1 medium onion, chopped
4 garlic cloves, minced
2 cups salsa
1 can (16 ounces) refried beans
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) enchilada sauce
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
1/4 teaspoon pepper
6 flour tortillas (10 inches)
3 cups shredded Mexican cheese blend, divided
2 cups crushed tortilla chips
Sliced ripe olives, guacamole, chopped tomatoes and sour cream, optional

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the salsa, beans, enchilada sauce, chilies, taco seasoning and pepper; heat through. , Spread 1 cup meat mixture in a greased 13x9-in. baking dish. Layer with two tortillas, a third of the remaining meat mixture and 1 cup cheese. Repeat layers. Top with remaining tortillas and meat mixture., Cover and bake at 375° for 30 minutes. Uncover; sprinkle with remaining cheese and top with tortilla chips. , Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. 1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning

4 cups shredded Colby-Monterey Jack cheese, divided
1 jar (16 ounces) mild salsa
2 cups water
2 cups sour cream
1 can (2-1/4 ounces) sliced ripe olives, drained
3 green onions, chopped
1 medium tomato, chopped, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in beans, chilies, taco seasoning and hot salsa., In a greased 13x9-in. baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. 3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
  • Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

4 ounces marinara sauce
8 ounces canned corn
14 ounces black beans, cooked
14 ounces Monterey Jack cheese, plus more for topping

16 ounces chicken, cubed

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare the tortillas by soaking them in hot water until they are slightly soft. Coat the bottom of a 9 by 13-inch pan with about 1/2 of the marinara sauce. Spread 4 tortillas down on top of the sauce in the pan. Top the tortillas with about 1/3 of the corn, beans and cheese. Sprinkle with salt and pepper. Then add 1/3 of the chicken. Place 4 more tortillas on top and repeat with the toppings. After you have 3 layers spread the remaining marinara sauce and top with more cheese. Place in oven for 45 minutes.

¾ cup chopped green onions

1/2 cup mild, medium or hot salsa
1 (4-ounce) can chopped green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground chili powder
1/4 teaspoon cayenne pepper, or to taste
8 (6-inch) corn tortillas, cut into 6 wedges

Steps:

  • Preheat oven to 350 degrees F.
  • Coat an 11 by 7-inch baking pan with cooking spray.
  • In a large bowl, combine chicken, sour cream, 3/4 cup of the Monterey Jack cheese, 3/4 cup of the Cheddar, salsa, chiles, cilantro, chili powder, and cayenne pepper. Mix well and set aside.

This has been a hit for everyone I've made it for. I think it was originally from a magazine, but I lost the paper recipe years ago and have been making it my own way ever since. I lightened it up a bit with light cheese and lean beef, but you could use the regular stuff.

1 lb lean ground beef
1 small onion
1 (4 ounce) jar chopped green chilies
1 (1 1/4 ounce) packet taco seasoning mix (mild or spicy)
1 (12 ounce) jar salsa (any kind you like)
1 (8 ounce) can tomato sauce
1 (12 ounce) can black beans or 1 (12 ounce) can kidney beans, drained and rinsed
8 medium flour tortillas
8 ounces cheddar cheese or 8 ounces Mexican blend cheese

Steps:

  • Preheat oven to 350.
  • Brown the beef with the onions. Drain off fat.
  • Add the taco seasoning, and stir well.

  • Sautee onions, garlic and green pepper in oil until tender.
  • Add tomatoes (drained), salsa and cumin, bring to a boil.
  • Simmer for two minutes.
  • Drain and rinse beans and add to others. If you are using, add ground beef here.
  • In a 9X13 pan, layer 1/3 of the bean mixture, then tortillas then 1/2 of the cheese.
  • Repeat with 1/3 of the beans then tortillas then the rest of the beans and put the remaining cheese on top.
  • Bake in a 350 degree oven for 35 minutes and serve with sour cream.
  • Option: Add ground cooked ground beef to the bean mixture for non-vegetarian version.

I adapted this from the May 2001 issue of Prevention Magazine. A different take on lasagna, but really good! Note: instructions updated to appease negative commenter. It honestly never occurred to me that noodles might not have to be cooked first...

1 cup cottage cheese
1 egg
1 lb lean ground beef
14 ounces canned Mexican-style stewed tomatoes, crushed and undrained
2 tablespoons tomato paste
15 ounces canned black beans, drained
4 ounces canned diced green chiles, drained
1 tablespoon chili powder
lasagna noodle, to fit pan (about 6)
3 cups shredded monterey jack cheese (I like equal amounts of both) or 3 cups cheddar cheese (I like equal amounts of both)

Steps:

  • Boil lasagna noodles according to package directions. Drain and set aside.
  • Combine cottage cheese and egg in a small bowl, and stir to mix well. Set aside.
  • Place the ground beef in a large nonstick skillet over medium heat.
  • Cook, stirring to crumble, until the meat is no longer pink.
  • Add the tomatoes, tomato paste, beans, chiles, and chili powder, and stir to mix well.
  • Cook, uncovered, stirring frequently, for about 10 minutes, or until the mixture is thick.
  • Remove the skillet from the heat and set aside.
  • Coat a 13x9 inch pan with cooking spray, and line the bottom of the pan with one layer of lasagna noodles.
  • Spread half of the meat mixture over the noodles, dot with half the cottage cheese mixture, and top with half the shredded cheese.
  • Repeat the layers using the remaining ingredients.
  • Cover the pan with foil, and bake at 350*F for 25 minutes.
  • Remove the foil, and bake for 5 minutes longer, or until heated through and the cheese is melted and bubbly.
  • Remove the pan from the over, and let sit for 10 minutes before cutting into squares and serving.
