This recipe wa kindly shared by DF whose DH has made since the beginning of time. She says, "It is Smooooth!". Needs at least 10 days to steep - going to get a pint of Everclear started to have for Thanksgiving.

Ingredients

6 cups coffee, fresh brewed (fill filter to the top with ground coffee)
3 cups sugar
1 pint Everclear alcohol
1/2 vanilla bean

Steps:

Brew a pot of coffee - as strong as you can make.
Add 3 cups of sugar to coffee & stir to dissolve.
Once cooled, add pint of Everclear to coffee/sugar mix .
Store in 1/2 gallon glass container for at least 10 days. I plan to split between 2 - 1 quart Mason jars, dividing the vanilla bean between between the two jars.

24 cups of strong brewed coffee
4 pounds light brown sugar
1.75 L everclear alcohol
3/4 c vanilla

Steps:

brew 24 cups of strong coffee.
pour coffee into a large stock pot and bring to a boil.
add brown sugar and stir constantly for 5 minutes.
remove stock pot from heat and cool.
once cool stir in 1.75 L everclear.
use a funnel and pour into bottles.

2 cups water
1 1/2 cups dark brown sugar
1 1/2 cups granulated sugar
1/2 cup instant coffee
1 3/4 liters high quality vodka
2 teaspoons pure vanilla extract
1 whole vanilla bean

Steps:

Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
Remove from the heat. Stir in the coffee. Allow to cool completely.
Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.

4 cups water
1 cup instant coffee crystals (such as Folgers® Classic Roast)
2 cups light brown sugar
2 cups lightly packed dark brown sugar
1 (750 milliliter) bottle 190 proof grain alcohol (such as Everclear®)
2 teaspoons vanilla extract
1 vanilla bean, split lengthwise and halved

Steps:

Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.
