CHEWY GRANOLA BARS
Extra chewy granola bars. You can make them your own by picking different ingredients to add in! Try using any combination of miniature chocolate chips, sunflower seeds, raisins, chopped dried fruits, candy-coated chocolate pieces, chopped nuts, etc.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
- In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
- Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

Steps:
- In a large mixing bowl, combine the oats, rice cereal, coconut oil, honey, brown sugar, salt, and vanilla until evenly mixed.
- For chocolate chip, take ¼ of the oats mix and combine with chocolate chips. Stir until mixed.
- Move the mixture to a small baking dish.
- For Apple Cinnamon, take ¼ of the oats mix and combine with dried apples, cinnamon, and nutmeg. Stir until mixed.
- Move the mixture to a small baking dish.
- For Cherry Almond, take ¼ of the oats mix and combine with almonds and cherries. Stir until mixed.
- Move the mixture to a small baking dish.
- For Peanut Butter Crunch, take ¼ of the oats mix and combine with pretzels, peanut butter, and chocolate candies. Stir until mixed.
- Move the mixture to a small baking dish.
- Bake each bar mixture at 350°F (175°C) for 5-8 minutes.
- Let granola cool and then cut into desired bar shape.

- Line an 8-inch or 9-inch square baking pan with parchment paper. Set aside.
- In a medium saucepan over low heat, melt the coconut oil and chocolate chips together until smooth. Stir in the peanut butter and maple syrup. Remove from heat.
- Mix in the oats, crispy rice cereal, and add-ins. Press mixture into prepared baking pan. I used the back of a spatula to evenly press. Top with mini chocolate chips if desired.
- Refrigerate for at least 2 hours or freeze for up to one hour. Cut bars into squares. Store bars in an airtight container in the refrigerator for up to 10 days.

- 1. Preheat oven to 180˚C (350˚F). Depending on desired thickness, line a square (8x8 or 9x9) or rectangular (9x13) baking dish with parchment paper, then lightly grease with Extra Virgin Olive Oil. Thicker bars are a little more decadent, if you're planning on using this as a dessert.
- 2. Process 1/3 cup (80 mL) of the oats in a blender or food processor until finely ground.
- 3. If necessary, chop up dried fruit and nuts. Raisin-size pieces are fine, but bigger pieces like dried apricots or apples should probably be chopped.
- 4. Stir together all dry ingredients - oats, ground oats, sugar, salt, cinnamon, fruits/nuts/seeds.
- 5. Whisk together wet ingredients - olive oil, honey, peanut butter and water.
- 6. Mix together the wet and dry ingredients, then spread in the pan. Press firmly into corners and edges so the top is even.
- 7. Bake for around 30 minutes, until the top starts to brown. Thicker bars will likely take longer, so you'll need to watch them depending on how much batter you've spread in what size pan. The edges will become deep golden and they may feel underdone in the center, but that's okay. They'll firm quite nicely as they cool.
- 8. Let cool in the pan on a cooling rack for at least 20 minutes, then take them out using the parchment. Let cool completely before cutting.

I "borrowed" this recipe from the kitchen at my college because I fell in love with these bars. They are so much better than store-bought, and you can add or subtract ingredients as you wish. They make a perfect on-the-go snack; a much healthier alternative to chips or cookies, especially for kids (Great for lunch boxes!)

- Preheat oven to 350° and lightly grease or spray 9 x 13 pan.
- In large bowl, beat brown sugar, sugar, and butter until light and fluffy.
- Blend in honey, vanilla and egg.
- In separate bowl, combine flour, cinnamon, baking soda, and salt.
- Add flour mixture gradually to sugar mixture and beat until combined.
- By hand, stir in almonds, chocolate chips and oats until well mixed.
- Press mixture firmly in bottom of greased pan, and bake at 350° for 20-25 minutes, or until light golden brown.
- Cool and cut into squares.
