HOLIDAY PRALINE NO-BAKE COOKIES

A handful of ingredients, and 15 minutes is all it takes to make these low carb Holiday Praline No-Bake Cookies.

Number Of Ingredients 7

1/2 Cup Heavy Whipping Cream
4 Tablespoons Unsalted Butter
1/2 Cup Xylitol (or the equivalent of your favorite sweetener)
1 Tablespoon Coconut Oil
1 Teaspoon Vanilla Extract
1 Cup Unsweetened Shredded Coconut (you want finely shredded, not the large flakes)
1 Cup Chopped Pecans

Steps:

  • In a large saucepan, melt Heavy Whipping Cream, Butter, Xylitol and Coconut Oil. Bring to a low boil and simmer for 10 minutes. Remove from heat and add Vanilla, Shredded Coconut, and Chopped Pecans. Scoop onto a parchment lined cookie sheet, and chill in freezer until firmly set.

My Holiday Pecan Praline Cookies are a cross between a bar, a cookie, and a pecan pie - and just the thing you need to make during this holiday season!

18-20 whole graham crackers (about 2 sleeves), (store bought or home made)
1 ½ cups (9oz/255g) (9oz/270g) dark brown sugar packed
1 ½ cups (12oz/340g) (12oz/360g) butter
1 teaspoon vanilla extract
1 teaspoon salt
2 cups (10oz/284g) pecans, (roughly chopped)

Steps:

  • Preheat oven to 350ºF (180°C). Line a sheet pan (13x18) with foil allowing the foil to overhang pan by a few inches on the long sides.
  • Place graham crackers in single layer on prepared pan. Cover the entire pan. You will have to cut a few of the crackers to fit.
  • Melt butter in a medium-size saucepan. Add brown sugar and whisk mixture together over medium heat. Stir continuously until sugar is fully incorporated. At first the butter and sugar will seem to separate. Just keep whisking till smooth.
  • Bring mixture to a rolling boil, add pecans and continue cooking, stirring frequently for 2 minutes. Remove from heat and stir in vanilla and salt. Be careful as mixture will bubble furiously when you add the vanilla.
  • Working quickly, pour mixture over graham crackers and spread to cover with a knife.
  • Bake for 12 minutes. The entire surface should be bubbly. If not, bake it for bit longer. Remove from oven and allow to cool for 15 minutes.
  • Using foil, transfer bars to a large cutting board and cut into squares. Allow to cool completely before serving.
  • Cover and store at room temperature in an airtight container for 3-5 days.

¼ cup unsalted butter, softened
2 cups firmly packed light brown sugar, divided
1 large egg
1 teaspoon vanilla extract
1⅔ cups all-purpose flour
1½ teaspoons baking soda
½ teaspoon salt
⅔ cup heavy whipping cream
½ cup confectioners' sugar
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. Line baking sheets with parchment paper.
  • In a large bowl, beat butter and 1½ cups brown sugar with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape bowl. Add egg and vanilla, beating until combined.
  • In a medium bowl, whisk together flour, baking soda, and salt. Gradually add flour mixture to butter mixture, beating just until combined. Scoop dough using a 1½-inch spring-loaded ice cream scoop, and drop 2 inches apart onto prepared pans.
  • Bake until lightly browned, 10 to 12 minutes. Let cool on pans for 5 minutes. Remove from pans, and let cool completely on wire racks.
  • In a small saucepan, bring cream and remaining ½ cup brown sugar to a boil over medium heat, stirring constantly; cook, stirring constantly, for 2 minutes. Remove from heat, and stir in confectioners' sugar until smooth.
  • Spread warm sugar mixture onto cookies, and sprinkle with pecans. Let stand until set, about 10 minutes. Store in an airtight container for up to 3 days.

Living in the South, Elizabeth Choinski has seen plenty of pralines in her time, flavored with the likes of chocolate and coffee. But she had never come upon pralines imbued with the classic spice flavors of the holidays. So she made her own, mixing cloves and cinnamon into the pot. The resulting pralines are superb: aromatic, creamy as they melt in your mouth, then crunchy from the nuts.

