WOODLAND HEDGEHOG CHEESE BALL

Woodland Hedgehog Cheese Ball image

Woodland hedgehog cheese ball is a simple, savory appetizer that will be a stunning centerpiece at a woodland baby shower or first birthday. Cream cheese, cheddar, Worcestershire sauce, and spices make this vegetarian snack idea a super cute, gender neutral munchie.

Provided by Emma

Categories     Appetizer

Time 2h35m

Number Of Ingredients 23

1/4 cup dried minced onion
1 1/4 teaspoons onion powder
1 1/4 teaspoons garlic powder
1 teaspoon dried parsley
1/2 teaspoon dried thyme leaves
1/4 teaspoon black pepper
1/4 teaspoon celery salt
1/4 teaspoon paprika
16 ounces cream cheese (softened)
2 cups extra sharp cheddar cheese (grated)
1/4 cup sour cream
2 1/2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon dried parsley
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme leaves
1 cup pecan halves
1/3 cup walnut pieces
2 dried black beans for the eyes
1 raisin for the nose
Few sprigs of fresh rosemary
Crackers of your choice

Steps:

  • Stir together all the spices in a small bowl until well combined.
  • In a few batches, grind the spices a little smaller using a mortar and pestle. Set aside.
  • Beat the cream cheese and cheddar with a hand-held electric mixer until fluffy. Beat in the sour cream, Worcestershire sauce, lemon juice, and additional spices. Add the homemade onion soup mix to taste.
  • Blend until thoroughly combined, scraping down the sides for an even mix.
  • Chill the cheese mixture in the fridge for about 2 hours to firm up the mixture. You can keep it in the fridge for a few days at this point if you want to make it ahead.
  • Once the mixture has chilled enough to handle, place the mixture on a large piece of plastic wrap. Fold the wrap around the cheese, then shape it into a smooth ball. Use your hands to shape one end into a point to make the hedgehog's head.
  • Unwrap the hedgehog and place him on the serving board. Make any adjustments to the shape, smoothing holes or creases with the back of a spoon.
  • Once you're satisfied with the hedgehog's shape, stick on the two dried beans for eyes and the raisin for a nose. Decorate the hedgehog's back with rows of pecan halves and walnut pieces to look like spines.
  • Curl a few sprigs of fresh rosemary around the hedgehog to look like pine branches in a forest. Serve with crackers.

ROAST MEAT LOAF OR "HEDGEHOG"

Roast Meat Loaf or

Provided by Food Network

Categories     main-dish

Time 2h15m

Yield 10 to 12 servings

Number Of Ingredients 18

8 ounces mushrooms, sliced
Butter
Salt
Freshly ground black pepper
Grated nutmeg
8 ounces chicken livers
1 pound each ground beef, ground pork, ground veal
1 pound sausage meat
1 large onion, grated
3 fat cloves garlic, crushed to a paste
10 juniper berries, crushed
1 teaspoon ground allspice
Fresh thyme sprigs
1 to 2 eggs
8 ounces unsmoked bacon
Bay leaves
Branches of fresh rosemary
Tomato sauce, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Saute the mushrooms in butter until the juices run, then season with salt and pepper and nutmeg. Reserve.
  • Remove the sinews from the livers and slice. In a large bowl combine all the ground meats, sausage, livers, onion, garlic, and juniper berries. Add the allspice and thyme leaves. Season with salt and pepper. Beat the eggs and add to the mixture together with the mushrooms. Mix with your hands thoroughly.
  • Oil a roasting pan and place all the mixture in it, molding it into an oval shape. Adorn with the bacon slices, criss-crossed, tucking the ends under the meat. Strew some bay leaves and branches of rosemary on the top and sides. Cook in the preheated oven for 15 minutes, then lower the heat to 350 degrees and cook for 1 1/2 hours.
  • When cooked, there will be lots of lovely juices in the bottom of the pan. Save them to flavor soup, stocks, or eggs. Remove the loaf and place on a serving dish. Serve hot or cold with a tomato sauce.
  • For children, you might like to turn it into a hedgehog by pressing almonds into the meat to create prickles and placing 3 olives to form eyes and a nose. This should be done before the meat goes into the oven.

