12 oz uncooked fettuccine
1 tablespoon olive or vegetable oil
1 medium onion, chopped (1/2 cup)
1 1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 small green bell pepper, cut into bite-size strips
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
3 small zucchini, cut in half lengthwise, sliced
3 large tomatoes, seeded, chopped (3 cups)
3 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh oregano leaves
1/2 cup shredded Parmesan cheese (2 oz)

Steps:

  • Cook fettuccine to desired doneness as directed on package. Drain; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, heat oil over medium-high heat. Add onion; cook 2 to 3 minutes, stirring occasionally, until tender.
  • Stir in chicken, bell pepper, garlic, salt and pepper. Cook 5 to 6 minutes, stirring occasionally, until chicken is browned on outside and no longer pink in center. Stir in zucchini, tomatoes, basil and oregano. Cook 5 to 6 minutes, stirring occasionally, until zucchini is tender.
  • Place fettuccine on serving platter; spoon chicken mixture over top. Sprinkle with cheese. Serve with additional Parmesan cheese if desired.

2 tablespoons onion soup mix
1 envelope savory herb and garlic soup mix, divided

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
1/2 tablespoon olive oil
One 8-ounce boneless skinless chicken breast
2 cups bite-sized broccoli florets
8 ounces dried penne
1/2 cup jarred roasted red peppers, drained and chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat a grill or grill pan over medium-high heat until hot; brush with the oil. Season the chicken breast with salt and pepper. Grill the chicken, turning once, until well-marked and just cooked through, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Meanwhile, cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Transfer the broccoli to a colander with a slotted spoon and run under cold water to stop the cooking process. Add the broccoli to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the chicken and red peppers to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

2 (14 ounce) cans reduced-sodium chicken broth
8 ounces frozen boneless skinless chicken breasts
8 ounces uncooked fettuccine pasta, broken in half
1 (16 ounce) package broccoli florets, frozen
1 (6 ounce) package spreadable cheese with garlic and herbs (such as Rondele)
1/2 teaspoon salt
2 tablespoons grated parmesan cheese
2 tablespoons finely chopped green onions
fresh coarse ground black pepper

Steps:

  • In a deep skillet or Dutch oven, bring broth to boil over high heat; add frozen chicken breasts. Return to a boil, reduce heat, cover and simmer 16 minutes.
  • Add pasta, stir, cover and simmer 8 minutes, stirring occasionally. Remove chicken, cool and shred.
  • Increase heat to high and bring pasta to a boil. Add frozen vegetables, return to a boil, reduce heat, cover tightly and simmer 5 minutes or until vegetables are crisp tender.
  • Drain pasta mixture, reserving 1/2 cup of the pasta cooking water. Return pasta to skillet and place over medium heat. Add cream cheese, salt and reserved cooking water. Toss until cheese has melted. Add chicken, and cook 2 minutes to heat through, stirring frequently. Sprinkle with Parmesan cheese, green onions and black pepper.

3/4 pound fusilli lunghi pasta
1/4 cup vegetable oil
1 onion, chopped
3/4 pound ground chicken
1 cup shelled walnuts
1/3 cup minced fresh parsley
1 tablespoon paprika
1/2 cup plain, non-fat yogurt
Salt and freshly ground pepper to taste

Steps:

  • Bring a large pot of salted water to a boil, add pasta, and bring the water back to a boil and cook for 8 to 10 minutes until tender, but still firm to the bite. In a skillet heat oil, add onions and cook for 2 minutes. Stir in chicken, walnuts, parsley and paprika and cook until heated through and chicken is cooked. Now remove skillet from heat and stir in yogurt. Season to taste with salt and freshly ground pepper. Drain, pat dry and transfer pasta to a serving dish. Add sauce and toss to combine. Serve immediately.

4 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon cayenne
1/8 teaspoon nutmeg
1/4 cup fresh grated parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/4 cup chopped fresh mint leaves
1/4 cup chopped fresh chives
1 (16 ounce) package angel hair pasta
2 1/2 cups cooked chicken breasts

Steps:

  • Combine cream, butter, salt, nutmeg and cayenne in a saucepan and simmer 15 minutes, or until sauce is slightly reduced and thickened.
  • While the sauce is reducing, get the water ready for the pasta and cook as directed.
  • Whisk in Parmesan cheese and herbs to the cream mixture and simmer for another 5 minutes.
  • Add cooked chicken to the cream mixture.
  • Serve pasta topped with the creamy herb and chicken mixture.
  • Serve with a salad and crusty bread. Don't forget the wine :).

3/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh oregano
1/8 teaspoon red pepper flakes (or to taste)
1 lb boneless chicken breasts or 1 lb boneless chicken thighs
1 lb cooked pasta (I like Penne)
1 quart prepared pasta sauce (I use home cooked, but a jar would work just fine)

Steps:

  • Mix together oil, vinegar, lemon juice, basil, parsley, oregano, and pepper flakes together in a shallow bowl.
  • Add chicken and toss to coat.
  • Marinate for at least 30 minutes or as long as 2 hours.

9 ounces dry fettuccine pasta
1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves - cut into strips
1 red onion, sliced
1 julienned yellow bell pepper
2 cloves garlic, minced
½ cup chicken broth
2 tablespoons sherry
salt and pepper to taste
7 ½ ounces chive and onion cream cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cover to keep warm and set aside.
  • Meanwhile, heat oil in a wok or skillet over high heat. Saute chicken and onion 3 minutes. Add yellow pepper, and continue cooking until chicken is no longer pink and vegetables are crisp-tender. Add garlic, chicken broth, sherry, salt and pepper. Cook just until hot. Blend in cream cheese, and heat through. Do not allow to boil.
  • Combine chicken mixture with hot pasta. Serve.
