- I recommend sterilizing your bottles or jars before using them. This can be done by boiling them in a stock-pot of water for 10 minutes, then carefully remove them to a clean towel to dry completely.
- Using the tip of a sharp knife slice bean gently lengthwise, stopping just before you get to the end.
- Place desired number of sliced vanilla beans into the bottle of choice, snip your beans in half if the alcohol doesn't cover the entire bean as this will prevent mold.
- With funnel placed on top of the bottle, slowly pour your alcohol over the beans until they are covered and bottle is full. *Tip | If your funnel isn't flowing, simply lift it slightly off the mouth of the bottle breaking the seal and allow it to flow easily. Place on lid and tighten, shake passionately for a minute.
- Write date started on the bottom or side of the bottle, using chalk or metallic marker as well as type of vanilla.
- Once your vanilla no longer smells of the spirit you used and smells instead like vanilla it is ready!

MADAGASCAR BOURBON VANILLA, BOURBON EXTRACT
Madagascar Bourbon vanilla beans does not have anything to do with Bourbon whiskey, it derives its name from the old name for Madagascar - the Bourbon Islands. In this recipe I do use bourbon whiskey and Madagascar Bourbon vanilla beans. You can use your choice of rum, vodka, everclear, scotch, or brandy. Even flavored rums or vodkas for a special touch. Bourbon vanilla beans, from Madagascar and the Comoro Islands in the Indian Ocean, are known for having the best aroma and are sweet or buttery flavored. Give as a gift with a recipes from zaar using vanilla extract.

- Combine ingredients in a jar with tight fitting lid.
- Cover jar and let stand 4 weeks.
- Mixture will turn amber colored in a day or two.
- Shake every couple days and store out of direct light and heat.
- When bottle is 1/4 full add three to four more beans and more alcohol. Let stand for another week before using. Seeds may float in the syrupy liquid but unless you are giving the finished product as a gift, don't remove them-they only add to the flavor. Use one-forth to one-third the amount called for in most recipes as this has a very strong vanilla flavor. The vanilla beans are good as long as they have a vanilla scent. When they have lost their scent, discard and replace with fresh beans. The beans can be removed from the alcohol and scraped or chopped and use them in recipes in place of the extract if you want a strong vanilla flavor.

- Place the vanilla beans in the bottle of vodka and seal. Store in a cool, dark area such as a kitchen cabinet for 3 weeks, shaking the bottle every week. Three weeks is the minimum, store it 6 months for the best flavor. After using, replace with more vodka. The same beans will continue to flavor the vanilla for up to a year.

- Using a sharp knife, slit the vanilla beans so the beans are exposed. No need to completely split the bean in half, just slit down the middle. If the length of the vanilla beans don't fit into your bottle or jar, cut the vanilla beans into smaller pieces. Place beans into bottle or jar.
- Pour vodka on top. A funnel helps. Use a little extra vodka, if needed, so the beans are fully submerged. Shake a few times.
- Store vanilla at room temperature out of direct sunlight. Shake about once per week or once every couple weeks. Vanilla can be ready to use in as little as 8 weeks, but I recommend at least 6 months for optimal flavor. 12+ months is great!
- As you begin to use your vanilla, you can refill with a little vodka each time. Give it a shake after you refill and give it a shake before each use, too. If you're gifting the vanilla or if you don't have any more alcohol to refill, remove the beans completely after first use. The beans will become a little slimy if they aren't almost fully submerged.
- Unused aged vanilla extract (with the beans fully submerged) will last several years. If it still smells good, it's still good to use! Aged extract without the beans will last indefinitely. Once you begin using the vanilla and adding more alcohol after each use, the beans will eventually need to be replaced. It's hard to give a specific amount of time as some may use (and refill) the vanilla more quickly than others. After about 1 year of frequent use and refilling, you will you find the vanilla flavor less intense. Simply remove old beans, add fresh beans, shake, and continue to use/refill.
HOW TO MAKE VANILLA EXTRACT

- Cut the vanilla beans in half lengthwise and scrape out the vanilla flecks inside. Add the flecks and the beans to the vodka in a glass jar with a fitted lid. Make sure the vanilla beans are submerged under the alcohol otherwise any exposed parts can become slimy and potentially ruin your extract. Place the extract in a dark, cool place, shaking occasionally for the first few weeks. The extract "can" be used in as little as 8 weeks but it won't have reached optimal potency. The extract gets better with age. For far better results use after 6 months and for optimal results wait 12 months.
- Once the extract is ready, place the funnel on the glass jars and fill them with the extract. If you like, to get even more flavor out of the beans as the extract ages, slice the used vanilla beans to fit the length of the jars and place about 2 pieces in the 2-ounce jars and 4 pieces in the 4-ounce jars. - Split vanilla beans lengthwise with a knife, stopping about 1-inch from one end. (Use vanilla beans that are flexible, pliable, soft, oily, and not hard or dried out). Place beans in an 8 to 12-ounce jar with a lid (rule of thumb is 5 beans per 8 ounces alcohol). Some people scrape the seeds add the scrapings and beans to the jar separately, but I don't bother scraping.
- Pour vodka over the beans to nearly the top of the jar, about 95% full. Seal jar, shake vigorously for about 30 seconds, and set in a corner on the countertop, shelf, or safe place out of direct sunlight, where jar will stay for two months. Once or twice per week, shake the jar for about 10 seconds, otherwise just forget about it.
- In 6 weeks, the extract may be ready to use, but it will likely take 8 weeks, and longer is better as the extract will continue to mature. As time elapses, the alcohol will fade and the flavor of vanilla will develop and strengthen. Use your nose and if it smells prominently like alcohol, it's not ready. The extract will always have some scent of alcohol, as storebought vanilla extract does, but it should smell like vanilla extract not like a cocktail. You will be able to discern ready from not ready with a sniff test.
- When extract is ready, use it directly out of brewing jar for all your cooking and baking needs. Some people strain extract prior to using to remove the vanilla bean seeds and flecks but I do not. If strained extract is desired, strain it through a fine-mesh filter or sieve). Store extract in the jar in which it's being made or pour into smaller jars (save storebought jars, ask friends and family, they'll be happy to give you old storebought jars if you refill them with homemade). Vanilla extract will keep for many months and year(s) stored at room-temperature out of direct sunlight.
