1/2 cup jam OR preserves OR frozen fruit

Steps:

  • Mix corn syrup with jam, preserves or frozen fruit in a small sauce pan.
  • If using JAM or PRESERVES: Heat on medium heat until well blended and hot; do NOT boil.
  • If using FROZEN FRUIT: Heat on medium heat until well blended; simmer 2 to 3 minutes, until fruit is tender.

Basic Recipe for Fresh Fruit Syrup image

Here is a simple recipe for basic fruit syrup you can enjoy with pancakes, waffles, yogurt, or in sauces. Use any fruit you wish to make it.

1 cup fruit (fresh or frozen)
3/4 cup sugar
1/3 cup water

Steps:

  • Gather the ingredients.
  • Peel, de-stem, or remove seeds from the fruit, as appropriate.
  • Place the fruit, water, and sugar into a pot.
  • Cook the fruit with the sugar and water, bringing it to a boil and then lowering the heat to simmer.
  • Smash the fruit while it is cooking.
  • Simmer until the mixture has thickened to a syrupy consistency. This should take about 10 minutes.
  • Once the mixture has thickened, you can press it through a strainer to make a thin syrup.
  • If you prefer a thicker syrup, process the cooked syrup in a food processor .
  • Serve with your favorite breakfast item. Enjoy!

My hubby likes to use fruit syrup on his pancakes and waffles, but it's so expensive to buy in stores, so, I started making this version. He likes it just as well as store bought! (yield below is a rough guess!)

1 cup fruit juice
2 cups sugar

Steps:

  • Combine juice and sugar in medium sauce pan.
  • Bring to a boil.
  • Let boil for a few minutes (until sugar is completely dissovled).
  • Let cool for about 30 minutes.
  • Pour into containers (I used an old glass syrup bottle) and store in fridge.

2 cups berries or diced fruit, (pitted or cored) such as pears, peaches, or plums
1 cup maple syrup
1 vanilla bean, (optional)

Steps:

  • Combine fruit and syrup in a small bowl. If using berries, press them with the back of a spoon until they just start to break apart. For a smoother syrup, press through a sieve.
  • Split vanilla bean, if using, and scrape seeds into mixture. Add bean to bowl.
  • Transfer mixture to a bottle or another container, cover, and refrigerate. Use within 3 or 4 days. Before serving, the syrup can be warmed in a small saucepan over low heat to desired temperature.

For the syrup:
1 pint fresh blackberries
1/2 cup sugar
For the crepes:
1 cup all-purpose flour
1 pinch kosher salt
3 large eggs, lightly beaten
1 1/4 cups milk
2 tablespoons melted butter (plus a small pat of butter for the pan)

Steps:

  • 1. Put the blackberries, sugar, and 1 ounce of water in a pot. Bring to a boil, then reduce heat and simmer until the mixture has reached a syrupy consistency, about 10 minutes.
  • 2. Meanwhile, sift the flour and salt into a medium mixing bowl.
  • 3. Whisk the beaten eggs and milk together and pour them into the flour mixture.
  • 4. Whisk in the melted butter, then strain the mixture through a fine mesh sieve to remove any lumps.
  • 5. Place a nonstick pan over medium heat. Melt the pat of butter, then pour in enough batter to cover the surface of the pan. Cook until golden brown, about 1 minute on each side.
