Steps:

  • Preheat oven to 200c, 400f, gas mark 6. Place the Cordial in a saucepan with 120ml water, bring to a simmer. Peel and halve the pears, remove the core and pips. Place in the syrup and poach for approx 10 minutes, turning half way through, until just cooked. Remove the pears, bring the cooking liquid to a boil and allow to reduce for 5-10 minutes until syrupy.
  • Roll out the pastry to approx 4mm thick. Cut into 10cm circles. Place on a baking sheet. Knock up the edges and score to get a line 1/2cm from the edge with a sharp knife.
  • Cut the pear into slices, leaving the stalk end intact. Divide the marzipan into even pieces, place on the pastry circles. Fan out the pears on top of the marzipan. Brush with the syrup. Cook for approx 20-30 minutes until the pastry is risen and golden. Serve with a drizzle of the remaining syrup with Greek yoghurt or cream.

Categories     Dessert

Time 1h10m

Number Of Ingredients 10

85g butter , melted, plus a little extra
5 pears , peeled, cored and chopped
4 tbsp light muscovado sugar , plus extra for sprinkling
1 tbsp Disaronno (optional)
100g ginger biscuit , crushed
1 tsp ground cinnamon
100g dark chocolate , broken into chunks
100g marzipan , chopped into small pieces
250g pack filo pastry (at least 6 sheets)
icing sugar and cream , to serve

Steps:

  • Melt a knob of butter in a large frying pan, add the pears and 1 tbsp sugar, and cook for 5 mins. Tip into a bowl and leave to cool. Then add the Disaronno (if using), biscuits, cinnamon, chocolate, marzipan, and 2 tbsp sugar and mix well.
  • Line a tray with baking parchment. Lay a sheet of filo on it, brush with melted butter and sprinkle with a little sugar. Top with a second sheet of filo and keep going until you've used all the pastry. Pile the filling down one of the long sides of the pastry, then roll it up to form a sausage. Make sure it is seam-side down, then tuck the ends under tightly. Roll up in the parchment, wrap tightly in foil and freeze.
  • Heat oven to 200C/180C fan/gas 6. Put a tray in the oven to heat. Unwrap the strudel and place, seam-side down and still on its parchment, onto the tray. Brush with melted butter and sprinkle over 1 tbsp sugar. Bake for 35-40 mins, or until golden and crisp. Leave to cool for 10 mins, then dust with icing sugar.

CRUSTLESS PEAR AND ALMOND TART

Crustless Pear and Almond Tart image

This fancy looking tart doesn't require pastry making skills. It's easy to assemble, and always gets compliments. Serve this tart the same day it is made, either warm or at room temperature.

Provided by Geema

Categories     Tarts

Time 1h5m

Yield 1 tart

Number Of Ingredients 10

1 1/4 cups whole blanched almonds (6 oz.)
1/2 cup sugar, plus
1 1/2 tablespoons sugar
1/3 cup all-purpose flour
1/8 teaspoon salt
2 eggs, room temperature
1/4 cup milk
4 tablespoons melted butter
1 tablespoon butter, cut into bits
2 large ripe bartlett pears (1 lb.) or 2 large bosc pears (1 lb.)

  • Preheat the oven to 350 degrees.
  • Butter a 9 inch baking dish or tart pan.
  • In a food processor, combine the almonds and 1/2 sugar and process until finely ground.

  • In another medium bowl, whisk the eggs until frothy.
  • Whisk in the milk and melted butter until well blended.
  • Add the egg mixture to the almonds and stir to blend well.
  • Pour the batter into the prepared dish and spread to form an even layer.
  • Peel, quarter and core the pears.
  • cut each pear quarter into crossways slices, keeping the slices assembled as you go.
  • Slide one of the sliced pear quarters onto a metal spatula or spreader and set it on top of the batter.
  • Repeat with the remaining sliced pear quarters forming the spokes of a wheel.
  • Press the surface of the fanned pears down into the batter so that only the surface of the pears is showing.
  • Sprinkle the remaining sugar evenly over the pears and scatter the cut up butter bits over the top.
  • Bake the tart in the upper third of the oven until the batter is puffed and golden brown, 40-45 minutes.
  • Let the tart cool on a rack.
  • You could substitute mangoes, peaches, or apples for the pears, and have the same delicious results.

