Steps:
- Preheat oven to 375°F (190°C). Grease or line 12 muffin cups with paper liners.
- Filling: Place dates, hot water, brown sugar and lemon juice in a small saucepan. Stirring occasionally, simmer until thickened. Set aside to cool.
- Muffin: Combine bran, flour, baking soda and salt in large mixing bowl.
- Beat egg, brown sugar, oil and buttermilk together thoroughly in a separate large mixing bowl.
- Add egg mixture all at once to bran mixture. Stir just until moistened.
- Stir in date filling.
- Fill prepared muffin cups 3/4 full.
- Bake in preheated oven for 18 to 20 minutes or until a toothpick inserted in center of muffin comes out clean.

Steps:
- Preheat oven to 400°F.
- Grease 12 muffins cups and set aside.
- Mix bran cereal and milk in a small bowl and allow cereal to soften and absorb most of the milk.
- In a mixing bowl, combine cereal/milk, egg and butter, mixing well.
- Sift flour, baking powder and salt in a bowl.
- Add sugar.
- Combine flour with cereal mixture and stir until just moistened.
- Do not overmix.
- Spoon batter evenly into muffin cups.
- Top each cup with a spoonful of date filling.
- Bake for 20-25 minutes or until they are lightly springy.
- Cool muffins on a wire rack.

- In a large bowl, combine the bran, yogurt, applesauce and milk; let stand for 5 minutes. , Meanwhile, in a large bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon and salt. In another bowl, combine the egg substitute, molasses, oil, vanilla and bran mixture. Stir into dry ingredients just until moistened., Fill muffin cups coated with cooking spray two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
- In a small bowl, cover the raisins with water, and set aside to plump. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, allspice, dry milk powder, wheat bran, and farina cereal until thoroughly combined.
- Drain water from the raisins. In a separate bowl, beat the egg whites until frothy, then mix in the drained raisins, applesauce, carrot, vegetable oil, and bran cereal. Pour the liquid ingredients into the flour mixture, and briefly mix just to moisten (do not overmix). Fill muffin cups about 2/3 full, and sprinkle each muffin with about 1/2 teaspoon of raw sugar.
- Bake in the preheated oven until the muffins are set and the tops are golden brown, 25 to 30 minutes. A toothpick inserted into the center of a muffin should come out clean. Serve warm.

- Preheat oven to 375°F.
- Line muffin tin with paper or silicone liners or coat well with cooking spray.
- Make flaxseed egg by whisking flaxseed with 3 Tablespoons in a small bowl. Set aside.
- Combine flour, oat bran, cinnamon, baking soda and salt in a large bowl.
- Mash bananas in a bowl and add flaxseed egg, coconut oil, maple syrup, vanilla, carrots and raisins.
- Pour wet ingredients into the bowl with the dry ingredients and mix until just combined. Be careful not to over mix.
