An easy protein bar recipe with just a few ingredients, and you can can customize it for different flavors!

1 1/2 cup peanut butter, (or allergy-friendly sub)
3/4 cup unsweetened protein powder of choice ((90g))
1/4 cup pure maple syrup, honey, or agave
1/2 tsp salt
4 oz melted chocolate chips, optional

Steps:

  • Stir all ingredients except optional chips to form a dough. Either shape into bars with your hands or smooth into a lined 8x8 pan, refrigerate until chilled, then cut into bars. For the optional chocolate coating, spread the melted chocolate over the pan before chilling. (I usually stir 2 tsp oil into the melted chocolate for a smoother sauce, but it's not required.) Or you can dip the bars into the chocolate sauce individually and then chill to set. View Nutrition Facts

This is our rendition of a protein bar to have for quick meal/snack options that you can make at home. We really liked this one... not too sweet. We use fruit juice sweetened dried cranberries. You can set aside some of the nut mixture if you'd like to put on top, but it makes for messy bars.

2 cups walnuts
1 cup pecans
2 cups almonds
1 cup pumpkin seeds
1 cup dried cranberries
1 cup vanilla protein powder
½ cup pitted dates
½ cup raisins
½ cup coconut flour
¼ cup maple syrup
3 tablespoons coconut oil
1 tablespoon vanilla extract
1 ½ teaspoons ground cinnamon
1 ½ teaspoons molasses

Steps:

  • Preheat oven to 220 degrees F (104 degrees C). Arrange walnuts and pecans on a baking sheet.
  • Bake in the preheated oven until nuts are roasted and fragrant, about 30 minutes. Remove nuts from oven. Increase oven temperature to 230 degrees F (110 degrees C). Grease a 9x13-inch pan.
  • Pulse roasted walnuts, roasted pecans, and almonds together in a food processor until mixture is resembles a coarse meal; transfer to a large bowl. Add pumpkin seeds, cranberries, protein powder, dates, raisins, coconut flour, maple syrup, coconut oil, vanilla extract, cinnamon, and molasses; mix well. Press mixture into the prepared pan.
  • Bake in the preheated oven until golden brown, about 40 minutes.
