OLD-FASHIONED SODA CRACKERS
When I was in Mexico, one of the silliest but best things I remember eating, were homemade soda crackers that were served with our meal. They were still warm right out of the oven, and heavenly. We had them in a quaint little restaurant in a village called Taxco. These are just like them! It makes a lot, but you won't believe how quickly you'll go through them!!

Steps:
- In large bowl, combine flour, baking soda and salt.
- Cut in butter til crumbly.
- Add water, stir just until mixed.
- Turn dough out onto lightly floured surface and knead til thoroughly mixed. About 3 minutes.
- Roll out dough, a fourth at a time, on well-floured surface to 1/8" thickness.
- Cut into 2" squares.
- Place 1" apart on ungreased cookie sheets.
- Prick 2 or 3 times with a fork, then sprinkle with salt.
- Bake in preheated 350º oven for 20-25 minutes or til lightly browned.

HOMEMADE SALTINE CRACKERS
This homemade saltine crackers recipe takes under 30 minutes to make and you only need 5 basic ingredients plus salt! They're buttery, crispy, and absolutely the best!

Steps:
- Blend the egg white with the water to make an egg wash. Set aside.
- Mix together the flour and baking powder.
- If you are adding seasonings mix those in with the dry ingredients.
- Cut butter into flour mixture until it forms coarse crumbs.
- Add the milk and knead gently to form a ball.
- Divide in 4 parts and roll out paper thin on a floured surface. The thinner they are the crisper they will be.
- Cut the dough into squares or desired shapes. (a pizza wheel works great for that!)
- Place on an ungreased cookie sheet and prick all over with a fork.
- Brush with the egg wash and sprinkle with salt (or cracked pepper ..or..)
- Bake at 325 until golden brown..about 15- 20 minutes. (check after 10 minutes)
- Let cool before serving. They crisp as they cool.

SIMPLE WHITE CRACKERS
This simple white cracker recipe will be your new snacktime staple. You'll have to discard any scraps, since this dough can't be rolled again.

- Preheat oven to 325 degrees. In the bowl of a food processor, pulse flour, salt, and sugar until combined. Add butter pieces, and pulse until mixture resembles coarse meal. With the machine running, gradually add milk; process until dough comes together. Cover dough with plastic wrap, and allow to relax at room temperature for 15 to 20 minutes.
- Unwrap dough, and transfer it to a lightly floured surface. Roll into 17 1/2-by-17 1/2-inch square, 1/16 inch thick (if dough continues to spring back, allow to relax again, covered with plastic wrap, for another 10 minutes). Sprinkle dough lightly with coarse salt. Gently press salt into dough with the rolling pin.
- Using a knife or pizza cutter, cut dough into 2 1/2-inch squares. With a thin spatula, transfer to ungreased baking sheets. Liberally pierce with fork. Bake for 20 to 25 minutes, until lightly browned and crisp, rotating baking sheets if needed for even cooking. Let cool on wire rack. Keep crackers in an airtight container, at room temperature, about 1 week.
CRACKERS JUST LIKE SALTINES - HOMEMADE
These are good crackers that remind me of saltines :-) Found this recipe online a long time ago (cant remember how many crackers this makes as it has been a long time since Ive made these, sorry!!! so please dont take my servings as exact, because i really cant remember)

- Mix flour, baking powder,& shortening and then add milk; blend well.
- Form a ball with the dough and divide into 4 sections.
- Roll 1 section out very thin (about 1/8 to 3/16-inches) -- making sure it is rolled out EVENLY -- and cut with a cookie cutter (you can use all shapes!) or a pastry wheel with the crinkled edges, and repeat with other sections.
- place on an ungreased cookie sheet& prick the dough with a fork several times and sprinkle with salt.
- Bake at 375 for 12-20 minutes until golden brown, but be careful not to burn!

- Preheat oven to 375 degrees F (190 degrees C). Line a 15 x 10 inch baking pan with foil and grease it well. Line the pan with soda crackers.
- In a medium saucepan, melt the butter. Add the brown sugar and cook stirring it until it dissolves. Bring to a boil and cook about 3 minutes, stirring constantly. Immediately pour mixture over the soda crackers.
- Bake for 3 to 5 minutes or until the mixture starts to bubble. Spread the chocolate chips over the hot cookies. Let set for a minute. Spread the chocolate evenly. Sprinkle with nuts. Let cool, then cut into bars.

- Preheat oven to 350˚F (180˚C).
- Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
- Once combined, mix in the flour and add the ice water one tablespoon at a time.
- The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
- Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
- Roll out dough to ⅛ of an inch (½ cm), pinching the cracks on the ends.
- Cut into 1 inch x 1 inch (2 ½ x 2 ½ cm) squares and pierce a hole in the middle of each square for ventilation during baking.
- Place the separated crackers on a parchment paper-lined baking sheet.
- Bake for 13 minutes, or until golden brown.

- Preheat oven to 400 degrees F (200 degrees C). Line a 10x15 inch cookie sheet with aluminum foil.
