Try this new way of cooking salmon fillets with a punchy crust, for a healthy and warming supper

½ celeriac , about 250g, cubed
250g potatoes , cubed
3 tbsp dried breadcrumbs
juice ½ orange
1 tbsp chopped dill
2 tbsp wholegrain mustard
x skinless salmon fillets
25g extra-light soft cheese

Steps:

  • Heat oven to 220C/200C fan/gas 7. Boil the celeriac and potato for 15-20 mins until tender.
  • Mix the breadcrumbs, 1 tbsp orange juice, the dill and 1½ tbsp mustard. Put the fish on a foil-lined baking tray, drizzle over the rest of the juice and press the crumb mix on top. Bake for 15 mins.
  • Drain the veg, then mash in the pan with the cheese and remaining mustard. Season and serve with the salmon.

If beauty is skin deep, then celeriac is a case in point - and it's delicious when served as a creamy mash

2 salmon fillets , about 100g/4oz each
700g celeriac , peeled to remove all the knobbly skin and cut into chunks like potato
2 tsp wholegrain mustard
2 tsp lemon juice
100g baby spinach leaves

Steps:

  • Brush the salmon lightly with olive oil, and season with salt and pepper. Line a grill pan with foil and lay the salmon on top.
  • Place the celeriac in a pan with cold water to cover. Salt and bring to the boil. Lower the heat, cover and simmer for 12-15 minutes until tender. Preheat the grill to medium. Whisk together the mustard, lemon juice, a pinch of sugar, salt, pepper and 1 tbsp olive oil.
  • Grill the salmon for five minutes on each side. Meanwhile, drain the celeriac, reserving 1 tbsp cooking water. Return the celeriac to the pan. Mash until fairly smooth. Add the spinach, stirring occasionally over a low heat, until wilted. Stir in 1 tbsp mustard dressing and the reserved cooking water. Season.
  • Spoon the mash on to two warm plates and top each with a fillet. Drizzle over the leftover dressing.

This go-to recipe uses a fish's best friends: butter, herbs and lemon. Roasting at a high temperature lets you lightly brown the fillets on foil, without having to use a skillet, so there's minimal cleanup. Make this quick entree often, and use the time you save to try a new side dish to go with it.

Olive oil, for the foil
Four 5- to 6-ounce skinless salmon fillets
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, cut into 4 pieces
1 tablespoon chopped fresh dill and/or parsley
Half a lemon

Steps:

  • Position an oven rack in the top of the oven, and preheat to 450 degrees F. Line a rimmed baking sheet with foil, and brush with oil.
  • Place the salmon fillets, evenly spaced, in the middle of the prepared baking sheet. Sprinkle the tops with 3/4 teaspoon salt and a few grinds of pepper. Bake until the outside is opaque and slightly firm to the touch and the inside flakes easily (insert a small paring knife between layers to check; the color will vary from bright pink (rare) to pale pink to orange (well-done)), 8 to 12 minutes, depending on the desired doneness.
  • Remove the fillets from the oven, top each with a piece of butter and let melt over the top and down the sides. Sprinkle with herbs, lemon juice and salt to taste. Transfer the salmon to serving plates with a spatula. Serve hot or at room temperature.

HERB ROASTED SALMON & CELERIC YUKON MASH



Herb Roasted Salmon & Celeric Yukon Mash image

Yield 6-8 servings

Number Of Ingredients 19

FOR THE SALMON:
8 Salmon Fillets (each about 4 ounces)
1 tablespoon Extra Virgin Olive Oil
3 tablespoons Shallots, minced
1 tablespoon Herbs de Provence
1 small Lemon, Juiced
Salt and Pepper, to taste
½ cup Dry White Wine
3 tablespoons Flat-leaf Parsley, finely chopped
FOR THE MASH:
2 Medium Celeriac (Celery Root), peeled, cut into 1 inch cubes
3 large Yukon Gold Potatoes, peeled, cut into 1 inch cubes
1 large sweet Apple, peeled, cut into 1 inch cubes
1 small Onion, peeled, coarsely chopped
1 tablespoon Coconut Palm Sugar
3 tablespoons Butter
⅓-1/2 cup Heavy Cream
2½ teaspoons Whole Grain Mustard
Sea Salt and Pepper, to taste

Steps:

