10 ounces sirloin steak tips
10 ounces beef brisket, trimmed of fat, cut into small chunks
¼ cup mayonnaise
1 shallot, minced
¼ cup wild game rub (see footnote)
4 whole wheat hot dog buns
4 slices white Cheddar cheese
Salt and pepper to taste
Lettuce leaves
Sliced tomatoes
Chopped onion
Relish

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Combine the sirloin and brisket in a food processor and pulse until ground.
  • Transfer the meat into a large bowl. Add the mayonnaise, shallot, and wild game rub; gently mix.
  • Divide the meat into 4 equal portions; shape the "burgers" into hotdog shapes.
  • Place on preheated grill and close the lid. Cook for 4 minutes. Lift lid; flip burger dogs and close lid.
  • Lightly toast hot dog buns, then set aside.
  • Sear the burger dogs on all four sides for extra char flavor, about 2 1/2 minutes per side for medium, or until internal temperature reaches 140 degrees F. During the final minute of grilling, top each burger dog with a slice of cheese.
  • Transfer burger dogs from the grill to a grill bun. Salt and pepper to taste; serve with your favorite condiments.

Easy, Perfect Homemade Hamburger or Hot Dog Buns image

Tender homemade hot dog and hamburger buns are easy to make. If you are making hot dog buns I find it easiest to roll the dough out into a large rectangle and cut into smaller rectangles. Let rise with sides touching. You can brush the tops with egg wash and sprinkle with poppy seeds, sesame seeds, coarse sea salt, or whatever you like. You can add dry onion soup mix for onion rolls. These are very versatile!

1 cup milk
1/2 cup water
1/4 cup unsalted butter
4 1/2 cups flour ((unbleached, whole wheat, or a mix))
1 active dry yeast
1 tablespoons honey
1 1/2 teaspoons salt
1 egg (, room temperature)

Steps:

  • Heat the milk, water, honey and butter until butter is melted.
  • Check temperature. Depending on the temperature, let cool to 120F.
  • Carefully beat in egg.
  • Mix 2 cups of the flour, yeast, and salt.
  • Mix into the milk mixture.
  • Stir in the rest of the flour, 1/2 cup at a time. Beat well after each addition.
  • When the dough pulls together, (it will form a soft ball) turn it out onto a floured surface and knead until smooth and elastic. This should take about 5 minutes.
  • Divide dough into 12 -16 equal pieces. This will depend on the size you want for the finished bun.
  • Shape into smooth balls, flatten slightly, and place on a silpat covered baking sheet.
  • Let rise for 30 to 35 minutes.
  • When buns have almost doubled bake at 400 degrees for 10 to 12 minutes, or until done.
  • Cool, covered with a tea towel to keep them soft.

1 cup milk
½ cup water
¼ cup butter
4 ½ cups all-purpose flour
1 (.25 ounce) package instant yeast
2 tablespoons white sugar
1 ½ teaspoons salt
1 egg

Steps:

  • In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
  • In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
  • Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
  • Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
  • For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

4 fresh pork bratwursts
2 12-ounce bottles lager beer
1/2 pound ground beef chuck
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground pepper
16 slices center-cut bacon
4 hot dog buns, split
Extra-virgin olive oil, for drizzling
1/2 sweet onion, finely chopped
1 cup shredded cheddar cheese (about 4 ounces)

Steps:

  • Put the bratwursts in a medium pot in a single layer. Pour in the beer, then add enough water to cover the bratwursts by 1 inch, if necessary. Bring to a boil, then reduce the heat to medium low. Simmer until the bratwursts are cooked through, 12 to 14 minutes. Remove to a plate and allow to cool completely.
  • Meanwhile, combine the ground beef, Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Gently mix with your hands and divide into 4 equal portions.
  • Lay out a piece of plastic wrap. Arrange 4 bacon slices side by side on the plastic to form a rectangle, overlapping them slightly. Position the bacon rectangle with a short end in front of you. Press a portion of the beef over the half of the bacon rectangle closest to you. Place a bratwurst horizontally on top of the beef. Using the plastic wrap to help, tightly roll the bacon and beef around the bratwurst away from you; remove the plastic wrap. Secure the bacon with kitchen twine in 3 or 4 spots. Repeat to wrap the remaining bratwursts.
  • Place the bacon-wrapped bratwursts seam-side down in a large nonstick skillet over medium heat. Cook, turning, until the bacon is crisp and the beef is cooked through, about 10 minutes. Remove to a plate, tent with foil and let rest 10 minutes.
  • Meanwhile, preheat the broiler. Drizzle the insides of the buns with olive oil. Place on a baking sheet and broil until golden brown, about 1 minute. Use scissors to remove the twine from the bratwursts. Place on the buns and top with the chopped onion and cheese.

