Butter Bean Burgers with Southwestern Sauce image

1 can (15 to 16 oz) butter beans, drained, rinsed
1 egg, beaten
10 round buttery crackers, crushed (1/3 cup)
2 tablespoons chili sauce
2 tablespoons finely chopped onion
1 cup frozen mixed vegetables (from 1-lb bag)
1/4 cup raisins
1/4 teaspoon ground cumin
1 can (14 1/2 oz) Mexican-style stewed tomatoes with jalapeño peppers, garlic and onion, undrained

Steps:

  • In medium bowl, mash beans with fork. Stir in remaining patty ingredients. Shape mixture into 4 patties, about 1/2 inch thick.
  • Spray 10-inch skillet with cooking spray. Cook patties in skillet 8 to 10 minutes, turning once, until golden brown. Remove from skillet; keep warm.
  • In same skillet, mix sauce ingredients. Cook over medium-low heat 5 to 8 minutes, stirring occasionally, until vegetables are tender. Serve sauce over patties.

1 can (15.5 oz) Progresso™ black beans, drained, rinsed
1 tablespoon Cuban seasoning
1/2 onion, finely chopped
1 red bell pepper, finely chopped
1/2 cup Progresso™ plain bread crumbs
1 egg
4 burger buns, split
1 medium avocado, pitted, peeled and sliced
1 lime, cut into wedges
Fresh cilantro, if desired

Steps:

  • Heat oven to 375°F. Spray cookie sheet with cooking spray.
  • In medium bowl, place beans; mash with fork. Add Cuban seasoning, onion and bell pepper. Mix well. Add bread crumbs and egg. Mix well.
  • Shape mixture into 4 patties, each about 4 inches in diameter. Place on cookie sheet.
  • Bake 10 minutes; turn over. Bake 5 minutes longer.
  • Place patties on bottoms of buns. Top each with 2 slices avocado, a squeeze of lime juice, cilantro and top of bun. Serve with lime wedge on side.

2/3 cup dry bread crumbs
1 small tomato, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped
1 large egg
1 teaspoon minced fresh cilantro
1 garlic clove, minced
1 tablespoon olive oil
4 whole wheat hamburger buns, split
Optional: Reduced-fat sour cream and guacamole

Steps:

  • Place beans in a food processor; cover and process until blended. Transfer to a large bowl. Add the bread crumbs, tomato, jalapeno, egg, cilantro and garlic. Mix until combined. Shape into 4 patties., In a large nonstick skillet, cook patties in oil over medium heat until lightly browned, 4-6 minutes on each side. Serve on buns. If desired, top with sour cream and guacamole.

  • In a medium bowl, smash drained beans with a fork. Add black bean sauce, cereals, green onions, and egg. Shape into 6 patties. Place a 12-inch skillet with the oil over medium heat. Add patties, turning once to brown on both sides. Garnish with lettuce and tomatoes, if desired.

1 yellow onion, chopped
1 egg, lightly beaten
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
vegetable oil
all-purpose flour
6 hamburger buns, split
mustard
mayonnaise
ketchup
18 bread and butter pickles or 18 dill pickles
6 slices tomatoes
6 lettuce leaves

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • Make the patties: mash the peas in a large bowl using a fork.
  • Add in the onion, egg, salt, pepper, ketchup, and Worcestershire sauce; mix well.
  • Divide the mixture into 6 portions and form the portions into patties to fit the buns.
  • Lightly brush the patties on both sides with oil, then lightly dust with flour.
  • When the grill is ready, brush the grill rack with vegetable oil; place the patties on the rack, cover and cook, turning once very carefully, until well browned, firm to the touch, and no longer gooey when cut into with a small, sharp knife, 5-6 minutes on each side.
  • During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble: spread the cut sides with mustard, mayonnaise, and ketchup.
  • On each bottom bun, place a patty, 3 pickle slices, a tomato slice, and a lettuce leaf; add the bun tops and serve.
