Win friends - make bellinis! This recipe makes a thick cordial, a perfect base for the cocktail (just add prosecco!), or top up with soda water for a summer refresher.

Number Of Ingredients 4

1 kg white peaches
2 vanilla pods
250 g golden caster sugar
1 lemon

Steps:

  • Halve and destone the peaches. Halve the vanilla pods lengthways and scrape out the seeds.
  • In batches, place the peaches in a food processor or blender, skin included, and blitz to a purée.
  • Spoon the peach purée into a pan and stir in the sugar, lemon juice and vanilla seeds.
  • Bring to a simmer over a low heat and let it bubble away for 20 minutes, or until thickened.
  • Using a funnel, carefully pour the warm cordial into sterilised bottles or jars, then seal and store in a cool place until ready to use.

Make your own refreshing cordial with simple ingredients: peaches, basil, sugar and lemon juice. This cooling fruit tipple is perfect for summer sipping

Yield Makes 375ml

Number Of Ingredients 4

1kg peaches, ripe, stoned and chopped
6 sprigs basil, leaves torn and stem included
75g caster sugar
2 tbsp lemon juice

Steps:

  • Put the peaches, basil and 600ml water in a pan, and bring to a gentle simmer. Cook for 40-50 minutes or until the fruit is really soft, mashing gently with the back of a spoon to release the juices. Cool, then strain through a straining bag or piece of muslin, squeezing to release as much juice as possible.
  • Measure out 375ml of juice and weigh 75g of sugar (always use a 5:1 juice to sugar ratio). Tip the juice and sugar back into the pan and heat gently, stirring, until the sugar has dissolved. Stir in the lemon juice, then cool. Will keep in the fridge for two weeks. To serve, dilute with chilled sparkling or tonic water, or add to bourbon and ginger beer for a fruity cocktail.

12 fresh peaches, pitted and chopped
4 ½ cups white sugar
1 (2 ounce) package dry pectin

Steps:

  • Crush 1 cup chopped peaches in the bottom of a large saucepan. Add remaining peaches, and set pan over medium-low heat. Bring to a low boil, and cook for about 20 minutes or until peaches become liquid (my family likes a few bits of peach left) .
  • Pour peaches into a bowl, and then measure 6 cups back into the pan. Add sugar, and bring to a boil over medium heat. Gradually stir in dry pectin, and boil for 1 minute.
  • Remove from heat after 1 minute, and transfer to sterilized jars. Process in hot water bath canner for 10 minutes. Let cool, and place on shelf.

4 cups sliced fresh peaches
½ cup all-purpose flour
½ cup brown sugar
½ cup cold butter
1 teaspoon ground cinnamon
¼ teaspoon salt
1 cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange peaches evenly in an 8x8-inch baking dish.
  • Mix flour, brown sugar, butter, cinnamon, and salt in a bowl using a pastry cutter until evenly crumbled. Fold oats into flour mixture; sprinkle and press topping into peaches.
  • Bake in the preheated oven until topping is lightly browned, about 30 minutes.
