HOLIDAY TURKEY W/ APPLE-BLACK WALNUT STUFFING

- Recipe by: Midwest Living, December 1994 Preheat oven to 325 degrees. Spread the bread cubes in a 15 x 10 x 2-inch baking pan. Bake for 10 to 15 minutes, or until dried, stirring twice. Or let stand, loosely covered, at room temperature for 8 to 12 hours. In a large saucepan, cook the onion and celery in the butter for about 5 minutes, or until tender. Remove from the heat. Stir in the apples, walnuts, raisins, salt, ginger, cinnamon and sage. Place the dry bread cubes in a very large bowl. Add the fruit mixture. Drizzle with the apple cider and enough broth to moisten, tossing lightly. Use less broth for stuffing inside the bird and more if the stuffing is to be baked in a casserole. APPLE WALNUT STUFFING
Use this to stuff turkey,pork chops,lamb,chicken, any thing you want! This completes a holiday meal!

Steps:
- Melt butter in a small skillet over medium-high heat; add onion and celery, and cook, stirring constantly, until tender.
- Combine apples, bread cubes, and next 4 ingredients in a large bowl; stir in vegetable mixture, egg, and remaining ingredients.
- Spoon into a lightly greased 11x7x1 1/2-inch baking dish.
- Bake at 350* for 30 minutes.
- Yield: 6 servings (4 1/2 cups).
APPLE-STUFFED TURKEY
This simple recipe takes the headache out of holiday baking. There are only three ingredients, and no basting or constant checking is required.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- If necessary, unbind legs of turkey. Rinse and dry turkey with paper towels. Place turkey into a roasting pan with a lid, and rub the oil all over the turkey, inside and out. Stuff the body and neck cavities of the turkey with the apple quarters; arrange whole apples around the turkey in the roasting pan. Scatter any extra apple quarters into the pan. Cover the roasting pan.
- Roast in the preheated oven until the skin is browned and the meat is beginning to separate from the legs, 2 1/2 to 3 hours. Remove lid in last 20 minutes of roasting if needed to brown skin. Use pan drippings for gravy, if desired.
