HEARTY NAVY BEAN SOUP

HEARTY QUINOA AND WHITE BEAN SOUP

Hearty Quinoa and White Bean Soup image

Soup doesn't have to be loaded with meat to be deeply satisfying. This one from Mary McCartney, devoted vegetarian, cookbook author and a daughter of Paul, is proof of that fact. Quinoa adds a lovely bit of texture, and beans - practically any variety will do - add heft and a wonderful creaminess as they break down in the broth. This recipe begs to be tampered with, so feel free to add more beans, vegetables, quinoa or fresh herbs. One reader even added a few cups of cooked pasta. It's almost impossible to mess up, so don't hold back.

HEARTY NAVY BEAN & SPINACH SOUP

HEARTY NAVY BEAN & SPINACH SOUP image

I made this hearty filling & tasty soup the other day, & made Texas Style Rainbow Corn Bread to go with it. They were perfect companions for each other we loved them both so much. Many of you know how much I love veggies, & I am forever looking for new ways to incorporate them into my meals. This was a great idea, the crinkle cut carrots, the corn bread with all of the veggies. So satisfying on a cool late September evening. This soup is so satisfying & filling, plus it is so colorful & meaty from all of the Smoked Turkey legs that were added. You will enjoy this hearty & comforting soup.

Categories     Turkey Soups

Number Of Ingredients 8

1 pound(s) bag dry navy beans, picked and washed
1 large yellow onion, chopped
2 - bay leaves, dried
1 teaspoon(s) steak seasoning(like montreal)
4 clove(s) minced garlic
4 pound(s) smoked turkey legs, cut into pieces(about 2 legs)
1 pound(s) crinkle cut frozen carrots
10 ounce(s) frozen chopped spinach (defrosted)

Steps:

  • Pick through beans, and wash. Presoak over night to save cooking time. Add beans & bay leaves to a large pot and cover with water, adding about 2-4 inches above beans in pot, as the water will evaporate during cooking.
  • Allow beans to cook for at least and hour or longer before adding in the Smoked Turkey legs. Also add in the chopped onions and minced garlic. Stir periodically as needed, and add additional water or chicken stock if desired and as needed.
  • Once you have added in the turkey legs cook until tender another hour & half or so, or as desired. When meat is tender, remove with a slotted spoon, and remove all of the fine bones, the larger bones and the outer skin, then add back into pot, and continue to cook. Add the spices, taste first before adding the steak seasoning.
  • Next add in the frozen carrots, and allow to come back to a boil and cook about 15, minutes.
  • Add in the spinach, and continue to cook until spinach is as desired. Taste and add additional seasoning if desired.
  • Serve with your favorite Bread. I made Texas Style Rainbow Corn Bread, it was so tasty and delicious.

HEARTY NAVY BEAN SOUP

Hearty Navy Bean Soup image

With two kinds of pork, how can this be anything but awesome. I was never a Navy Bean Soup person... I had a bad recipe! My hubby loves Navy Bean Soup, so I came up with my own recipe... he LOVED it and told me I HAD to write it down so I could make it again. This uses the quick-soak method for the beans, which I believe gives the best consistency to the final product. I hope you enjoy as much as we do, I converted myself to a Navy Bean Soup Eater!

Provided by CHRISSYG

Categories     Beans

Time 2h30m

Yield 8-10 serving(s)

Number Of Ingredients 11

1 lb dried navy beans
water
1 1/2 lbs smoked pork necks
6 cups water
4 slices bacon
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrot, chopped
1 bay leaf
1 -2 teaspoon salt (or to taste)
1 -2 teaspoon pepper (or to taste)

Steps:

  • In a large pot, cover beans in about two inches of cold water. Bring to a rapid boil, and immediately turn off and take off the heat. Allow to soak for one hour.
  • While this is soaking, in another pot cover the pork neckbones with just enough water to cover (about 6 cups +/-) bring to a boil and simmer for the hour that the beans are soaking.
  • Drain beans, rinse and reserve. In the large pot, render fat from bacon and cook till well browned and crispy. Drain off all but about 1T of the bacon fat. Reserve crumbled bacon.
  • Add the onion, celery, carrot and bay leaf. Sautee until soft. Add beans and the broth from the neckbones. If needed, add more water, to cover beans (do not add salt at this time).
  • Pull any meat from the bones and add to the pot. Simmer beans and neck meat in broth about 40-45 minutes until beans are almost at desired tenderness. Add bacon, stir and check seasoning. This is the time you would add the salt and pepper to taste.
  • If you like a creamy consistency, you can pulse half or more of the mixture in the food processor, or use a submersion blender. Remove bayleaf before serving.
