TAMARIND AGUA FRESCA
This is another favorite agua fresca drink of mine. The tamarind has a sweet and sour kind of taste to it. You can find tamarind concentrate in most Mexican or Asian markets. Serve immediately or chill until ready to serve.

TAMARIND AGUA FRESCA
Easy, homemade recipe for Tamarind Agua Fresca (Agua Fresca de Tamarindo).

Steps:
- Peel the fruits and place them in a pot. It might take you some time to peel them the first time, they're not the easiest fruit to peel, While peeling, remove the veins on both sides of the fruit as well.
- Cover them in water and turn heat to high, once the water boil, lower heat to medium and cover pot. Add half cup of sugar. Also note *** at bottom of recipe about sweeteners and sugar quantity.
- I let boil for about 20 minutes.
- Let the mix chill a bit. Get a pitcher and a metal strainer that fits well on the top of the pitcher. Start pouring the boiled fruits in. Water will pour through but fruits will remain on top. Start using a big spoon to smash the pulp of the tamarind fruits through the strainer. Repeat until you are done. Then fill the pitcher with cold water. Mix well and let it chill for at least 90 minutes on the refrigerator.
- Serve over ice. Garnish as desired.

TAMARIND PASTE
Preparing tamarind paste is quite simple, and homemade paste has the added advantage of keeping for several months in the refrigerator, the result of its high acid content. Tamarind fruit comes in two forms: as blocks of fruit pulp or as whole fruit pods. If working with tamarind fruit pods, make sure they're unripe, which ensures a stronger degree of sourness and less sweetness. And don't forget to remove and discard the outer shell to use the pulp. Blocks of tamarind can be obtained from Indian and Asian grocery stores or online.

- Separate the tamarind into small chunks and place the fruit into a medium heatproof bowl. (If using whole tamarind pods, remove and discard the outer shell and use the soft fruit inside.)
- Pour the boiling water over the tamarind, submerge completely, cover with plastic wrap, and let sit for 30 to 45 minutes. Stir the tamarind occasionally with a fork at first, then, as the water cools, rub the fruit between your fingers to separate it from the seeds. The mixture will turn thick and pulpy.
- Set a fine mesh sieve over a medium bowl and pass the mixture through to remove any fibrous materials and seeds, pressing firmly with a large spoon to squeeze out as much liquid as possible and scraping the tamarind from the bottom of the strainer into the bowl. The final consistency should be thick, almost like ketchup. Transfer the tamarind paste to a clean jar or container. Store in the refrigerator for up to 2 months.

- Unpeel the fresh tamarind pods.
- Scrape any remaining peel bits under running water,.
- Bring unpeeled tamarind to boil in some of the recipe water.
- Simmer for about 3 min.
- Let cool and with hands get the pits out.
- Process unpitted pulp in blender.
- Sweeten remainding water.
- Mix everything together.
- Sieve for any remaining pulp threads or peel bits.
- Chill and enjoy.

Steps:
- Combine tamarind, dates, and 2 1/2 quarts water in a medium pot and bring to a boil; simmer briskly, stirring often and mashing pulp and dates with the back of a spoon until they break down, about 15 minutes. Remove from heat and let steep for 2 hours.
- Strain mixture through a fine-mesh sieve into a large bowl, pressing on solids to extract as much liquid as possible (you should have about 4 cups).
- Transfer tamarind mixture to a pitcher. Stir in sugar and 3 cups water. Chill until cold.
- Fill glasses with ice. Divide agua fresca among glasses.
AGUA DE TAMARINDO
Steps:
- Peel the tamarind pods by hand and discard the outer shell. It's okay if there are still little bits of shell stuck to the flesh, as the beverage will be strained.
- Put the tamarind flesh in a saucepan, seeds and all. Add the water, place over medium heat, and bring to a boil. Lower the heat and simmer, stirring occasionally, until the pulp is very soft, about 45 minutes.
- Strain through a fine-mesh sieve into a pitcher, pressing the solids with the back of a wooden spoon to extract as much liquid and tamarind pulp as possible. Add the sugar and stir until it dissolves. Taste and add a little more sugar if you like. Let cool to room temperature, then refrigerate until completely chilled. Serve over ice.
