VEGETABLE BEEF STEW



Vegetable Beef Stew image

Try an easy vegetable beef stew recipe made with stewing beef, onions, potatoes, and carrots, along with celery and seasonings.

2 pounds stewing beef (or a chuck roast)
2 to 3 teaspoons vegetable oil
1/2 teaspoon seasoned salt
1 cup onions (chopped)
1 can/10 1/2 ounces condensed beef broth (or concentrated rich beef stock )
3 cups potatoes (diced)
2 cups carrots (diced)
2 ribs celery (cut into 1/2-inch pieces)
2 tablespoons all-purpose flour
1/3 cup water (cold)
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • Cut the beef into small, bite-sized cubes.
  • Heat the vegetable oil in a Dutch oven or large kettle; add the beef, seasoned salt, and chopped onions and mix to combine.
  • Cook over medium heat, turning frequently, for about 10 to 15 minutes, until the meat is browned on all sides and the chopped onions are tender. Drain off excess fat if necessary.
  • Add the beef broth and some hot water to the pot until the liquid level is about 1 inch above the beef.
  • Cover, reduce the heat to low, and ​simmer for 1 1/2 to 2 hours, or until the meat is tender.
  • Add the potatoes, carrots, and celery.
  • Cover and continue to cook, stirring occasionally, for 20 to 30 minutes longer, until the vegetables are tender.
  • To thicken the stew, combine the flour with the cold water in a measuring cup or small bowl; stir until smooth. Gently stir the flour mixture into the pot a little at a time, using as much as needed to make the stew as thick as you like.
  • Add pepper and taste for seasonings, adding salt if necessary.
  • Serve and enjoy.

1-1/2 pounds boneless beef chuck roast, cut into 1-inch cubes
2 teaspoons canola oil
1-1/2 pounds red potatoes, cut into 1-inch cubes
3 medium carrots, cut into 1-inch lengths
1 medium onion, chopped
1/2 cup chopped celery
1 can (28 ounces) crushed tomatoes, undrained
3 tablespoons quick-cooking tapioca
2 tablespoons dried basil
1 tablespoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large nonstick skillet, brown meat in oil over medium heat. Meanwhile, place the potatoes, carrots, onion and celery in a 5-qt. slow cooker., Drain meat; add to slow cooker. Combine the tomatoes, tapioca, basil, sugar, salt and pepper; pour over the top. , Cover and cook on high for 5-6 hours or until meat and vegetables are tender.

2 cups finely chopped fresh kale
1 package (9 ounces) frozen peas, thawed
3/4 teaspoon garlic powder

Grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a Dutch oven, cook beef, onion and garlic over medium heat until beef is no longer pink, breaking up beef into crumbles, 6-8 minutes; drain., Stir in tomatoes, spaghetti sauce, kale, peas, garlic powder and pepper. 1 pound lean ground beef
1 (10 oz.) package frozen chopped broccoli, thawed and drained
1 1/3 cups Original Crispy Fried Onions
1 med tomato
1 (10 3/4 ounce) can Campbell's® Condensed Cream of Celery Soup
1/3 cup milk
1 cup shredded cheddar cheese
1/2 tsp Montreal Steak seasoning blend

Steps:

  • HEAT oven to 400°F. Arrange potatoes in bottom and up sides of 2-quart baking dish to form a shell. Bake, uncovered, 10 minutes.
  • COOK beef in large skillet over high heat until well-browned, stirring to separate meat. Drain well. Add broccoli, 2/3 cup Crispy Fried Onions and tomato. Stir in soup, milk, 1/2 cup cheese and seasoning.

