MARINATED STEAK WITH GRILLED ONIONS

Steps:
- Whisk together vinaigrette, mustard, Worcestershire sauce and garlic. Pour 1/4 cup into a shallow dish. Add beef and turn to coat. Cover and refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade from dish. Grill steaks and onions, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°) and onions are tender, 4-7 minutes per side. Drizzle reserved marinade over onions. Cut steak into thin slices; serve with onions.

- Mix onion, steak sauce, oregano and garlic. Place steak in shallow dish or resealable plastic bag. Add steak sauce mixture; turn over steak to evenly coat both sides. Cover.
- Refrigerate 1 hour to marinate, turning occasionally.
- Preheat grill to medium-high heat. Remove steak from marinade; discard marinade. Grill steak 4 to 6 minutes on each side or until cooked through.

Steps:
- Heat the oil in a heavy-based pan and cook the onion over a low heat for 15 minutes, until soft.
- Add the sugar and vinegar and simmer until syrupy.
- Season, tip into a dish and set aside.
- Heat a non-stick griddle or frying pan until very hot.
- Add the steaks and cook for 1 ½ minutes on each side. (Longer if you prefer it well done).
- Top the steaks with the onion and serve with spinach, roasted tomatoes and mashed potato on the side.

- On a work surface mash together the garlic paste, the pepper, and the orégano and rub the mixture onto the steaks. In a heavy skillet, preferably cast-iron, heat the oil over moderately high heat until it is hot but not smoking, in it sauté the onions, stirring occasionally, for 6 minutes, or until they golden, and transfer them with a slotted spoon to paper towels to drain. Heat the oil remaining in the skillet over moderately high heat until it is hot but not smoking, in it sauté the steaks for 3 1/2 minutes on each side for medium-rare meat, and transfer the steaks with tongs to plates. Pour off the fat from the skillet, add 1/4 cup water, and boil it, scraping up the brown bits, for 15 seconds. Stir in the onions and spoon the onion mixture over the steaks.

- Mix dressing, 2 Tbsp. steak sauce, sugar and garlic until blended. Pour over steak in shallow glass dish; turn steak to coat both sides. Refrigerate 1 hour to marinate.
- Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 min. Cover; cook on medium-low heat 15 min. or until onions are golden brown, stirring occasionally.
- Meanwhile, heat broiler. Remove steak from marinade; discard marinade. Place steak on broiler pan. Broil steak, 4 inches from heat, 8 min. on each side or until done (160ºF). Remove from heat; cover. Let stand 5 min. before cutting across the grain into thin slices. Stir remaining steak sauce into onions. Serve with meat.

- Trim fat from steak and cut steak into four equal portions. Place meat in a plastic bag set in a deep bowl. Pour marinade over steak. Seal bag; turn to coat steak well. Marinate overnight in the refrigerator. Then, drain steak, reserving marinade.
- Place onions on an 18-inch square of heavy foil. Turn edges of foil up slightly. Drizzle 1/2 cup of the reserved marinade over onions. Fold foil tightly to seal. Grill onion packet and steak on an uncovered grill directly over medium coals for 10 minutes. Turn onion packet and steak; brush steak with marinade. Discard any remaining marinade. Grill steak to desired doneness, allowing 8 to 10 minutes more for medium doneness. Grill onions 8 minutes more or until tender.
- Unwrap onions and place on a serving plate. Arrange meat atop onion. Spoon any remaining sauce from onions over the meat. Serve with steamed green beans, if desired. Makes 4 servings.
