EASY CHOCOLATE BROWNIES



Easy Chocolate Brownies image

Recipe video above. These are my "go to" brownies, the one I have been making for years that's super easy and outrageously chocolatey. The best fudgey chocolatey brownies made without fuss, in one bowl in 10 minutes. These are not the cakey kind, they're soft fudgey kind. Super rich and moist!

200g / 14 tbsp unsalted butter ((1 3/4 US sticks))
200 g / 1 1/4 cups dark chocolate chips ((7 oz) (Note 1))
1 cup (175g) brown sugar (, loosely packed )
3 eggs (, lightly beaten)
1 tsp vanilla extract
1/2 cup (75g) plain flour
1/4 cup (30g) cocoa powder
Pinch of salt
180g/6oz dark chocolate block/bar (optional)
1.5 cups roughly chopped walnuts (or other nuts)

Steps:

  • Preheat oven to 180°C/350°F (160°C fan forced).
  • Spray a 20cm/8" square tin with oil and line with baking/parchment paper with overhang (Note 2).
  • Place butter and chocolate chips in a heatproof bowl, microwave in 30 second bursts (takes me 1m 30 sec) until melted. Stir until smooth.
  • Add sugar and vanilla, mix, then add eggs and mix well until smooth and molten.
  • Add flour, cocoa and salt and stir until smooth. Stir in chopped chocolate, pour into pan.
  • Bake 24 minutes for really gooey in the centre, 28 minutes for fudgey but still very moist (my favourie, shown in video & photos), 32 minutes for moist fudge-cake-like. (See in post for toothpick testphotos).
  • If you didn't use the extra chocolate for stirring in, reduce cook time by 2 minutes.
  • Rest for 10 minutes before lifting out of the pan. Allow to cool for at least 20 minutes before cutting. Store in an airtight container for 4 days (bet they don't last that long!) or freeze for 3 months.

2 cups white sugar
½ cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup walnut halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt. Spread the batter into the prepared pan. Decorate with walnut halves, if desired.
  • Bake in preheated oven for 20 to 30 minutes or until a toothpick inserted in the center comes out with crumbs, not wet. Cool on wire rack.

2 tablespoons canola or vegetable oil
2 teaspoons vanilla
2 egg whites or 1/4 cup fat-free egg product
3/4 cup Gold Medal™ all-purpose flour
1/2 cup unsweetened baking cocoa
1/2 teaspoon salt
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Spray 8- or 9-inch square pan with cooking spray.
  • In medium bowl, mix granulated sugar, yogurt, oil, vanilla and egg whites. Stir in all remaining ingredients except powdered sugar. Spread in pan.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Cut into 4 rows by 4 rows. Sprinkle with powdered sugar just before serving.

1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1/3 cup sugar
2 egg whites
1 teaspoon vanilla
1 box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
1/4 cup canola oil or unsweetened applesauce
1/4 cup water
4 egg whites
1 teaspoon vanilla
1/4 cup miniature semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in remaining filling ingredients until well blended.
  • In large bowl, stir brownie mix, oil, water, 4 egg whites and 1 teaspoon vanilla with spoon until well blended. Spread in pan.
  • Spoon filling mixture over brownie batter in pan. Cut through filling mixture and batter with knife several times for marbled design. Sprinkle with chocolate chips.
  • Bake 28 to 32 minutes or until toothpick inserted in brownie 2 inches from side of pan comes out clean or almost clean. Cool completely, about 1 hour. For 24 brownies, cut into 6 rows by 4 rows. Store covered in refrigerator.

⅓ cup unsweetened cocoa powder

3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

All sugar is bad sugar, be it your regular refined sugar or the zero cal ones. These skinny brownies are easy to make and has zero butter, oil, flour or sugar. Fudgy texture and the rick chocolate taste is a perfect way to have your cake and eat it too!!!

2 tablespoons cocoa, powder/4 tbsp for that rich chocolate taste
3 medium size ripe bananas, roughly chopped
1/2 cup smooth peanut butter
1/2 teaspoon vanilla essence

Steps:

  • Preheat the oven at 350°F.
  • In a microwave safe bowl melt the butter. Put all the ingredients in a blender and blend to a smooth puree.
  • Grease or line a baking pan and pour the mixture, spread evenly. Bake for around 20 minutes or until done. Insert a skewer in the middle and if it comes out clean then your brownies are done.
  • Take out from the pan and let it cool completely on a wire rack and cut into squares before serving.
  • Store in an airtight container, refrigerate.
  • Not a fan of Peanut Butter? Substitute it with any nut butter of your choice.
  • These brownies are mild sweet in taste. It will definitely not taste like your gourmet cakes but works well when you are watching those calories!
  • You can add raisins or chopped prunes for that extra sweetness.

  • Place all of the ingredients except for the peanut butter into a blender or food processor. (Yes, a blender!) For easier blending, place the liquid ingredients into the blender first. Blend until mix is smooth and oats are ground up. You will have to stop the blender and scrape down the sides a few times.
  • Pour batter into prepared baking dish. Batter will be thin. Microwave peanut butter for about 30 seconds. Drop melted peanut butter by spoonfuls onto the batter, swirling gently with a knife to create a marbled effect. (Try not to overmix!)
  • Bake for 20-25 minutes or until brownies begin to pull away from the sides of the pan. Brownies will be extra fudgy, so be sure to wait until COMPLETELY cooled – I stuck mine in the refrigerator for 2 hours, which allowed them to be cut very easily. Cut into squares and enjoy!
