"Alter the vegetables any way you like! Sometimes I add tomatoes, squash or celery," notes Barbara Banski from Fenton, Michigan. "This yummy salad is always a hit at pot lucks."

2/3 cup uncooked spiral pasta
1/2 cup chopped fresh broccoli
1/3 cup Italian salad dressing
1/4 cup chopped peeled cucumber
1/4 cup chopped sweet red pepper
6 slices pepperoni, chopped
2 slices hard salami, chopped
2 tablespoons crumbled feta cheese
2 tablespoons sliced ripe olives
1 teaspoon ranch salad dressing mix
1/4 teaspoon celery seed

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients., Drain pasta and rinse in cold water. Add to broccoli mixture; toss to coat. Cover and refrigerate for at least 1 hour.

2 tablespoons fresh lemon juice
2 1/2 teaspoons Dijon mustard
1 clove garlic, minced
6 tablespoons olive oil
1 (14 ounce) can hearts of palm, drained,sliced into rounds
1 (14 ounce) can artichoke hearts, drained,quartered
1 head butter lettuce
12 cherry tomatoes, halved

Steps:

  • Combine lemon juice, mustard and garlic in medium bowl.
  • Gradually whisk in olive oil.
  • Season dressing to taste with salt and pepper.
  • Add hearts of palm and artichoke hearts.
  • Let marinate at room temperature at least 20 minutes and up to 4 hours, tossing occasionally.
  • Line 6 plates with lettuce leaves.
  • Using slotted spoon, divide hearts of palm and artichoke hearts among plates.
  • Garnish with tomatoes.
  • Spoon remaining dressing over and serve.

2 thick slices rustic white bread, cut into 1-inch cubes
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
1 garlic clove, minced
2 anchovy fillets, minced
1 large egg yolk or 1 tablespoon pasteurized egg yolk
1 1/2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1 small head romaine lettuce, cored, outer leaves discarded, and heart cut into 1 1/2-inch pieces
2 tablespoons freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, toss bread with 1 tablespoon oil and season with salt and pepper. Bake until golden brown, 10 to 12 minutes. Let croutons cool completely.
  • On a cutting board, combine garlic, anchovies, and 1/2 teaspoon salt. Using a large knife, drag the blade at an angle across mixture until a paste forms. Transfer to a large bowl and whisk in egg yolk, mustard, and lemon juice. Gradually whisk in 3 tablespoons oil. Season with pepper. Just before serving, add croutons and lettuce to dressing and toss; top with Parmesan.

Palm hearts add a real crunch to this classic blue cheese and avocado salad

2 Cos lettuces
2large ripe avocados
400g can palm heart , drained
140g wedge blue cheese , such as Danish blue or stilton
handful toasted pine nuts
100ml/3½ fl oz extra-virgin olive oil
2 tbsp balsamic vinegar

Steps:

  • Remove the outer leaves of the lettuce and cut each heart into quarters from top to bottom. Soak in a sink filled with cold water for a few minutes. Split the avocados and remove the stones. Scoop the flesh out with a spoon and chop into large chunks. Cut the palm hearts into chunks of the same size. Using a sharp knife, cut the cheese into small pieces. Whisk together the dressing ingredients with some salt and pepper.
  • Drain the lettuce, then tear into bite-sized pieces and divide between four bowls. Pile a quarter of each of the other ingredients on top of each serving. Pass round the dressing and let everyone toss their own salad.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

  • In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
  • Before serving, sprinkle the green and black olives, and bacon bits over the salad.
