This recipe was adapted from one that my Italian-born mother and grandmother followed. They used old irons on a gas stove, but now we have the convenience of electric pizzelle irons. These delectable cookies are still a traditional treat in our family. —Elizabeth Schwartz, Trevorton, Pennsylvania

- In a large bowl, beat the eggs, sugar and oils until smooth. Gradually add flour and mix well., Bake in a preheated pizzelle iron according to manufacturer's directions until golden brown. Remove to wire racks to cool. Store in an airtight container.

- In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, lemon zest and vanilla, mix well. Stir in the flour and baking powder.
- Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 30 seconds. Test the cooking time on the first one, because temperatures may vary. Remove cookies carefully from the iron and cool on wire racks.

PIZZELLE
Hailing from Abruzzo in Central Italy, pizzelle are crisp, flat waffle-esque cookies made in a special hot iron. Like mostaccioli, these cookies predate Christmas -- in fact, it is said that this is the oldest known cookie recipe on earth, dating back to the 8th century BC. In olden times, presses were made from cast iron and would be heated over a fire, or directly on the stovetop. You can still find those irons if you're up to the challenge, but electric irons are much easier to use, and very easy to find both online and at major retailers.

- Melt butter and set aside to allow it to cool before use in the batter. In the bowl of an electric mixer, beat eggs and sugar together. Next add vanilla, anise and melted butter. Sift flour and baking powder into mixture, and mix on low until the batter becomes stiff enough to be dropped by a spoon. If you have never made pizzelles before, the batter is surprisingly thick in consistency (and that's normal). The pizzelle iron closes very tightly, so the thick batter will fill all of the crevices. Once the batter is ready, it's time to preheat the pizzelle maker. Most have a light on the front to let you know once it is up to temperature. Spray the pizzelle iron with vegetable oil before starting to make pizzelles. You will likely have to spray it a couple of times at the beginning of baking, and then should be pretty stick-free. Now hunker down because this part takes a little bit of time. Drop about 1/3-1/2 tbsp of batter into the center of the pizzelle shape and close the pizzelle maker. Each iron is different, so follow the instructions on the iron that you have. We are using an old VillaWare Pizzelle Baker, and it takes about 15 seconds before the pizzelles are done. Once done, grab a fork and gently remove the pizzelles and lay them onto a flat surface. If they accidentally rip during transit, while still warm the pizzelles are still flexible. So it's easy to press them together again. Repeat until done. I had the pizzelles cooling on the table, and every time my two year old walked by he would slide one off and run away with it. So, if this is your method too, beware of disappearing pizzelles. Once the pizzelles are cooled, any excess can be broken off of the sides. Now it's time to add the confectioner's sugar over top! Pour confectioner's sugar into a sifter and sprinkle over each side of each pizzelle. Now they are ready to store until Christmas (or eat now of course). We stack our pizzelles about 10-12 high and wrap each stack in an airtight wrapper.
GRANDMA'S WAFFLE COOKIES (PIZZELLES)
I could always count on finding these authentic Italian cookies in Grandma's freezer, and her house always smelled yummy! They're great dipped in milk. Grandpa was a blacksmith and actually made their waffle iron, which I still have, although I use my modern electric pizzelle maker when making these.

- 1. In a bowl, sift together flour and baking powder.
- 2. In electric mixer, beat together eggs and sugar, add the melted butter, vanilla and anise extract.
- 3. Add the flour mixture and beat until smooth.
- 4. Preheat your pizzelle iron according to manufacturer directions and lightly spray the pizzelle grids with non-stick spray or lightly brush with vegetable oil.
- 5. Drop batter by rounded tablespoonful onto center of each preheated grid. This amount can vary according to the size of your pizzelle maker.
- 6. Close lid and bake approximately 40-50 seconds, depending on your preference for browning and/or the consistency of your batter.
- 7. Be sure to lay hot pizzelle's in single layer to cool completely.
- 8. Once cooled dust with powdered sugar. May be stored stacked in an airtight bag.
PIZZELLES
Pizzelle batter is cooked on a special iron (cialde iron), which gives them decorative patterns. Pizzelles can also be made into edible dessert cups -- fill these with berries and ice cream.

- Heat a nonstick pizzelle iron. In a large bowl, sift together flour, baking powder, and salt; set aside.
- In a large bowl, whisk eggs. Slowly add sugar, and continue mixing until well-blended. Whisk in vanilla and lemon extracts. Slowly add the cooled butter in a steady stream, whisking continuously until the batter is smooth.
- Slowly add the sifted flour mixture, and keep whisking until flour is completely incorporated into the batter. Do not overbeat.
- Fill a pastry bag fitted with a 1/4-inch or 3/8-inch plain tip with batter. Pipe 1 1/2 tablespoons of batter in a circle in the center of each pattern on the heated pizzelle iron. Close the iron, and seal with the clasp. Cook for 50 to 60 seconds. Using a small spatula, remove pizzelles, and place on wire rack to cool.
CHOCOLATE PIZZELLES
These are thin waferlike cookies and you must have a pizzelle iron to make them. The Italians call them "Pizzelle Alle Nocciole".
