1 can (5 oz.) white tuna in water, drained, flaked
3 Tbsp. KRAFT Avocado Oil Mayonnaise
1/4 cup chopped onions
1/4 cup chopped green peppers
1/2 tsp. dried basil leaves
8 slices whole wheat bread
4 KRAFT 2% Milk Singles

Steps:

  • Combine first 5 ingredients.
  • Fill bread slices with tuna salad and 2% Milk Singles to make 4 sandwiches.
  • Cook in large nonstick skillet on medium heat 3 min. on each side or until Singles are melted and sandwiches are golden brown on both sides.

2 (6 to 8-ounce) jars imported tuna packed in olive oil, drained
1/2 cup (1/4-inch) diced hearts of celery
1/2 cup minced scallions, white and light green parts (3 scallions)
3 tablespoons minced fresh dill
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3/4 cup good mayonnaise, such as Hellmann's
1 teaspoon anchovy paste (optional)
4 large slices bread, such as Pepperidge Farm Farmhouse Hearty White
4 ounces Swiss cheese, such as Emmentaler, grated
1 ounce microgreens

Steps:

  • In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
  • Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.

½ medium onion, thinly sliced
1 cup seasoned rice vinegar
2 (5-oz.) cans tuna packed in olive oil, drained
¼ cup mayonnaise, plus more for spreading
2 Tbsp. chopped celery
1 Tbsp. chopped dill pickles
Kosher salt, freshly ground pepper
8 slices sourdough bread
8 slices sharp cheddar
Dill pickle spears (for serving; optional)

Steps:

  • Combine ½ medium onion, thinly sliced, and 1 cup seasoned rice vinegar in a small bowl. Set aside.
  • Gently mix two 5-oz. cans tuna packed in olive oil, drained, ¼ cup mayonnaise, 2 Tbsp. chopped celery, and 1 Tbsp. chopped pickles in a medium bowl until just combined. Season with kosher salt and freshly ground pepper.
  • Heat a dry large cast-iron skillet over medium-low. Spread mayonnaise over 1 side of 2 slices sourdough bread. Place bread, mayo side down, in skillet; top 1 bread slice with 2 slices sharp cheddar. Cover with a lid and cook until bread is golden brown underneath and cheese is melted, about 4 minutes. (The cheese should form a crispy skirt around the bread.)
  • Uncover skillet and top bread with melted cheddar with one fourth of tuna salad, then some drained reserved pickled onion. Close up sandwich and gently press down on sandwich with a spatula. Transfer to a cutting board and slice in half on a diagonal. Repeat cooking process 3 more times with more mayonnaise and remaining tuna salad, pickled onion, 6 slices sourdough bread, and 6 slices sharp cheddar to make 3 more sandwiches.
  • Serve sandwiches on plates with dill pickle spears if desired.

I cannot recall ever using the words *amazing* or *fabulous* in a recipe title, but I had to make an exception for this wonderful recipe from the *Dinner Party* cookbook of the Australian Women's Weekly cookbook series. This is so versatile & you are almost certain to view tartar sauce as ordinary by comparison & obsolete in most cases. 3 egg yolks
1 1/2 tablespoons lemon juice
1/2 cup olive oil
1/2 cup vegetable oil
1 garlic clove (crushed)

6 ounces canned tuna (drained & flaked)
2/3 cup heavy cream

Steps:

  • Using a blender, immersion blender or food processor -- blend egg yolks & lemon juice till smooth.
  • While continuing to blend, all oils gradually till the mixture is thick.

1 garlic cloves, minced or 1 garlic clove, grated
1 lemon
1/4 cup extra virgin olive oil
kosher salt & freshly ground black pepper
1 red onion, divided (1/4 minced, remainder sliced thin)
1 fennel bulb, quartered and sliced thin (small handful of fronds reserved)
3 (6 ounce) cans tuna, drained and flaked
3 tablespoons capers, chopped
1/4 cup oil-cured black olives or 1/4 cup kalamata olive, pitted and chopped
1/4 cup fresh parsley, chopped
4 slices whole grain bread (good quality)
1 1/2 cups Fontina cheese or 1 1/2 cups provolone cheese, shredded

Steps:

  • Preheat oven to 350 degrees F.
  • Place garlic and the juice of one lemon in a bowl and whisk in 3 tablespoons olive oil; season with plenty of pepper.
  • Heat the remaining olive oil over medium high heat; add sliced onion and fennel cook until tender crisp, about 6 to 7 minutes, season with pepper.
  • Add tuna to the dressing, then combine with chopped onion, capers, olives, parsley, and fennel fronds, tossing to combine.
  • Divide tuna mixture among the bread slices, then top with the fennel and onion mixture; top with the cheese, then bake in oven until the bread is toasted, the tuna warm, and the cheese melted and slightly browned, about 15 minutes.