400 grams granulated sugar (2 cups)
1/2 cup Steen's cane syrup or light molasses
230 grams pecan halves (2 cups)
4 tablespoons unsalted butter
1 tablespoon vanilla extract
5 grams ground ginger (1 teaspoon)
5 grams ground cinnamon (1 teaspoon)
2 grams ground cloves (1/2 teaspoon)

Steps:

  • In a saucepan, combine sugar, cane syrup, pecans and 1/2 cup water. Stir over medium heat until sugar dissolves and mixture comes to a boil. Cook, stirring occasionally, until mixture reaches 235 degrees on a candy thermometer.
  • Remove saucepan from heat and immediately stir in butter, vanilla extract and spices. Allow mixture to cool for 10 minutes.
  • Carefully using a hand-held mixer, or a standing mixer fitted with the paddle attachment, whip until mixture changes to a lighter color and becomes creamy and just starts to stiffen as it cools (it should still be warm). The pecans will break up a bit.
  • Use a tablespoon-size cookie dough scoop to drop mixture onto two parchment-paper-lined baking sheets (12 pralines on each sheet). Use a spatula to flatten each praline. Let cool completely and store in a tin, creating separate layers with wax paper.

Steps:

  • Heat the oven to 325 F. Lightly grease baking sheets or line with parchment paper or silicone baking mats.
  • In a large mixing bowl with an electric mixer, beat the butter until creamy. Add the brown sugar and beat on high speed until light and fluffy. Stir in the vanilla.
  • With the mixer on low speed, gradually add the flour.
  • Fold in the chopped pecans.
  • Scoop portions of cookie dough with a tablespoon or small cookie scoop and shape each into a ball. Arrange the cookie dough balls on the prepared baking sheets about 2 1/2 inches apart.
  • Lightly grease the bottom of a glass or other small container with a flat bottom and dip it in granulated sugar, pourable brown sugar, or raw sugar. 1 large egg white
1 cup light brown sugar, firmly packed
2 tablespoons flour
1 teaspoon vanilla
2 cups pecans, chopped
1 egg white, unbeaten, if needed

Steps:

  • Preheat oven to 350°.
  • Beat egg white until frothy, about 1 minute.
  • Gently fold in brown sugar, flour, vanilla and pecans.
  • If mixture seems too dry and will not hold together add the additional egg white and mix together.
  • Drop on greased cookie sheet by tbsp (I have good results using parchment paper on my cookie sheets as these cookies are very soft and delicate when trying to remove from the cookie sheet).
  • Bake for 10-12 minutes.
  • Let cool completely on cookie sheet before trying to remove.
  • Remove to cooling racks.

1/2 teaspoon salt

1/2 cup heavy cream, more
heavy cream, if necessary
1 cup powdered sugar, sifted
1 cup pecan halves, chopped

Steps:

  • Heat oven to 350 degrees.
  • Sift flour, baking powder, and salt into a medium bowl. Set aside.
  • With an electric mixer (or Kitchenaid with paddle attatchement), cream butter and 1 1/2 cups brown sugar until light and fluffy, about 2 minutes.
  • Add egg and vanilla. Beat until fully combined.
  • Add dry ingredients, and beat on low speed until combined.
  • Drop batter by rounded teaspoons on to an ungreased baking sheet about 2 inches apart.
  • Bake until firm and barely golden, 10 to 12 minutes. Wait 5 minutes before transferring cookies to a wire rack.
  • In a small saucepan, combine remaining 1 cup brown sugar and cream.
  • Bring to a boil over a medium heat. Cook, stirring constantly, for 2 minutes.Remove from heat.
  • Add powdered sugar, and whisk until smooth.
  • (If frostening thickens too much, thin with heavy cream.).
  • Add pecan pieces.
  • Place cookies on a cooling rack over a lined baking sheet.
  • Spoon about 1/2 teas praline mixture onto each cookie.
