I love sausage, I'll eat it at breakfast and I'm known to put sausage in my chili, as well as blends of sausage and turkey, sausage and beef, and sausage and veal. This seasoning blend works beautifully with a combination of ground pork and ground turkey.

My husband makes some of the best breakfast sausage I've ever had, and he was gracious enough to share the seasoning recipe! He doesn't make it too sweet on purpose--because I usually drench the sausage patties with maple syrup anyway--so if you prefer a sweeter variation, you could always add more brown sugar to taste. This seasoning amount is enough for 1 pound of ground pork.

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes

Steps:

  • Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

¼ teaspoon dried marjoram

2 pounds ground beef (75% to 80% lean)

Steps:

  • Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. Place the ground beef in a large bowl; mix the spice blend into the ground beef with your hands until evenly integrated. Refrigerate for 24 hours to let the flavors blend.
  • Divide the ground beef mixture into 8 patties.
  • Place a large skillet over medium heat; cook the patties in the skillet until firm, hot, and cooked in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

Adapted from a recipe that came with one of my pizza pans. Recipe can be doubled, tripled, etc as needed. Each batch is enough to season 1 pound of meat. Leave out the crushed red pepper flakes for milder sausage.

3 1/2 teaspoons paprika

Steps:

  • Blend all ingredients together in a spice grinder or mini-food processor (or you may also just stir together if you like some chunkier bits of fennel in your sausage).

1 teaspoon thyme

1 1/2 teaspoons sea salt
1 1/2 teaspoons parsley flakes
1/2 teaspoon ground nutmeg
1/2 teaspoon cayenne pepper
2 teaspoons brown sugar
1/2 teaspoon rosemary
1/2 teaspoon fennel seed (or you can use anise. Skip this if you don't care for that "licorice" flavor.) (optional)

Steps:

  • Stir the spices together and mix into 2 pounds of ground pork. You can cook it right away but it tastes better if you refrigerate it for 3 to 24 hours to let the flavors blend together.
  • Notes: I form the loaf into a roll, and freeze for a few hours just before cooking so I can slice it easily for cooking. You can also form in into patties and layer them with pieces of wax paper, then seal in a plastic bag for freezing. Then you can just take out individual servings. Try adding red pepper flakes for a spicier sausage, or maple syrup for a maple sausage.
