1 (15 ounce) can crushed pineapple, drained with juice reserved
½ cup instant rice
1 (3 ounce) package non-instant vanilla pudding mix
2 cups milk
½ cup miniature marshmallows
⅓ cup chopped pecans

Steps:

  • Bring 3/4 cup reserved pineapple juice to a boil in a medium saucepan. Stir in instant rice and simmer 2 minutes. Remove from heat, cover and let steam, 5 minutes.
  • Prepare pudding mix with milk according to package directions. Fold marshmallows into hot pudding. Stir in pineapple, pecans and rice mixture. Chill until serving.

1 cup Jasmine rice
1 1/2 cups water
1/4 teaspoon salt
2 cups milk
1/2 cup sugar
1/2 tsp ground cinnamon
2 eggs
1 teaspoon vanilla extract
3/4 cup raisins
scoop of vanilla bean ice cream

Steps:

  • In pressure cooking pot, combine rice, water, and salt.
  • Close the lid and place on High Pressure for 3 minutes. Once complete allow the pressure cooker to do natural pressure release for 10 minutes. After 10 minutes, you can then do a quick release.
  • Add 1 1/2 cups milk and sugar to rice in pressure cooking pot and stir until mixed.
  • In a small mixing bowl, whisk eggs with remaining 1/2 cup milk and vanilla. Pour through a fine mesh strainer into pressure cooking pot. Select sauté and cook for 8-10 minutes, mixing constantly, until mixture starts to boil. Turn off pressure cooker. Remove pot from the pressure cooker. Stir in raisins.
  • Pudding will thicken as it cools.
  • Before serving, mix with a scoop of vanilla bean ice cream.
  • Serve warm or pour into serving dishes and chill.

7 cups whole milk
½ cup condensed milk
¼ cup white sugar
1 lime (zest)
1 stick cinnamon
1 tsp cinnamon powder (+ more to serve)

Steps:

  • Add milk, rice, sugar, and cinnamon (stick and powdered) to a large saucepan or pot.
  • Mix to combine and bring the mixture to a boil.
  • Reduce heat to low and keep cooking for about 20 minutes while stirring regularly (read notes).
  • Once the rice is cooked through and creamy, adjust the consistency by adding a little more milk if you want.
  • Turn off the heat. Mix in the condensed milk, vanilla extract, and lime zest.
  • Serve in cups with a sprinkle of cinnamon powder.

1 ½ cups water
¾ cup uncooked white rice
2 cups crushed pineapple, drained
1 (10.5 ounce) package miniature marshmallows
1 (4 ounce) jar maraschino cherries, halved
1 cup heavy cream
½ cup confectioners' sugar, or to taste

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Cool completely.
  • In a large bowl, combine rice, pineapple, marshmallows, cherries and about 1 tablespoon cherry juice. In a chilled bowl, whip the cream until peaks form. Fold in confectioners sugar. Fold whipped cream into rice mixture. Refrigerate for 2 hours.

1 l vegan milk (I used almond milk)
200 gr of dessert rice (e.g. Bosto)
50 gr of mascobado sugar - you can use more but I think plant based milk tastes sweet enough)
1 stick of cinnamon

Steps:

  • If you use a steamer you just need to mix all your ingredients in an non perforated pan and let it steam for 35 minutes at 100°C. Then stir everything and steam for another 30 minutes and...pronto!
  • If you make this the original way on the stove you need to mix all ingredients and stir constantly to make sure the rice doesn't burn at the bottom. Cook until thickened - for about 30 minutes - and then lit it cool of and thicken some more.
  • Enjoy!

It has a wonderful custard base to it and it is oh so very easy to make. When my husband had it, he thought he died and went to heaven. It was so good I had to make a double batch!

1 cup cooked rice
2 1/2 cups milk
3 large eggs, beat lightly
3/4 cup raisins
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 325°F.
  • Lightly grease a 9-inch baking dish.
  • Mix all stuff together except for the cinnamon and nutmeg. Pour into baking dish and place in a pan of water about 1 inch deep.
  • Bake for 1 1/2 hours, or until lightly browned and set.
  • Combine cinnamon and nutmeg together and sift over the top of the pudding.
  • Take pan from oven; let cool slightly and then cut into squares. Enjoy!

Milk 4 cups
Sugar ⅓ cup
Vanilla extract 2 tsp
White rice ¾ cup
Sultanas ½ cup
Cinnamon ¾ tsp
Heavy cream ½ cup

Steps:

  • Preheat the oven to 350 °F. Lightly grease a 3-quart casserole dish with butter.
  • Place 4 cups of milk in a saucepan with ⅓ cup of sugar and 2 teaspoons of vanilla over medium high heat. Bring the mixture to a simmer. Stir to dissolve the sugar, but do not bring to a boil or it might split.
  • Place ¾ cup of rice in the prepared baking dish with ½ a cup of sultanas and ¾ teaspoon of cinnamon. Pour over the milk mixture and stir briefly before covering with a lid or foil.
  • Bake the pudding in the oven for 1 hour. Remove from the oven to stir every 20 minutes in order to separate any rice that starts to set on the base.
  • After 1 hour, remove the casserole from the oven and add ½ a cup of cream. Stir well.
  • Serve immediately as it is or with a scoop of ice cream on top.

250 g rice pudding rice (8.8 oz (alternatively use arborio rice/ sushi rice/ risotto rice or another short-grain rice))
1 litre whole milk (3.8% fat) (34 fl oz (or use another milk of your choice such as almond, soya or oat milk) )
1 tsp lemon peel (grated )
1 pinch salt
1 pulp of a vanilla pod (alternativley use 1 tsp vanilla extract )
60 g sugar (2 oz (optional) )
1 tbsp butter
4 tbsp sugar and ground cinnamon mixture
sour cherry sauce
fruit compote of your choice (i.e. rhubarb, apple or plum )

Steps:

  • Place the rice, milk, sugar, grated lemon peel, vanilla bean pulp or extract into a saucepan and bring to a boil.
  • Boil the rice on a low heat for 20 - 40 minutes. Keep on stirring it with a wooden spoon to prevent the bottom from burning. Depending on the type of rice you are using, your cooking time may vary slightly. The Milchreis is ready when the rice is nice and creamy and the corns no longer crunchy.
  • In a separate pan, brown the butter. Once the rice is cooked, stir in the browned butter.
  • To serve, pour the rice pudding into bowls. Sprinkle with a sugar and cinnamon mixture or serve with a topping of your choice.

Heavenly Dairy-Free Rice Pudding

1 cup brown rice, rinsed
3 cups almond milk (or the milk of your choice)
4 eggs (yolks separated from egg whites)
6 tablespoons sugar (I used organic sugar from Costco)
1 tablespoon vanilla extract
zest from 1 lemon
½ cup raisins

Steps:

  • Cook the rice in milk in a pot on the stove.
  • Mix the yolks with the sugar, vanilla extract, lemon zest and raisins.
  • Beat the egg whites until fluffy and stiff.
  • Once cooked, allow the rice to cool for 10 minutes.
  • Mix the yolk mixture into the rice. Then gently fold in the egg whites.
  • Grease an oven-proof round casserole (20 cm or 8 inch diameter).
  • Pour the mixture into the casserole and bake at 350⁰ F for 30 minutes until the top becomes medium brown.
  • Allow to cool for at least 30 minutes before serving.
  • The rice pudding can be served warm, cold or at room temperature. It's delicious anyway you serve it.
  • Grate some chocolate on top to take it to a heavenly level.