HEDGEHOG COOKIES

Hedgehog Cookies image

I needed something else to decorate a tree trunk cake, so baby hedgehogs seemed to be the perfect match.

Provided by Kitty Johnson

Categories     Desserts     Cookies

Time 3h10m

Yield 24

Number Of Ingredients 11

4 cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ¼ cups white sugar
1 cup butter-flavored shortening
¼ cup corn syrup
2 eggs
1 tablespoon vanilla extract
1 cup pecans
1 cup chocolate chips

Steps:

  • Mix flour, baking powder, baking soda, and salt in a bowl. Whisk sugar, shortening, corn syrup, eggs, and vanilla extract in a separate bowl. Stir sugar mixture into flour mixture until just combined. Refrigerate dough until chilled, 30 minutes to 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop cookie dough using a cookie scoop or 1 tablespoon so all the cookies are uniform; shape dough into teardrop-shaped cookies. Flatten the pointed side of each cookie to form the 'face'. Arrange cookies on baking sheets.
  • Bake in the preheated oven until golden, 10 to 12 minutes. Cool on the baking sheets for 10 minutes before removing to cool completely on a wire rack.
  • Pulse pecans in a food processor until finely chopped; transfer to a bowl.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Dip the top of each cookie in the melted chocolate, spreading to fully coat the 'body' of each hedgehog. Press cookies, chocolate-side down, into the ground pecans forming the 'fur'. Arrange cookies on a sheet of waxed paper to set, about 30 minutes.
  • Transfer the remaining melted chocolate to a piping bag or plastic bag with a corner snipped. Pipe chocolate onto the pointed end of each cookie for eyes and a nose.

EASY HEDGEHOG CANAPé SKEWERS

Easy hedgehog canapé skewers image

Make these crowd-pleasing hedgehog canapé skewers for a party. With tomato and mozzarella, cheese and pineapple, and prawn and cucumber options, they're perfect for a family gathering

Provided by Lulu Grimes

Categories     Buffet

Time 35m

Yield Makes 36 skewers

Number Of Ingredients 15

1 grapefruit or 1/2 large cucumber, for the hedgehog (optional)
12 mozzarella pearls
1 tsp pesto
2-3 tbsp olive oil
12 small cherry tomatoes
12 basil leaves
2 pineapple rings, each cut into 6
50g medium cheddar , cut into 12 small cubes
50g red leicester , cut into 12 small cubes
12 cooked and shelled prawns
½ lemon , juiced
½ cucumber , cut into 2 even chunks and shaved into ribbons
1 tsp sesame oil
1 tsp sesame seeds
36 bamboo (or reusable) short skewers or long toothpicks

Steps:

  • To make a hedgehog to push the skewers into, use a grapefruit with the base trimmed flat, or use a cucumber to make a longer holder.
  • For mozzarella & tomato skewers, tip the mozzarella into a bowl, mix the pesto with the olive oil and pour it over the cheese. Wrap a basil leaf around each mozzarella pearl and thread onto the skewers alternating with the tomatoes.
  • For the cheese & pineapple skewers, sandwich a piece of pineapple between a piece of cheddar and a piece of red leicester on a skewer. If you want to be very neat, trim the pineapple to match the cheese (eat the offcuts).
  • To make prawn skewers, put the prawns in a bowl and squeeze over the lemon, and season with pepper, but not salt. Tip the cucumber into a bowl, add the sesame oil and seeds and toss together. Fold a cucumber ribbon and push it onto a skewer, followed by a prawn and another cucumber ribbon.
  • Push all the skewers into your hedgehog or arrange them on a platter, keeping each type separate.
