Simple Homemade Sausage Patties image

Assembling pork sausages is a snap and, as always, if you use best-quality ingredients, it's hard to beat homemade.From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Yield Makes 8 small patties

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

3/4 cup shredded cheddar cheese (may sub monterrey jack cheese)
1/4 cup buttermilk
1 tablespoon finely chopped onion
2 teaspoons rubbed sage
3/4 teaspoon salt
3/4 teaspoon pepper
1/8 teaspoon garlic powder
1/8 teaspoon dried oregano
1 lb ground pork

Steps:

  • In a bowl, mix first 8 ingredients.
  • Crumble pork over the mixture and combine (may need to use your hands).
  • Shape into 8 patties and refrigerate for 1 hour.
  • In a greased skillet over medium heat, fry patties for 5-6 minutes on each side or until meat is no longer pink. They may stick a little to the pan due to the cheese.

This reminds me of the sausage my Dad made with venison. I didn't like eating "Bambi", but I loved his sausage. While I am not normally a breakfast eater, I have seen some rather luscious pancake and French toast recipes posted. Add some maple syrup and I'll join you for brunch! The recipe is from Bon Appetit 1989. Prep time includes refrigeration.

8 slices white bread, crusts trimmed
1/2 cup milk
4 tablespoons oil
1 onion, chopped
3 lbs ground pork
1 egg, beaten
1 tablespoon rubbed sage
1/2 teaspoon allspice
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Soak bread in milk in a large bowl for 5 minutes, tear bread into small pieces, gently squeeze out excess milk and return to bowl after discarding milk.
  • Heat 1 tbls oil in a heavy skillet, add onion and sautee until soft.
  • Add onion and remaining ingredients to the bowl and stir until mixture pulls away from the sides of the bowl.
  • With wet hands, form into 24 balls, then flatten each ball until 1/2 inch thick.
  • Cover and refrigerate 1 hour or make the day before.
  • Cook sausage patties in the remaining 3 tbls of oil over medium about 5 minutes per side and drain on paper towels.

Steps:

  • Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. 1/2 cup coarse fresh bread crumbs
2 tablespoons milk

2 teaspoons salt

1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon cayenne
1/8 teaspoon ground cloves
1 teaspoon finely chopped fresh thyme

Steps:

  • Cook onion in 2 tablespoons oil in a small heavy skillet over moderately low heat, stirring occasionally, until softened and beginning to brown, 8 to 10 minutes. Cool 10 minutes.
