In a bowl, mix the cream cheese, ranch dressing mix, artichoke hearts, roasted red peppers, and parsley. Chill 4 hours in the refrigerator before serving.

1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 cup mayonnaise
1/3 to 1/2 cup grated Parmesan cheese
1 garlic clove, minced
Dash hot pepper sauce
Paprika, optional
Assorted crackers

Steps:

In a large bowl, combine the artichokes, mayonnaise, Parmesan, garlic and pepper sauce. Transfer to a greased 1-qt. baking dish. Sprinkle with paprika if desired. , Bake, uncovered, at 350° for 20-25 minutes or until top is lightly browned. Serve warm with crackers.

1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup red bell pepper, diced
1 tablespoon minced garlic
1 (6.5 ounce) jar artichoke hearts, drained and mashed
½ cup sour cream
½ cup grated Parmesan cheese
salt and ground black pepper to taste
¼ cup heavy cream

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Mix together spinach, bell pepper, garlic, artichokes, sour cream, and parmesan cheese. Season with salt and pepper. Mixture will be thick; add cream to thin to dip consistency. Spoon into a 1-quart baking dish.
Bake for 20 minutes, or until bubbly. Serve with crackers.