PEAR-HAZELNUT TART

Pear-Hazelnut Tart image

The topping for this yummy pear tart is quite sweet so I only add very little sugar to the pastry but you can make the tart with regular sweet shortcrust pastry if you like.

Provided by Lena

Categories     Fruit Tarts

Time 2h35m

Yield 8

Number Of Ingredients 14

1 ½ cups all-purpose flour, plus more for dusting
2 tablespoons all-purpose flour
7 tablespoons unsalted butter, plus more for greasing
1 large egg
1 tablespoon white sugar
1 tablespoon cold water
1 pinch salt
½ cup hazelnuts
4 tablespoons unsalted butter
¼ cup white sugar
2 teaspoons vanilla sugar
¼ cup heavy cream
1 large egg
2 large pears - peeled, cored, and sliced

Steps:

  • Grease an 8-inch tart pan.
  • Combine 1 1/2 cups plus 2 tablespoons flour, butter, egg, sugar, water, and salt in a large bowl. Quickly knead into a smooth dough. Place in a container with a lid and refrigerate for 30 to 60 minutes. The pastry needs to be firm enough to be rolled out.
  • Roll out chilled pastry on a floured work surface and fit into the prepared tart pan. Shape an edge and prick the pastry several times with a fork. Chill in the refrigerator for 30 minutes.
  • Preheat the oven to 350 degrees F (180 degrees C).
  • Cover the pastry with parchment paper and fill with dry beans or pastry weights. Bake in the preheated oven for 20 minutes. Remove from the oven and let cool completely, about 30 minutes. Leave the oven on.
  • Meanwhile, roast hazelnuts in a dry skillet over low heat until fragrant, about 2 minutes. Remove from heat, allow to cool, and chop coarsely.
  • Beat butter, sugar, and vanilla sugar in a bowl with an electric mixer until creamy. Add cream and beat until well combined. Mix in egg and beat until batter is smooth. Spread onto the pastry. Arrange pear slices in an overlapping pattern on top of the cream and scatter hazelnuts on top.
  • Bake in the preheated oven until topping has set and is lightly browned, 20 to 25 minutes.

PEAR AND ALMOND TART

Pear and Almond Tart image

Categories     Dessert     Bake     Pear     Almond     Winter     Bon Appétit

Yield Makes 8 to 10 servings

Number Of Ingredients 15

Crust
2 large egg yolks
2 tablespoons apple cider
1 1/4 cups all purpose flour
2 tablespoons sugar
1/2 teaspoon salt
9 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
Filling
1/2 cup (packed) almond paste (about 5 ounces)
1/4 cup sugar
1/4 cup all purpose flour
4 tablespoons (1/2 stick) unsalted butter, room temperature
2 large eggs
1/2 teaspoon vanilla extract
4 medium Bartlett or Anjou pears (about 7 ounces each)

Steps:

  • For crust:
  • Whisk egg yolks and apple cider in small bowl to blend. Blend flour, sugar, and salt in processor. Add chilled butter and process until mixture resembles coarse meal. Add egg yolk mixture and process until moist clumps form. Gather dough into ball; flatten into disk. Wrap in plastic and chill 1 hour. Press dough evenly onto bottom and up sides of 11-inch-diameter tart pan with removable bottom; chill while preparing filling. (Can be made 1 day ahead. Keep chilled.)
  • For filling:
  • Position rack in lowest third of oven. Preheat to 375°F. Blend almond paste and sugar in processor until almond paste is finely ground. Add 1/4 cup flour and 3 tablespoons room-temperature butter and process until thick paste forms. Add eggs and vanilla extract and process until smooth. Spread filling in crust; cover and chill while preparing pears.
  • Peel pears. Cut each pear in half lengthwise and core. Slice 1 pear half crosswise into 1/4-inch-thick slices. Press on pear half to fan slices toward wider end. Slide spatula under pear half and place atop tart filling, positioning narrow end of pear in center of tart and wider end against crust. Repeat with remaining pear halves. Melt remaining 1 tablespoon butter. Brush over pears.
  • Bake tart until pears are tender and crust is brown, about 50 minutes. Cool 30 minutes. Remove from pan and serve warm or at room temperature. (Tart can be prepared up to 8 hours ahead. Let stand at room temperature.)
