This recipe is really great. You can put it in the oven at the same time you're cooking what you want to put over it (chicken stew, sausage and tomatoes, etc.) Leftovers can be sliced the next day and sauteed in butter.

1 cup polenta (not instant - Goya corn meal is really good with this receipe - or you can use imported polenta)
5 cups water or 5 cups broth
salt
1 tablespoon butter

Steps:

  • Mix everything in a shallow pan which is ovenproof.
  • Put it in a 350 degree oven.
  • After about 40 minutes, give it a stir and see if it's done.
  • If not, cook another few minutes.
  • You can add less or more liquid, depending upon whether you like the polenta soft or more solid.

2 3/4 cups water
3/4 teaspoon kosher salt
1/2 cup polenta
1/3 cup heavy cream
1/2 cup Parmesan cheese
1 1/4 cups drained, julienned oil-packed sun-dried tomatoes
3 tablespoons chopped fresh basil
1 tablespoon balsamic vinegar
3/4 teaspoon minced garlic
1/8 teaspoon pepper

Steps:

  • Brush an 8-by-8-by 2 1/2-inch glass baking dish with the oil. Bring the water and kosher salt to a boil in a heavy, medium saucepan over medium heat. Add the polenta using a whisk to incorporate. Reduce the heat. Let simmer for about 10 minutes, stirring frequently. Add the cream, using a whisk to incorporate. Cook until the consistency is soft and thick, about 10 minutes. Remove from the heat and add the Parmesan cheese, using a whisk to incorporate. Pour the polenta into the prepared baking dish and spread evenly into the dish using a large spatula or the back of a large spoon. Refrigerate until chilled.
  • To make the salsa: Mix the sun-dried tomatoes, basil, balsamic vinegar, garlic, and pepper together in a small bowl.
  • To assemble: Preheat the oven to 300 degrees F. Trim the edges of the polenta and cut into 36 squares. Top each square with 1/2 teaspoon of the salsa. Place on a foil- or parchment paper-lined baking sheet. Bake until slightly warm, 8 to 10 minutes. Serve warm.

previously prepared sun oven chili, any kind
grated white cheddar cheese (optional)

Steps:

  • Set Sun Oven out to preheat. Spray a baking dish with cooking set aside. Cut polenta into enough 1/2-inch thick slices to cover the bottom of the baking dish. Spread 1/2 of the chili over the polenta in the dish. Cover the chili with another layer of polenta slices and then another layer of chili. Finish with a layer of polenta slices. Cover the baking dish with tin foil and a dark tea towel. Bake in Sun Oven until heated through, 30 to 45 minutes. Remove the tea towel and the tin foil; sprinkle the cheese on top. Leave dish in the Sun Oven until the cheese melts, 3 to 5 minutes.

Steps:

  • Bring the water to a boil in a large, heavy pot.
  • Add the salt; then add the cornmeal in a very thin stream, letting it run through a closed fist. Stir constantly with a whisk while adding.
  • When all the cornmeal has been added, stir with a wooden spoon 2 minutes, and then cover pot. Adjust heat so the water is at a lively simmer. After 10 minutes, stir 1 minute; then cover pot again. Repeat three more times. Let polenta cook 5 minutes longer, for a total of 45 minutes.
  • Stir vigorously for another minute. Transfer to a moistened bowl (rinsed but not dried), and let polenta rest 10 to 15 minutes. Unmold onto a platter and serve at once, or let it cool to use in other recipes.

Steps:

  • Set Global Sun Oven out to preheat. Bring the water to boil in a dark, light-weight, lidded pot. Add the salt. Add the polenta in a very thin stream, keeping the water boiling and stirring with a whisk the entire time. When you have put in all the polenta, stir with a long-handled wooden spoon for 2 minutes; cover the pot and place in the Sun Oven until all the water has been absorbed, 1 1/2 to 2 hours. If serving immediately: Spray a large metal bowl with cooking spray. Turn the cooked polenta out of the pot and into the bowl. Let it sit for 10 t0 15 minutes, turn the bowl over onto a large round platter. It goes well with any stewed, braised, or roasted meat. If cooling for later use: Spray a 9-by 13-inch baking pan. Turn the cooked polenta out of the pot and into the pan. Let it cool at room temperature, and then turn the pan over onto cutting board. Wrap it tightly with plastic wrap and store in the refrigerator.

POLENTA CREAMY GOOD AND ALMOST NO STIR

I was one of few that tested this for Cook's Illustrated. I was very impressed with this method which uses a secret ingredient of baking soda. Baking soda added to the cooking liquid can reduce the time it takes for the gelatinization to occur which in turn shortens the cooking time. You can use vegetable stock or chicken broth in place of the water. I tasted and it was good but wanted to kick it up and added chopped scallions and chopped chipotles for a kick. Just remember to simmer over very low heat so low you don't think it is cooking.

2 teaspoon salt (I used 1/2 the recipe called for 1 1/2)
1 pinch baking soda
1 1/2 cups coarse ground cornmeal
2 tablespoons butter (I used smart balance) or 2 tablespoons Smart Balance Omega Plus (I used smart balance)
4 ounces parmesan cheese, 2 cups grated
black pepper
1 scallion, sliced (optional)
1 chipotle chile in adobo, seeded and minced (optional)

Steps:

  • Bring water to boil in a heavy bottom 4 quart pan over medium high heat.
  • Stir in salt, and baking soda. Slowly pour cornmeal into the water in a steady stream stirring with a wooden spoon.
  • Bring to a boil stirring consistently for 1 minute.
  • Reduce to the very lowest heat possible and cover.
  • After 5 minutes whisk polenta to smooth out any lumps for 15 seconds,scraping down sides and bottom of pan. Cover and continue to cook without stirring until grains are tender but slightly al dente. About 25 minutes.
  • Remove from heat and stir in butter and cheese.
  • Stir in scallions and chipotle if using.

SUN OVEN BAKED PASTA

2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, finely sliced
1/4 to 1/2 teaspoon crushed red pepper
1 (26-ounce) carton strained tomato (pomi if you can find it)
salt to taste
1/2 cup fresh basil leaves, torn into large pieces
1 pound dried pasta, rigatoni, penne, fusilli, or similar shape
3 cups freshly grated Parmesan cheese
1 pound fresh mozzarella cheese, sliced

Steps:

  • Set Sun Oven out to preheat. Lightly oil a baking dish, set aside. In a large sauce pan, toss the oil with the onion, garlic, and red pepper. Cook in the Sun Oven, uncovered, until the onion softens, 20 to 30 minutes. Stir in the strained tomatoes and season with salt. Cover and continue cooking in the Sun Oven until the oil separates from the tomatoes, 45 minutes to 1 hour. Leave the Sun Oven out. While the sauce is cooking prepare the pasta according to the instructions on the package draining it about 2 minutes before it's done. Taste the sauce and adjust for salt if needed then toss the pasta with 1/2 of the sauce and 1 cup of the Parmesan cheese. Spread out 1/3 of the pasta in the prepared baking dish. Top with some tomato sauce, 1/2 of the mozzarella, 1/3 of the remaining Parmesan, and 1/3 of the basil. Repeat; finishing with a layer of pasta, more sauce, the remaining Parmesan and basil. Cover with tin foil and a tea towel and bake until the cheese melts, about 45 minutes.
