HEARTY SPLIT PEA AND HAM SOUP
Warm yourself up with this flavorful winter soup. It's so good, you may have to keep it a secret in order to enjoy those wonderful leftovers!

- Melt 3 Tbsp of butter in a stock pot and then add the carrots, onion, and celery and cook for 3 minutes. Next, add the garlic, parsley, and black pepper and cook for 1 more minute. (This step adds a nice sweetness to the vegetables, but if you're making your soup in a slow cooker, just dump the ingredients into the cooker and skip sautéing the vegetables.)
- Add the ham bone, split peas, and water to the pot and stir to evenly combine the vegetables and split peas. Cook the soup at a simmer for 2-2½ hours. Stir the soup periodically and scrape the bottom of the pot to prevent burning. The soup can also be cooked in a slow cooker on high heat for 4-5 hours, or on low heat for 8-10 hours. Midway through your cooking time, add the potatoes to the pot so that they don't become too soft. The soup is done when the split peas are soft and breaking apart and the ham is falling off the bone.
- The last step is to remove the bone from the pot and any gristle that may have fallen off of it. Stir in 2 C of diced ham, bring back up to a simmer, and then remove the soup from the heat. Serve immediately. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
HEARTY & HEALTHY SPLIT PEA SOUP WITH HAM AND CORNBREAD CROUTONS
Mimi's Split Pea Soup with Cornbread Croutons is an old-timey and satisfying bowl of steamy comfort. This recipe is a good way to use up leftover ham. Add chunks of russet and sweet potatoes and top off the bowl with crunchy cornbread croutons for a filling wintry meal.

Steps:
- Over medium-high heat, add olive oil. Once hot add onions & garlic and celery & carrots (if using). Stir and saute until the onion is translucent. Add oregano. Stir. Add ham, stir, and saute until the meat just begins to brown on the edges.5-7 minutes.
- Add potatoes, sweet potatoes (if using) and ½ pound of split peas. If you're using ham hocks or a ham shank in place of diced ham, add to the pot. Cover with chicken stock/water. Bring to a boil, reduce to simmer, and cook uncovered for 45 minutes. Skim off the foam that rises to the top of the soup or stir the foam back into the soup Stir the pot every once in a while to prevent vegetables from sticking to the bottom of the pot.
- At the end of cooking time, add the remaining split peas. Stir and continue to simmer uncovered for another 45 minutes or until all the vegetables are soft.
- Remove ham hocks or shank. Stir. If the soup is too thick, add more chicken broth/water. If it's too thin, continue to simmer longer to the desired thickness. Remove meat from the hocks or shank and add back to the soup.
- Leave the potatoes in chunks or mash them with a potato masher or use an immersion blender to make a creamy soup. Add half-n-half if using. Stir. Check for seasoning.
- Ladle soup into deep bowls. Add croutons, sour cream or Greek yogurt, and sprinkle with ground black pepper.
- For Croutons
- Heat olive oil and butter in a 10" skillet over medium, medium-high heat. Once the butter begins to brown, add the cornbread cubes and brown on all sides - less than 5 minutes total. Remove from skillet and drain on paper towels.

HEARTY SPLIT PEA SOUP!
The onions, carrots, celery, potatoes and garlic are sauteed first to enliven the sugars in them. This comfort soup gets a wonderful smokey flavor from your choice of ham bone or shank or smoked turkey wings. It's swirled with sherry. Topped with bacon bits and croutons.

- In a large pot heat oil add onions, celery, carrots, potatoes and carrot saute for 5 minutes add garlic, oregano, bay leaf, salt, pepper & ham bone stir 1 minute. Add peas and cover with enough water to completely submerge all ingredients by a couple inches.
- Bring to a boil. Reduce heat and simmer for about 3-4 hours, until thickened be sure to stir throughout the cooking. The longer you cook it the thicker it gets.
- Go ahead a sneak a taste.
- Season with hot pepper sauce and black pepper Drizzle with sherry.
- Optional I prefer-Blend all but meat in a blender to smooth out.
- Garnish with croutons and bacon bits.

- In a large pot over medium heat, add the olive oil and butter. When the butter has melted and begins to foam, add the onion and carrot. Sauté for 6 to 8 minutes or until the onions are translucent. Add the garlic and sauté for an additional 30 seconds.
- Add the chicken stock, split peas, potato, ham, thyme, kosher salt and pepper. Bring the soup to a boil then reduce the heat to low. Simmer for about 1 and 1/2 hours. The peas and potatoes should be tender and soup will be slightly thickened.
