1 small onion, coarsely chopped
1 tablespoon chopped fresh tarragon
1 ½ teaspoons dried parsley
1 teaspoon minced fresh rosemary
½ teaspoon chili powder
1 teaspoon lemon juice
1 tablespoon finely grated carrot
1 cup low-fat mayonnaise
1 cup low-fat sour cream
salt and pepper to taste

Steps:

  • Add shrimp, green onions, onion, tarragon, parsley, rosemary, chili powder, and lemon juice to the jar of a blender or food processor; process the mixture until shrimp are finely chopped.
  • Scrape the chopped shrimp mixture into a bowl and stir in the carrot, mayonnaise, and sour cream, mixing until well blended. Season to taste with salt and pepper. Chill at least 1 hour before serving.

1/2 pound peeled and deveined frozen shrimp (any size), thawed
1/2 cup reduced-fat sour cream
1/2 cup light mayonnaise
2 scallions, coarsely chopped, plus more for garnish (optional)
1/4 cup finely chopped fresh parsley
1 teaspoon finely grated lemon zest, plus 2 teaspoons fresh lemon juice
Coarse salt and ground pepper
Crostini, crackers, or crudites, for serving

Steps:

  • Fit a large saucepan with a steamer basket, and fill with 1 inch water; cover and bring to a boil. Add shrimp; cover and cook, tossing once, until opaque throughout, 30 seconds to 4 minutes (depending on size of shrimp). Immediately transfer to a colander, and run under cold water to stop cooking. Pat shrimp dry with paper towels, then finely chop.
  • In a medium bowl, combine shrimp, sour cream, mayonnaise, scallions, parsley, and lemon zest and juice; season with salt and pepper. Refrigerate shrimp dip until chilled, at least 30 minutes (and up to 2 days). Serve shrimp dip garnished with scallions, if desired, alongside crostini, crackers, or crudites.

1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce

Steps:

  • Bring medium saucepan of lightly salted water to boil. Add shrimp and cook just until bright pink and opaque in center, about 3 minutes. Drain; rinse under cold water. Peel and devein shrimp; transfer to processor. Add green onions, shallot, and tarragon; using on/off turns, process until shrimp are finely chopped. Transfer shrimp mixture to medium bowl. Mix in mayonnaise and next 3 ingredients. Season to taste with salt and pepper. Cover and chill at least 2 hours. (Can be made 1 day ahead. Keep chilled.)
