HOISIN MARINATED GRILLED CHICKEN

2 Cornish game hens, halved
1 cup hoisin sauce
2 cups red wine
1/2 bunch scallions, chopped
1 tablespoon fresh ginger, chopped
2 teaspoons minced garlic
1 tablespoon sesame oil

Steps:

  • Place the hens in a baking dish. Mix the red wine, scallions, ginger, garlic and sesame oil together in a bowl and pour the marinade over the hens. Cover and refrigerate the hens for 1 to 2 days.
  • Preheat grill to medium heat. Place the hens on the grill bone side down and grill, covered, about 10 minutes. Gently turn them over and continue grilling for another 10 to 15 minutes or until the juices run clear. Let the hens rest for 5 minutes before serving.

It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

2 cups hoisin sauce
4 tablespoons sambal oelek
2 bunches scallions, white and green parts, chopped
1 cup dry red wine
1/2 cup gingerroot, finely chopped
1/2 cup garlic, finely chopped
2 teaspoons pepper, freshly ground
4 chicken breasts, with drumettes
4 chicken pieces, leg and thigh

Steps:

  • In non-reactive dish large enough to hold chicken, combine hoisin, sambal oelek, scallions, wine, ginger, garlic, and pepper and mix.
  • Add chicken and turn to coat, cover, marinate, refrigerated, at least 4 hours and preferably overnight.
  • Heat outdoor grill or broiler.
  • Spray the grill with nonstick cooking spray.
  • Season chicken with salt to taste and grill or broil , turning once, until brown and the juices run clear when pricked with a fork at the joint, 12 - 15 minutes.