For dough:
1 1/4 cups whole milk
1 cup heavy cream
1/4 cup warm water (105-115°F)
1 (1/4-ounce) package active dry yeast
1/4 cup sugar
5 cups all-purpose flour
2 teaspoons salt
For tops of hamburger buns:
1 large egg, lightly beaten
2 teaspoons sesame seeds
Equipment: a stand mixer fitted with paddle attachment; a 3-inch round cookie cutter (for burger buns) or 2 (13- by 9-inch) baking pans (for hot dog buns)

Steps:

  • Make dough:
  • Bring milk and cream to a bare simmer in a small saucepan over medium heat. Cool mixture to 105 to 115°F.
  • Meanwhile, stir together warm water and yeast in mixer bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.)
  • Add warm milk mixture, sugar, flour, and salt to yeast mixture and mix at low speed, scraping down side of bowl as necessary, until flour is incorporated. Increase speed to medium and beat 6 minutes. (Dough will be sticky.)
  • Transfer dough to a lightly oiled large bowl and turn to coat with oil. Cover with a kitchen towel (not terry cloth) and let rise in a draft-free place at warm room temperature until doubled, about 2 hours.
  • To make hamburger buns:
  • Butter 2 large baking sheets. Punch down dough, then roll out on a floured surface with a floured rolling pin into a 14-inch round (about 1/2 inch thick). Cut out as many rounds as possible with floured cutter, arranging 3 inches apart on baking sheets. Gather and reroll scraps once, then cut out more rounds.
  • Loosely cover buns with oiled plastic wrap and let rise in a draft-free place at warm room temperature until they hold a finger mark when gently pressed, 1 1/2 to 2 hours.
  • Preheat oven to 375°F with racks in upper and lower thirds.
  • Brush buns with some of egg and sprinkle with sesame seeds. Bake, switching position of sheets halfway through, until tops are golden and undersides are golden-brown and sound hollow when tapped, 20 to 25 minutes. Transfer to racks to cool completely.
  • To make hot dog buns:
  • Butter baking pans. Punch down dough, then divide into 16 equal pieces (about 3 oz each). Roll each piece of dough into a 6-inch-long log on a lightly floured surface. Space 8 logs evenly in each pan so that there are 2 columns of logs that run parallel to long sides of pan.
  • Loosely cover buns with oiled plastic wrap and let rise in a draft-free place at warm room temperature until buns just start to touch, 1 1/2 to 2 hours.
  • Preheat oven to 375°F with racks in upper and lower thirds.
  • Bake buns, switching position of pans halfway through, until tops are golden and undersides are golden-brown and sound hollow when tapped, 20 to 25 minutes. Cool in pans 10 minutes, then transfer to racks to cool completely. Before using buns, pull apart and cut lengthwise down center of each (but not all the way through).

2 slices Cheddar cheese
2 extra-long hot dog buns
4 teaspoons mayonnaise

  • Place half the ground beef on a sheet of plastic wrap. Pat it into a rectangular shape, about 1/2 inch thick, 8 1/2 inches long, and 4 inches wide. Season with salt and pepper. Roll the beef into a log, using the plastic wrap as a guide. Season with more salt and pepper. Wrap the plastic tightly around the log and twist both ends tight. Pat gently to slightly flatten. Remove and rest 3 to 4 minutes.
  • Toast hot dog buns on the grill and spread each with 2 teaspoons mayonnaise. Place burger dog on each bun and squirt 1 tablespoon of ketchup on top.

200ml whole milk , plus extra for brushing
50g unsalted butter
500g plain flour , plus extra for dusting
1 tbsp caster sugar
7g sachet fast-action dried yeast
1 egg , beaten
sesame seeds (optional)

Steps:

  • Put the milk, butter and 100ml water in a pan and gently heat until the butter is melted. Set aside to cool until just warm.
  • Tip the flour, sugar, yeast and 1 tsp salt into a large bowl and gradually work in the milk mixture, then the egg, until you have a smooth dough. Tip the dough onto a floured surface or into a stand mixer fitted with a dough hook and knead until elastic and shiny. Divide into 12 (about 80g each) pieces and roll into tight balls. Transfer to baking trays lined with baking parchment, leaving plenty of space between them, and put in a warm place to prove for 30-45 mins.

We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

4 all beef hot dogs
2 tablespoons onions, chopped
1 teaspoon garlic, chopped
hot sauce, to taste
4 teaspoons prepared mustard, of choice
4 tablespoons cheese, shredded, of choice
4 hot dog buns or 4 small hoagie rolls

Steps:

  • Separate ground beef into 4 even sections.
  • Place each section between waxed paper about 6 x 6-inch .
  • Roll or pound to 1/4 inch thick.
  • Spread each "burger" with mustard.
  • Add chopped onion, evenly.
  • Add garlic evenly.
  • Add cheese evenly.
  • Add hot sauce.
  • Place one hot dog on one edge of "burger".
  • Roll and seal.
  • Either cook over hot coals or pan fry until done to your liking (about 15 - 20 minutes).
  • Serve on rolls.

  • Slice the cheese into sticks (about the size of string cheese).
  • Season the ground beef with salt and pepper (or your favorite seasoning mix) and split it up into 5-6 palm-sized balls (you may want to do five and keep a bit of excess ground beef for an omelet or a slider the next day).
  • Flatten each ball out into a rectangle.
  • Place a cheese stick towards the bottom. Roll it up, making sure that the ground beef is evenly concealing the cheese stick.
  • Place the soon-to-be burger dogs on a hot grill. Grill for 6-10 minutes, turning the dogs when charred grill marks appear on a side. You'll need to do 3-4 turns (or more) to make sure you have even cooking around each dog.
  • Burgers should be done when some cheese starts oozing out along with meat juice.
  • Serve on hot dog buns with your favorite burger or hot dog condiments.
