
  • Chill overnight to create more juice.

2 teaspoons ground cinnamon
1/2 cup sugar
6 (10 inch) flour tortillas
1/4 cup apple jelly, melted

Steps:

  • Position the oven racks in the center and bottom third of the oven. Preheat the oven to 350. Spray the bottom of 2 rimmed baking sheets with vegetable oil cooking spray, or use nonstick baking sheets.
  • In small bowl combine the cinnamon and sugar. Using a pastry brush, brush the tortillas generously, on one side only, with the jelly.
  • Using a 2 1/2" heart-shaped cooking cutter, round cookie cutter, or any other fun cookie cutter about the same size, cut the tortillas into shapes.
  • Sprinkle the brushed side generously with sugar and arrange on the baking sheets without crowding. (Bake the tortilla chips in batches if they all won't fit.) Bake until the tortillas are crispy and golden brown, about 12 minutes, switching the position of the baking sheets halfway through the baking time.
  • Transfer to a wire rack to cool. Arrange in a basket or serving bowl and serve immediately.
