Heavenly Chicken in Sauce image

Tender chicken in a delicious coconut sauce. Perfect for a weeknight meal 'cause it's quick and easy but tastes divine. I like subtle flavors, so if you like it spicy you'll want to increase the spices. Serve over rice. (BY THE WAY, don't feel bad about opening the chili packet for just a 1/4 teaspoon. I keep an opened packet on hand all the time for seasoning vegetables. Give it a try on corn on the cob, delicious!)

3 tablespoons butter
1 onion, diced
1/4 teaspoon minced garlic
1/4-1/2 teaspoon chili seasoning mix
1 -2 pinch kosher salt
1/8 teaspoon fresh ground pepper, to taste
1 pinch cumin
1 pinch cardamom
1 pinch turmeric
1 pinch cinnamon
1 pinch nutmeg
1 pinch clove
18 ounces chicken breasts, cut into 1-inch cubes (boneless or skinless)
3/4 cup unsweetened coconut milk, well shaken
1 cup rice
2 cups water
1/2 teaspoon olive oil
1/2 teaspoon kosher salt

Steps:

  • Start onion and garlic cooking over med-hi heat in pan large enough to hold chicken. Start rice according to your package directions.
  • Meanwhile mix together spices and sprinkle them over cubed chicken.
  • Add chicken to pan and cook, stirring frequently, about 8 minutes or until no longer pink.
  • Add coconut milk and bring to a good simmer, then turn down to med and cook for about 5 more minutes.
  • Taste and adjust seasonings as desired. Serve over rice.

5 cloves garlic cloves, peeled and minced
4 hoagie rolls, split
2 pounds cooked chicken breast, cubed
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter with garlic in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave).
  • Place hoagie roll halves on a baking sheet and brush each with garlic-butter mixture. Divide chicken between each hoagie roll bottom; sprinkle cheese on each hoagie roll top.
  • Cook in the preheated oven until cheese is melted and bubbling, 10 to 20 minutes. Press top and bottom sandwich portions together.

I made this one last night and hubby was looking for another one before he had finished the first! This is THE BEST chicken sandwich I have ever made...and it took about 10 minutes to put together ! Great for lunch or dinner....a hearty sandwich with lots of stuffing in it ! Enjoy!

4 slices chicken breasts (not the kind from the deli) or 2 fully cooked chicken breasts
2 crusty buns
1 tablespoon garlic powder
4 tablespoons butter or 4 tablespoons margarine
1/2 teaspoon parsley
sliced tomatoes
cut up lettuce
mayonnaise
sliced black olives (0ptional)
salt or pepper

Steps:

  • Heat the oven to broil.
  • Cut the crusty buns in half.
  • Place the butter / margarine in a small bowl.
  • Mix the garlic powder and parsley into it.
  • Spread the garlic butter mixture on the crusty buns.
  • Toast the buns under the broiler for a couple of minutes, until golden brown.
  • Remove and layer the chicken, tomatoes, lettuce, olives (optional) and mayo onto the buns.
  • Enjoy while still warm !
