Steps:
- Pour several inches of oil into a deep saucepan. Begin heating it up to 375F degrees over medium-high heat. It's important to use a cooking thermometer to get it to the right temperature and not overheat the oil.
- In a large bowl, combine pancake mix, sugar, cinnamon and nutmeg, milk, beaten eggs and 2 tbsp. oil.
- Scoop batter up using a spoon or a small cookie scooper and drop into the hot oil. A generous teaspoon of the batter is enough.
- Don't make them too big and don't let your oil get out of control hot and don't try to cook too many at one time.
- Drop about 3-4 puppies at a time into the oil.
- Flip them over once during cooking so the get evenly brown on all sides.
- Small batches work best so you have a chance to flip them around as they cook. Continue with this process until they are all done.
- When they are finished frying, place them onto a paper towel lined tray to drain excess grease. They will be golden brown when done.
- Sprinkle with cinnamon sugar as soon as they come out of oil.
- To make the icing, stir together powdered sugar, milk and extract in a small bowl. Stir until smooth. Then serve!

Steps:
- Pour oil into a large pot to a depth of 2 inches. Heat over medium heat until the oil registers 340 to 350 degrees F on a deep-frying thermometer.
- In a saucepan, combine the milk, water, butter and a generous pinch of salt. Bring to a simmer over medium heat, allowing the butter to melt completely. Add the cayenne to the flour and, all at once, pour the mixture into the saucepan. Cook, stirring with a wooden spoon, until the "paste" pulls away from the pan, about 2 minutes. Continue stirring for another 2 minutes to allow the moisture to evaporate.
- Off the heat, add the mashed potatoes to the saucepan. Return to the heat and stir for another minute. Taste and adjust the seasoning with salt and pepper if needed.
- Remove from the heat and continue stirring. Whisk the eggs together and, while stirring, add the eggs to the mashed potato mixture. Continue stirring until a smooth paste is formed. Stir in the Parmesan and season with pepper.
- Transfer the mixture to a large pastry bag fitted with a large open star tip. In batches, pipe inch-long dollops of the choux paste into the hot oil, using a knife or the side of the pan to cut the paste. Fry until the fritters are deep golden brown all over, 3 to 4 minutes. Remove with a slotted spoon and turn out onto a paper towel-lined plate.

PANCAKE POPPERS
Pancakes didn't turn out so well on my electric stove top, so I invented these. They are light and airy and freeze well too. Try them with strawberry jam, dipped in syrup, or sprinkled with powdered sugar. Perfect for kid and adult brunches! This is a wonderful pancake recipe on its own too.

HUSH PUPPIES
I ran into making these by mistake. You can change the cooking time to be longer or shorter to your desire of doneness. Aunt Jemima pancake mix is a suggestion. It is sweeter than Bisquick and other brands. After baking, you can add powder sugar to the top and make it a dessert if so desired. They are wonderful.
