Steps:
- For the Pie Crust
- Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
- Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
- Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
- Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
- DO not overmix or your pie crust will be tough.
- Divide in half, cover with plastic wrap and chill for 30 minutes.
- While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
- Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
- Place one in bottom of pie plate.
- Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
- Sprinkle top with white sugar and cinnamon.
- Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

GRAMMA MAGGIE'S APPLE PIE
Steps:
- For the filling: mix the sugar, flour, cinnamon, and nutmeg with apples and set aside.
- Preheat the oven to 375 degrees F.
- For the crust: mix the flour and salt with the shortening until crumbly. Add cold water and knead. Roll out 1/2 of the dough and place in an 8-inch pie tin. Cut off extra dough from around the edges. Poke with fork to prevent air bubbles.
- Place the apple mixture in the aluminum on top of the dough. Roll out the other 1/2 of the dough and place on top of the apples. Pinch dough around the edges to seal it. Poke the top of the pie with a fork gently. Sprinkle with sugar. Bake in preheated oven for 50 minutes to 1 hour.
GRANDMA'S APPLE PIE
Steps:
- Preheat the oven to 375 degrees F.
- Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
- Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
- Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
- Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
- With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.
GRANDMA MARGE'S DUTCH APPLE PIE
This is the only fruit filled pie that I will eat. I always request it when going home for the holidays. Good when it is still warm from the oven. And still yummy the next day. Just place a strip of waxed paper over the cut edge of your pie, if you cover the whole thing the topping will get soggy. My mother enjoys her pie with real whipped cream, my husband like his with a scoop of vanilla ice cream, but I love mine just the way it is! Yum

Steps:
- Preheat oven to 400 degrees. Have your pastry crust in a 9 inch pie plate chilling in the fridge.
- To make the topping mix flour and brown sugar, cut in butter with a pastry cutter (I believe that is what it is called) or using 2 knives in a criss-cross motion until crumbly. Place in fridge until ready to use.
- Peel, core and slice the apples. Sprinkle apples with lemon juice. Mix flour, sugar, salt and cinnamon and stir into apples. Pour apple mixture into chilled pie crust and top with crumb topping.
- Bake for 40-45 minutes or until apples are done. Keep an eye on it while baking as you may have to cover pie crust edges with foil to prevent them from getting too brown. I also place an empty pizza pan on the rack just below my pie to catch any juice dripping.
- Prep time will vary depending on the way you peel, core & slice the apples, by hand, food processor or machine.

Steps:
- In a medium bowl, beat the butter or margarine and cream cheese together until smooth.
- Work in the flour to make a soft dough.
- Divide the dough into two balls, wrap them, and chill them in the fridge for a minimum of 1 hour.
- Mix the sliced apples with the cinnamon, sugar, and lemon juice, reserving a little sugar and cinnamon.
- Mix well.
- On a lightly floured surface, roll out one ball of pastry and use it to line a deep 10-inch pie dish.
- Bake the pastry blind (see note on baking blind).
- When the pie shell has cooled, fill it with the apples, piling them higher in the center.
- Roll out the other pastry ball thinly and gently lay it on top.
- Press the edges together, trim off any excess pastry, then mark the edges with a fork and prick the top of the pie several times.
- Mix the reserved cinnamon and sugar together, and sprinkle the mixture on top of the pie.
- Bake at 375 F for 35-40 minutes, until the topping is golden brown and the apples have cooked.
- Note: Baking Blind: Baking blind, which partially cooks the pie shell, will ensure that it stays crisp under a liquid filling.
- Cover the pastry, including the rim, with aluminum foil to prevent it from rising.
- Weigh it down with baking beans (dried lima or butter beans are perfect).
- Bake it in a preheated oven at 400 F for 10-12 minutes (slightly less time if you are making small individual pie shells).
- Remove the foil and bake for a further 5 minutes or until the pie shell starts to color.

APPLE PIE BY GRANDMA OPLE
This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well! Serve hot or cold at family dinners or during the holidays, topped with whipped cream or ice cream, or alongside a slice of Cheddar cheese.

Steps:
- Peel and core apples, then thinly slice. Set aside.
- Preheat the oven to 425 degrees F (220 degrees C).
- Melt butter in a saucepan over medium heat. Add flour and stir to form a paste; cook until fragrant, about 1 to 2 minutes. Add bothn sugars and water; bring to a boil. Reduce the heat to low and simmer for 3 to 5 minutes. Remove from the heat.
- Press one pastry into the bottom and up the sides of a 9-inch pie pan. Roll out remaining pastry so it will overhang the pie by about 1/2 inch. Cut pastry into eight 1-inch strips.
- Place sliced apples in the bottom crust, forming a slight mound.
- Lay four strips vertically and evenly spaced over top of the filled pie, using longer strips in the center and shorter strips at the edges.
- Fold the first and third strips all the way back so they're almost falling off the pie. Lay one of the unused strips perpendicular over the second and forth strips, then unfold the first and third strips back into their original position.
- Fold the second and forth vertical strips back. Lay one of the three unused strips perpendicular over top. Unfold the first and third strips back into their original position.
- Repeat Steps 7 and 8 to weave in the last two strips of pastry. Fold and trim excess dough at the edges as necessary, and pinch to secure.
- Slowly and gently pour the sugar-butter mixture over the crust, making sure it seeps down through the lattice and over the sliced apples. Brush some over the top of the lattice, but make sure it doesn't run off the sides.
- Bake in the preheated oven for 15 minutes. Reduce the temperature to 350 degrees F (175 degrees C) and continue baking until apples are soft, 35 to 45 minutes.

- first knead the ingredients for the dough with the dough hooks, then with your hands to a smooth dough. Form 3 balls of about the same size and wrap them in foil and refrigerate for about 30 minutes. Meanwhile, soak the raisins in apple juice for the filling. Peel apples, remove seeds, cut into cubes and mix with lemon juice.
- Steam the apples incl. lemon juice with sugar and cinnamon in a small pot for about 5 minutes; if they draw a lot of water, drain it a little afterwards. Stir in the starch.
- Preheat the oven to 190 degrees top and bottom heat. Butter a springform pan and dust with a little flour. Roll out a dough ball for the blanket on a lightly floured work surface (or a silicone baking mat), cut out with the edge of the springform pan and place in the refrigerator. Roll out the rest of the dough as well, lay out the mold with it and form a rim about 3 cm high. Insert the base several times with a fork. Sprinkle on the almonds.
- Mix the pre-steamed apples with the raisins and spread on the base. Carefully place the dough on top of the cake. Press the edges down well. Prick the top several times with a fork. Bake the cake in a preheated oven for about 40 minutes. Leave to cool in the tin.
