1/2 pound sliced bacon
1 cup chopped celery
1/2 cup chopped onion
2 cups cubed peeled potatoes
1 cup water
2 cups frozen corn
1 can (14-3/4 ounces) cream-style corn
1 can (12 ounces) evaporated milk
6 ounces smoked sausage links, cut into 1/4-inch slices
1 teaspoon dill weed

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside., Saute celery and onion in drippings until onion is lightly browned. Add potatoes and water. Cover and cook over medium heat for 10 minutes. Stir in corn, milk, sausage, dill and bacon. Cook until potatoes are tender, about 30 minutes.

2 chicken bouillon cubes
1 cup hot water
5 bacon strips
1 cup chopped green pepper
1/2 cup chopped onion
1/4 cup all-purpose flour
3 cups milk
1-1/2 cups fresh or frozen whole kernel corn
1 can (14-3/4 ounces) cream-style corn
1-1/2 teaspoons seasoned salt
1/4 teaspoon salt
1/8 teaspoon white pepper
1/8 teaspoon dried basil

Steps:

  • Dissolve bouillon in water; set aside. In a large Dutch oven, cook bacon over medium heat until crisp. Remove bacon to paper towels to drain; crumble and set aside., In a large skillet, saute green pepper and onion in the drippings until tender. Add flour; cook and stir until smooth. Gradually stir in milk and dissolved bouillon. Bring to a boil; cook and stir for 2 minutes or until thickened. Add corn and seasonings. Cook for 10 minutes or until heated through. This is a corn chowder recipe which is actually adopted from our restaurant's famous conch chowder...that one's a trade secret, but we find that when you want the -comfort food-, this recipe should do nicely for your family, as it does ours! I simplified this recipe in many ways to be home-friendly and use the least amount of preparation, steps, and cooking dishes possible -- when we are at home, we don't have the benefit of a paid dishwasher! One note on this recipe -- Among other things, I cut out the par-boiling of the potatoes, so just make sure you -carefully- watch the cooking time on the potatoes, and tweak the recipe according to your preference of softness -- and we also like the skin-on approach when we are feeling particularly homey ;)

I remember making my first corn chowder during a school field trip to "The Little Red School House" My class made our very own Corn Chowder and when I tasted it, I fell in love with Corn Chowder. So corn chowder brings some happy childhood memories for me. I love this any time of the year. It's so chunky, creamy and comforting! I hope you enjoy!

1/2 pound(s) bacon, diced
4 tablespoon(s) butter
2 - large onions, diced
1 - red pepper, seeded and diced
2 teaspoon(s) thyme, dried
1/4 teaspoon(s) cumin
1/4 teaspoon(s) tumeric
2 pound(s) white potatoes, washed, skins on and cubed
6 cup(s) chicken broth
6 tablespoon(s) cornstarch
6 tablespoon(s) cold water
2 cup(s) heavy cream
4 cup(s) corn kernels, fresh, frozen or canned and drained
1/2 teaspoon(s) mccormick's or lawry's seasoned pepper blend
- cooked mini carrots (optional)
- shredded cheese (optional)

Steps:

  • In large stockpot, fry bacon until cooked and crispy but not burned. Drain fat, reserving 2 Tbsp, and place bacon on paper towel to cool. Set aside.
  • Add butter to the reserved fat and cook onions, and peppers until crisp-tender.
  • Add the spices, potatoes and chicken stock. Cook on low until potatoes are almost cooked through. This is where you can add the carrots if you'd like.
  • In small glass, dissolve cornstarch in cold water, creating a slurry.
  • Add mixture to hot soup a little at a time stirring constantly. This will thicken up very quickly. Keep stirring.
  • On low heat, add cream or half and half or milk to the chowder and stir. Simmer for 10-15 minutes until hot. Do not bring to a boil.
  • Add corn and seasoned pepper blend, stir and remove from heat. This is where you can add as much cheese as you like or top off the bowls with shredded cheese.

750 g potatoes, peeled & diced
1 tablespoon butter
1 garlic clove, crushed
2 cups chicken stock
1 (400 g) can creamed corn
1 (220 g) can creamed corn
1 1/2 cups milk
1/2 tablespoon dried chives
salt & pepper

Steps:

  • Heat butter in a large pot.
  • Sauté the onion and garlic until onion is transparent.
  • Add the potatoes and toss in the butter to coat.
  • Pour in the chicken stock and let simmer about 10 minutes or until potatoes are tender.
  • With a potato masher lightly mash the potatoes, leaving some chunks.
  • Stir in the creamed corn and milk.
  • Simmer on low heat gently, uncovered, stirring occasionally to prevent sticking.
  • *Do not allow to boil as there is a chance the milk may curdle.
  • *Simmer gently for 10 minutes or until chowder has thickened.
