Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, mix together the soup, sour cream, butter, dried onion flakes, and pepper. Stir in the hash browns and 1/2 the cheese. Pour into the prepared baking dish, sprinkle with remaining cheese, and top with crushed cornflakes.
- Bake 45 minutes in the preheated oven, or until cheese is melted and bubbly.

- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.

COPYCAT HASH BROWN CASSEROLE
This copycat hash brown casserole is an incredibly comforting side dish you'll want to make for both breakfast spreads and dinner parties alike. We opted to ditch the canned creamed soup and make a homemade cheese sauce instead. The result is a homey rendition of the classic Cracker Barrel dish.

- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
- Melt the remaining 4 tablespoons butter in a large saucepan over medium-high heat. Add the garlic powder, onion, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is softened, about 5 minutes. Add the flour and cook, whisking, until sizzling all over and light golden, about 2 minutes. Whisk in the half-and-half and chicken broth, return to a simmer and cook until thickened, about 1 minute. Remove from the heat and stir in the sour cream and 1 1/2 cups of the Cheddar. Add the hash browns and toss until coated in the sauce. Add salt and pepper to taste.
- Transfer the hash brown mixture to the prepared baking dish, then top with the remaining 1/2 cup Cheddar. Bake until browned and bubbling at the edges, about 45 minutes. Raise the oven temperature to 475 degrees F and continue to bake until the top is crisp and browned all over, about 5 minutes.

This recipe is so amazingingly good but definately NOT good for you! Don't leave out the veggies-- they not only offer some nutritional value but rescue this dish from being totally sinful! My whole family loved it!

- 1.In a medium saucepan, pour in Rotel and chunks of Velveeta. Heat until the Velveeta melts.
- 2. Pour thawed O'Brien potatoes in a 13x9 pyrex dish. Pour melted cheese mixture over the potatoes and mix well.
- 3.Saute sausage until cooked, drain well. Add to potatoes.
- 4. Saute onions and green peppers in butter or olive oil until they begin to get tender. Add in mushrooms. Once everything is almost cooked, throw in the fresh spinach and saute until wilted.
- 5. Pour all veggies in potato mixture.
- 6. At this point you can refrigerate or cook at 350 for about an hour or until potatoes are soft.

- Preheat the oven to 350 degrees F. Add the butter to a large heavy skillet. Once foaming and melted, add the garlic, ham, onions and some salt and pepper. Saute until the onions are tender and the ham is browned, about 4 minutes. Stir in the flour and cook until pasty, about 2 minutes. Add the milk and stock and stir until smooth. The mixture will begin to thicken as it comes to a simmer. Once thick, turn off the heat and add 1 cup of the shredded cheese. Stir until melted. Add the hash browns and green onions and stir until well mixed. Add to a 13-by-9-inch casserole dish and sprinkle with the remaining 1/2 cup cheese. Bake until the top is golden and the potatoes are tender, 45 minutes.

- Preheat your oven to 350 degrees.
- Non stick spray an 8" X 8" oven safe pan/casserole dish.
- Remove breakfast sausages from casings and break up sausage meat with a fork.
- Pan fry until no longer pink - but not too crispy breaking appart the bigger bits.
- In a separate pan - melt butter and saute the onions for approx 3 mins - until they just begin to be opaque - add the hashbrowns and fry for approximately 5 - 6 minutes stirring frequently for even cooking.
- In a bowl - combine the eggs, milk, mustard and salt and pepper (and/or any seasonings you like).
- When your hashbrowns are done - put them evenly on the bottom of your casserole dish. Then layer the bread cubes. Next comes the sausage meat - distribute it evenly over the bread bits. Now pour the milk and eggs over the entire dish. Top with cheese. Bake for 50 minutes. Remove from oven and allow to cool for 10 minutes before cutting into it.
- This recipe serves 4 people - one large piece each. This meal is filling and can very easily be doubled. Try other cheeses for deeper richer flavors.

ALEA'S MEAT LOVER'S HASHBROWN CASSEROLE
Alea Milham says, "As I was getting ready to make my breakfast casserole, I suddenly had the impulse to make it healthier by adding vegetables. I asked my kids what vegetable they though I should add and my oldest son replied "Bacon!" My son't transcripts from college indicated that he is quite bright, so I am pretty sure he knows bacon isn't a vegetable. I think bacon is just his default answer to most questions. I have discovered that if you ask male college students what you should add to any recipe the most common answer is bacon. Don't believe me? Try it for yourself. Bacon is more expensive per pound than most of the meat I buy, so when it goes on sale I stock ip and freeze it for later use. I also cook up a batch and crumble it and use it sparingly in recipes to add flavor rather than using it as a side dish. Whether you make the hashbrowns from scratch or use frozen hashbrowns that have thawed, be sure to squeeze out all of the excess liquid. Removing the excess liquid is essential to prevent the casserole from becoming runny. You can make this with whatever meat you have on hand. I usually make my hashbrown casserole with ham, but sausage works well too. And a combination of both ham and sausage is always a hit. No matter what meat you use, cut it into very small pieces. This allows you to get a nice meaty flavor throughout the casserole while using as much meat of other casseroles."

- Add cottage cheese and spices to eggs and stir to combine.
