Double-Duty Hearty Chili Without Beans image

When it's time to build my zesty chili, I combine everything the night before. In the morning, I load the slow cooker and let it do the work. -Molly Butt, Granville, Ohio

Yield 5 servings plus leftovers.

Number Of Ingredients 15

2 teaspoons canola oil
1 large green pepper, chopped
1 large onion, chopped
2 garlic cloves, minced
3 pounds lean ground beef (90% lean)
2 cans (14-1/2 ounces each) stewed tomatoes, undrained
2 cans (8 ounces each) tomato sauce
2 cans (4 ounces each) chopped green chiles
1/2 cup minced fresh parsley
2 tablespoons chili powder
1-1/4 teaspoons salt
1 teaspoon paprika
1/2 teaspoon pepper
Hot cooked rice or pasta
Optional toppings: Shredded cheddar cheese, sour cream and sliced green onions

Steps:

  • In a large skillet, heat oil over medium-high heat. Add green pepper, onion and garlic; cook and stir until tender, 3-4 minutes. Transfer to a 6-qt. slow cooker., In same skillet, add beef, half at a time; cook over medium-high heat until no longer pink, 6-8 minutes, breaking into crumbles. Using a slotted spoon, transfer to slow cooker., Stir tomatoes, tomato sauce, chiles, parsley and seasonings into beef mixture. Cook, covered, on low 6-8 hours to allow flavors to blend. , Reserve 5 cups chili for Double-Duty Layered Enchilada Casserole. Serve remaining chili with rice and toppings as desired. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water or broth if necessary.

HEARTY SIRLOIN CHILI

I made this recently using chopped sirloin, it was really good! If you have any dried chipotle chili powder then throw in a tablesoon. You can use wine in place of the beer if desired. Serve this with crusty buns and a side salad, this dish is delicious! I strongly advise to make this a day ahead and refrigerate, the flavors will blend together to create a more intense flavor.

3 -5 tablespoons vegetable oil (more as needed)
3/4 cup flour
2 teaspoons seasoning salt
1/4 teaspoon cayenne pepper
2 lbs sirloin, cut into 1-inch cubes
2 onions, chopped
2 tablespoons fresh minced garlic
1 -2 teaspoon dried chili pepper flakes (optional, add in if you like extreme heat!)
1 large green bell pepper, seeded and chopped
1 large red bell pepper, seeded and chopped
2 jalapenos, seeded and finely chopped (I just use the ones packed in the jar)
2 -4 tablespoons chili powder (or to taste)
2 -3 tablespoons cumin (or to taste)
2 teaspoons dried oregano
2 cups consomme or 2 cups beef broth
1 (12 ounce) bottle beer
4 cups crushed tomatoes
2 cups canned black beans, drained and rinsed
2 cups red kidney beans, drained and rinsed
salt and pepper
shredded cheddar cheese
chopped onion
sour cream

Steps:

  • In a shallow dish mix together flour, seasoning salt and cayenne pepper.
  • Heat oil in a large Dutch oven or pot.
  • Toss the sirloin with the flour mixture to coat, then brown well on all sides shaking off any excess flour then remove to a plate or bowl.
  • In the same pot saute the onions and dried chili flakes (if using) for about 3 minutes.
  • Add in green and red bell peppers with jalapeno peppers and garlic; cook for about 3-4 minutes.
  • Add in chili powder, cumin and oregano, then return the browned beef back to the pot along with any juices from the plate or bowl.
  • Pour in beer and consumme or beef broth; stir with a wooden spoon and bring to a boil.
  • Cover and reduce heat to a simmer; cook 1-1/2 hours or until the beef is tender.
  • After the 1-1/2 hours, add in the crushed tomatoes and cook for another 35-40 minutes.
  • Add in black beans and kidney beans, season with salt and pepper; simmer for another 20 minutes.
  • Ladle into bowls then top with sour cream cheese and onions.
  • Delicious!

2 lbs boneless sirloin (cut into 1 inch cubes)
1 large onion
1 medium green bell pepper
2 (14 ounce) cans diced tomatoes
1 (14 ounce) can pinto beans, rinsed and drained
1 (14 ounce) can kidney beans, rinsed and drained
1 (14 ounce) can black beans, rinsed and drained
1 cup beef broth
1 1/2 tablespoons ground cumin
1 tablespoon chili powder

Steps:

  • Heat oil in large stock pot.
  • Cook beef until brown and remove.
  • Add onion and bell pepper to pot and cook 2-3 minutes.
  • Stir in remaining ingredients except beef.
  • Cover and cook over medium heat for 10 minutes.
  • Stir in beef and cook until beef is tender.Usually about 45 minutes or so.

2 pounds sirloin, bite size chunks
2 large onions, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 jalapenos, seeded and chopped

2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon oregano
12-ounce bottle ale
2 cups low-sodium beef stock
4 cups crushed tomatoes
2 cups canned black beans, drained and rinsed
2 cups canned kidney beans, drained and rinsed
Garnish: Shredded Cheddar, red onion, scallions, sour cream

Steps:

  • Heat oil in large heavy pot over medium high heat. In a pie plate combine salt, pepper and flour with a fork. Toss sirloin cubes with flour to coat. Shake off excess flour. Brown sirloin in pot on all sides and remove meat to a plate. If necessary add more oil to pan and add onions. Cook onions over medium heat until they begin to soften. Stir in green, red and jalapeno peppers and cook for 3 to 5 minutes. Add chili powder, cumin and oregano. Return browned meat to pan and pour in beer and beef stock.