8 lbs chuck steaks, cut into 1 inch x 1/2-inch pieces
2 gallons beef stock, i use superior touch 8tbs beef flavor and 4 tbs vegetable flavors
3 lbs frozen mixed vegetables
12 stalks celery, chopped
5 large onions, chopped
3 (12 ounce) cans whole kernel corn
1/2 gallon v 8 juice
8 ounces pearl barley
3/4 cup Lea & Perrins Worcestershire Sauce
2 teaspoons salt
2 tablespoons black pepper
1 bay leaf
1 tablespoon ground marjoram
1 1/2 teaspoons ground thyme
2 (12 ounce) cans stewed tomatoes, chopped
1/4 lb butter

Steps:

  • In heavy skillet, brown meat in butter. DO this in one pound batches for better browning. Deglaze with stock between batches if necessary.
  • Place all ingredients except the frozen vegetables and 4 oz of the pearl barley in 4 1/2 gallon counter top roaster.
  • Heat on high covered until boiling, remove cover and reduce heat to 250°.
  • Simmer for 2 hours or until beef is tender.
  • Add frozen vegetables and remainder of barley and simmer for another hour.

1 14 1/2-ounce can whole tomatoes, drained (juices reserved), chopped
4 boiling potatoes (about 1 1/4 pounds) cut into 1-inch cubes
1 cup chopped celery
1 cup sliced carrots
1 cup pearl barley
1 cup shredded green cabbage
2 bay leaves
1 teaspoon dried basil
5 1/2 cups canned beef broth
1 cup water
2 10-ounce packages frozen mixed vegetables
Chopped fresh parsley

Steps:

  • Heat oil in heavy large Dutch oven over medium-high heat. Add beef and cook until brown, stirring occasionally, about 8 minutes. Add onion and garlic and sauté until onion is tender, about 5 minutes. Stir in tomatoes with juices and all remaining ingredients except frozen vegetables and parsley. Cover and simmer until meat is tender, about 1 hour 10 minutes. (Can be prepared 3 days ahead. Cover and refrigerate. Rewarm over medium heat before continuing.) Stir in frozen vegetables. Cover and simmer until vegetables are tender, about 10 minutes. Sprinkle soup with parsley and serve.

1 bag (16 ounces) frozen stew vegetable, thawed and drained
1 cup frozen cut green beans, thawed and drained
1/2 cup water
1 tablespoon Worcestershire sauce
1/2 package (2-ounce size) onion soup mix (1 envelope)
3 tablespoons chopped fresh parsley

Steps:

  • 1. Remove fat from beef. Cut beef into 1/2-inch pieces. Spray 4-quart Dutch oven with cooking spray heat over medium-high heat. Cook beef in Dutch oven 2 minutes, stirring constantly. 2. 1 tablespoon oil
5 cups water
3 cups vegetable juice

1 teaspoon dried oregano
1 teaspoon dried thyme
3 teaspoons vegetable seasoning (Grill Mates)
1/4 teaspoon cayenne pepper

1 onion, chopped
1 teaspoon garlic, minced fine
1 large tomatoes, chopped

  • -add the rest of ingredients and simmer 1 1/2 hours or till vegetables are cooked.

1 medium onion, cut into 1/2-inch pieces
2 tablespoons olive oil, divided
1 ½ pounds beef sirloin, cut into 1-inch cubes
¾ cup chicken broth
5 leaf (blank)s McCormick® Gourmet Collection® Bay Leaves
½ teaspoon McCormick® Gourmet Collection® Thyme Leaves
½ teaspoon McCormick® Gourmet Collection® Coarse Grind Black Pepper
½ teaspoon salt
¼ cup dry red wine*
3 cups prepared mashed potatoes

Steps:

  • Preheat oven to 425 degrees F. Toss chopped vegetables and onion with 1 tablespoon olive oil. Place on a large baking sheet; roast 20 minutes or until vegetables are golden in color.
  • Meanwhile, saute beef in 1 tablespoon olive oil in a large skillet over medium-high heat, 5 minutes or until beef is browned. Add roasted vegetables, chicken broth, 3 bay leaves, thyme, pepper, salt and wine. Simmer 5-10 minutes, or until sauce is slightly thickened.