  • FOR THE MASH:
  • Place the potatoes, celery root, apple, and onion in a pot and cover them with 1 inch of water. Bring to a boil then turn the heat down to a simmer and cook for 20-25 minutes, or until the potatoes are tender. Drain.
  • Place the potatoes in a food processor and add in the coconut palm sugar, butter, cream, and mustard. Process until smooth and creamy. *note that the mixture may be slightly runny - it will thicken up slightly as it sits.
  • Add salt and pepper to taste and serve with the salmon.
  • FOR THE SALMON.
  • Preheat the oven to 350 degrees.
  • Coat the bottom of a 9x13" pan in olive oil. Place the salmon fillets in the pan (do not place them so close together that they are touching).
  • In a small bowl, stir together the olive oil, shallots, herbs de provence, and lemon juice.
  • Season the salmon well with salt and pepper.
  • Coat the top of the fillets with the shallot mixture, covering all surfaces of the fish.
  • Pour the white wine into the bottom of the pan.
  • Bake on the middle rack of the oven for 20-25 minutes, or until salmon is just cooked through in the middle.
  • Remove from the oven and sprinkle the chopped parsley over the tops of the fillets.
  • Serve the salmon over the top of the celeriac/potato mash. Drizzle a little bit of the white wine cooking liquid over the top of the salmon, if you like.

MUSTARD SALMON WITH PEA & CELERIAC MASH

2 salmon fillets , about 140g/5oz each
2 tsp wholegrain mustard
squeeze lemon juice
1 small celeriac , about 350g/12oz, peeled and cubed
1 floury potato , peeled and cubed
140g frozen pea

Steps:

  • Line a grill pan with foil and lightly brush with oil to stop the salmon sticking. Add the salmon and spread each fillet with 1 tsp mustard. Curl up the edges of the foil to catch any juices, then squeeze over a little lemon juice. Heat the grill to medium.
  • Boil the celeriac and potato for 15 mins. Add the peas, then cook for a further 5 mins until the vegetables are tender. Meanwhile, grill the salmon for 12-15 mins.
  • Drain the vegetables, reserving a cup of the cooking water, then mash roughly so that the peas start to break up. Add a little of the cooking water to loosen the mix, if you like. Season to taste, then divide between two warm plates and top with the salmon. Pour over any pan juices, then serve.

This is a great last-minute dinner. I can pick up the salmon on the way home, and I've usually got some herbs in the garden, and the rest of the ingredients in the pantry. Roasting is so much less stressful than grilling and the salmon stays very moist.

1 (2-to 2 ½-pound) skinless salmon fillet
Kosher salt and freshly ground black pepper
¼ cup good olive oil
2 tablespoons freshly squeezed lemon juice
½ cup minced scallions, white and green parts (4 scallions)
½ cup minced fresh dill
½ cup minced fresh parsley
¼ cup dry white wine
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • Place the salmon fillet in a glass, ceramic, or stainless-steel roasting dish and season it generously with salt and pepper. Whisk together the olive oil and lemon juice and drizzle the mixture evenly over the salmon. Let it stand at room temperature for 15 minutes.
  • In a small bowl, stir together the scallions, dill, and parsley. Scatter the herb mixture over the salmon fillet, turning it so that both sides are generously coated with the green herbs. Pour the wine around the fish fillet.
  • Roast the salmon for 10 to 12 minutes, until almost cooked in the center at the thickest part. The center will be firm with just a line of uncooked salmon in the very center. (I peek by inserting the tip of a small knife.) Cover the dish tightly with aluminum foil and allow to rest for 10 minutes.
  • Cut the salmon crosswise into serving pieces and serve hot with lemon wedges.

WHOLE ROASTED CELERIAC

Serve this novel side dish alongside a roast dinner or other meaty main course. Rosemary, thyme, bay and garlic flavour the creamy flesh

1 celeriac
1 tbsp olive oil
4 rosemary sprigs
4 thyme sprigs
3 bay leaves
1 garlic bulb, broken into cloves
50g butter

Steps:

  • Heat oven to 180C/160C fan/gas 4. If the celeriac has a green sprouting top, cut it off and discard. Scrub off any dirt and trim away any frilly bits of root. Rub the celeriac all over with the oil and place on a large sheet of foil, root-side down. Scatter with the garlic, herbs and seasoning. Wrap the foil tightly and place on a tray and roast on the bottom of the oven for 2 hrs. Check after 2 hrs that the top is very tender - if not give it 30 mins more.
  • To serve, unwrap the celeriac and cut off the top. Loosen and mash the middle with the butter, some seasoning and squeezed out softened garlic, if you like. Serve the celeriac with a spoon sticking out of it for everyone to help themselves to.
