This homemade bacon, egg, and cheese biscuit is a McDonald's bacon, egg, and cheese biscuit copycat recipe so you can make your favorite breakfast from the comfort of your home with fresh ingredients!

4 cups self-rising flour
2 tablespoons baking powder
1 teaspoon baking soda
3/4 pound (3 sticks) salted butter, cut into small pieces
2 large eggs (for biscuit dough)
1 and 1/2 cups buttermilk
2 slices bacon
1 slice American cheese
1 or 2 eggs (for final sandwich)
Extra butter (for final sandwich)

Steps:

  • To make the biscuits: Whisk the flour, baking powder, and baking soda together in a large bowl. Cut the butter into chunks and use your fingers to squish it into the flour until it looks like breadcrumbs. Add the eggs, beaten, and stir until combined. Add the buttermilk and stir until it forms a dough. Cover the bowl and refrigerate for at least 30 minutes. Preheat the oven to 400F and line a baking sheet with parchment paper. Put the dough onto a floured countertop and use your hands to press it down until it's about 1/2 inch thick. Using a cookie cutter or the bottom of a cup, cut out the biscuits in circles. Put the biscuits on the baking sheet so that they are touching. If desired, mix together any remaining egg and buttermilk and brush on top. Bake about 18 minutes, until golden brown. Let cool! To make the bacon, egg, and cheese biscuit: Cook your bacon, either on the stove or by putting in the oven for 20 minutes. With 5 minutes left on the bacon, cut open a biscuit and butter both sides. Crack 1 or 2 eggs into a frying pan and scramble up with a spatula, then leave it to cook in one piece. Take out the bacon and place on paper towel to dry. Compile the sandwich by placing the egg, slice of cheese, and slices of bacon in the middle.

6 biscuits, baked and cooled (I used Sourdough Whole Wheat Biscuits.)
6 slices Canadian bacon
5 eggs
1/4 cup milk
salt
pepper
1/4 cup cheddar cheese, grated

Steps:

  • Preheat oven to 425 degrees.
  • Spray a 6 cup muffin tin with non-stick cooking spray and set aside.
  • In a small bowl, beat together the eggs and milk; salt and pepper to taste.
  • Divide the egg mixture evenly between the prepared muffin tins and place in preheated oven.
  • Bake for 8 to 10 minutes or until eggs are set; immediately sprinkle with grated cheese.
  • Remove from muffin tin and allow eggs to cool completely.
  • Split the biscuits and top each with a slice of the Canadian bacon.
  • When the eggs are cooled, place one on top of each slice of bacon.
  • Wrap in foil and freeze until ready to enjoy.
  • When ready to reheat, place in the refrigerator the night before, in the morning, wrap in a paper towel and reheat in the microwave at 70 percent power for 1 minute or until heated, turning after 30 seconds.

1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.

Steps:

  • Preheat oven to 375 degrees. Spray the bottom side of a cupcake pan with cooking spray.
