This is an easy, wonderful recipe that is simple enough for an everyday meal but good enough for company. It makes a large amount, so it feeds plenty of people. I serve it with steamed broccoli covered in a cheese sauce and fresh bread.-Christine Eilerts, Tulsa, Oklahoma

1/2 pound bulk Italian sausage
1/2 pound lean ground beef (90% lean)
1 jar (24 ounces) marinara sauce
1 can (14-1/2 ounces) Italian diced tomatoes
1 cup sliced fresh mushrooms
1 package (9 ounces) refrigerated cheese tortellini
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a small skillet, cook sausage and beef over medium heat until no longer pink; drain. Transfer to a 3-qt. slow cooker. Stir in the marinara sauce, tomatoes and mushrooms. Cover and cook on low for 6-7 hours or until heated through. , Prepare tortellini according to package directions; stir into meat mixture. Sprinkle with cheese. Cover and cook for 15 minutes or until cheese is melted.

¾ cup ketchup
¾ cup dry red wine
2 cups thinly sliced carrots
1 cup thinly sliced celery
2 cups sliced zucchini
8 ounces cheese tortellini
1 teaspoon Grated Parmesan cheese

Steps:

  • In large saucepot, brown sausage; drain on paper towels. Discard fat. In same pot, cook onions and garlic until tender. Add broth, tomatoes, ketchup, wine, carrots, and celery. Cover; simmer 30 minutes. Add zucchini and tortellini. Simmer, covered, 25 minutes. Serve sprinkled with cheese.

1 (10 1/2 ounce) can condensed French onion soup, undiluted
2 cups broccoli coleslaw mix
2 cups fresh-cut green beans
2 cups frozen cheese tortellini
grated parmesan cheese (optional)

Steps:

  • Cut sausage into 3/4 inch pieces, and brown in a stockpot, and drain.
  • Add water,stewed tomatoes, soup, coleslaw mix, and beans, and bring to a boil.
  • Reduce heat, cover and simmer for 20-25 minutes or until vegetables are tender.
  • Uncover, add tortellini, and cook 3-5 minutes or until pasta is tender.
  • Garnish with cheese, if desired.

  • Brown ground beef; drain off excess fat.
  • In 2 quart pan, mix together first 5 ingredients.
