HIGH PROTEIN CRUSTLESS QUICHE



High Protein Crustless Quiche image

High protein, low fat. Uses quark, or fromage blanc, easy to get in Europe, may be harder in the US.

Number Of Ingredients 6

2 zucchini
2 eggs
500 ml Quark or 500 ml fromage blanc
2 tablespoons oat bran
1 tablespoon wheat bran
1 onion, diced

Steps:

  • Preheat the oven to 180°C/Gas 6.
  • Wash and dice the zucchini.
  • Pour 200ml of salted water in a large casserole, with the Nutmeg & pepper and bring to the boil.
  • Place the courgettes into the water and boil for 2 minutes.
  • Add the Wheat & Oat Bran and let cook for a further minute stirring constantly.
  • Remove from heat.
  • In a clean bowl, beat the eggs together with the Fromage Frais, Quark, onions and Gruyere and season with salt and pepper to taste.
  • Pour into a silicon quiche mold and bake for 30 minutes.
  • This dish may be enjoyed fresh from the oven or cold.

  • Preheat the oven to 350°F (175°C). Mist a 9½-10 inch (24-25.4 cm) pie plate with the cooking oil spray.
  • Use a cast iron skillet to cook the chopped onion in the olive oil over medium heat until softened, 8-10 minutes. Stir frequently to help keep the onion from browning.
  • Towards the end of cooking the onion, add the baby kale. Put a lid on the pan and steam until the kale is wilted, stirring occasionally.
  • In a medium mixing bowl, thoroughly combine the cheeses, eggs, tomatoes, and cooked kale mixture. Pour into the prepared pie plate and smooth the surface with the back of a spoon.
