1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon Italian seasoning
5 ounces pasta (Anelli Siciliani or Rigatoni or Ditalini )
20 ounces cream of tomato soup (2 cans)

Steps:

  • In a medium-sized bowl combine ground beef, salt, ground black pepper, and Italian seasoning. Stir to combine.
  • Heat a large skillet over medium heat. Make small meatballs with about 1 teaspoon of ground beef. Brown the meatballs. The meatballs should take just about a minute or two on each side.
  • While the meatballs are cooking cook the pasta. If you are using rigatoni, slice the pasta into 1/4 inch slices. In a large pot add the tomato soup, and one can that is filled with water. Add meatballs and heat through. Add pasta and stir gently. Serve immediately.

I have been making this spaghetti recipe, from a dear family friend, for over 25 years. It is by far the best homemade sauce and meatballs we have ever had. I've also just fried the beef and added it to the sauce, then used it to make lasagna.

1 (29 ounce) can whole peeled tomatoes
19 fluid ounces tomato juice
1 (5.5 ounce) can tomato paste
1 large onion, chopped
2 tablespoons dried parsley
1 teaspoon salt
½ teaspoon crushed red pepper flakes, or to taste
½ teaspoon ground black pepper
¼ teaspoon dried thyme
¼ teaspoon ground cloves
1 ½ pounds lean ground beef
16 soda crackers, crushed
2 eggs, beaten
3 tablespoons grated Parmesan cheese
1 large clove garlic, crushed
1 tablespoon dried parsley
⅛ teaspoon dried thyme
1 (16 ounce) package spaghetti

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine tomatoes, tomato juice, tomato paste, onion, parsley, salt, red pepper flakes, black pepper, thyme, and cloves in a large pot. Bring to a boil over high heat; reduce heat to low and let simmer for 1 to 1 1/2 hours.
  • Meanwhile, combine beef, crackers, eggs, Parmesan cheese, garlic, parsley, and thyme in a bowl. Form into large meatballs and place into a broiler pan.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes.
  • Transfer meatballs to sauce and continue to simmer, 2 to 2 1/2 hours more.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Serve sauce and meatballs over cooked spaghetti.

40 cooked meatballs
2 cans (15 ounce each) tomato sauce
32 ounce beef broth
2 teaspoons oregano
1 teaspoon garlic salt
1 teaspoon dried basil
1 teaspoon kosher salt
8 ounce ditalini noodles, dry

Steps:

  • In a large slow cooker, add frozen (or fresh) cooked meatballs. Top with sauce, broth, oregano, garlic, basil and salt. Simmer on low, covered, for 5-6 hours.
  • Half hour before serving, add the noodles. Stir into the sauce, cover, and let cook.
  • Serve dinner with breadsticks and salad! ENJOY

1 lb ground beef
1 egg
1/4 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
28oz can tomato puree
4 cups water
1.5 cups dry mini ring pasta - I used Anellini
1 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
1/4 cup milk
1.5 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350F and line a baking sheet with parchment paper
  • Combine mini meatball ingredients in a mixing bowl
  • Take 1 tsp of meatball mix and roll into a small mini meatball and lay on the baking sheet
  • Repeat this process until you have used up all of the meatball mixture - if you don't have time to roll all of the meatballs you can roll several large meatball and cut them into smaller pieces one they're cooked
  • Bake the mini meatballs at 350F for 14 minutes
  • While the meatballs bake, combine small ring pasta, tomato puree, water, salt, onion powder, garlic powder, and paprika to a large pot or dutch oven
  • Heat over high heat until the mixture boils - stirring regularly
  • Once boiling, reduce to a simmer and cover the pot
  • Simmer for 10 minutes stirring frequently
  • Turn off the heat and while the pasta is still warm mix in the milk and cheddar cheese
  • Stir until the cheese is fully melted
  • Mix the mini meatballs into the SpaghettiOs and serve!

1/2 cup grated Parmesan, plus more for serving
1/4 cup finely chopped flat-leaf parsley
1 teaspoon fennel seeds
1/2 teaspoon plus a pinch crushed red pepper flakes
1 3/4 teaspoons dried oregano
Kosher salt and freshly ground black pepper
1 cup heavy cream
1 pound ground chuck
1/2 pound ground pork
1/2 pound ground veal
2 tablespoons olive oil, plus more for your hands
1/2 large onion, chopped
2 cloves garlic, finely grated
1 tablespoon tomato paste
1/2 cup dry white wine
One 28-ounce can whole peeled tomatoes
2 large sprigs basil
1 pound spaghetti

Steps:

  • Whisk together the panko, Parmesan, parsley, fennel seeds, 1/2 teaspoon red pepper flakes, 1 1/2 teaspoons of the oregano, 1 tablespoon salt and 1 teaspoon black pepper in a medium bowl until combined. Stir in the cream.
  • Combine the beef, pork and veal in a large bowl. Pull the ground meat apart with two forks as if you were shredding pulled pork, breaking up the clumps and incorporating the meat without compacting it until thoroughly mixed and no clumps remain. Add the panko mixture to the meat and use the same pulling technique to mix until all the ingredients are evenly incorporated.
  • Lightly oil your hands. Scoop out portions of the meat mixture with a 1/4-cup measuring cup or large ice cream scoop; roll the meat gently between your hands into balls. Arrange the balls on a rimmed baking sheet.
  • Heat 2 tablespoons olive oil in a 12-inch nonstick skillet over medium-high heat. Add half the meatballs and cook, turning and rolling occasionally, until they are browned on all sides, about 5 minutes total; remove to a plate. The meatballs will not be cooked through; they will finish cooking in the sauce. Repeat with the remaining meatballs.
  • Reduce the heat to medium, add the onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is tender, 6 to 8 minutes. Add the tomato paste, the remaining 1/2 teaspoon oregano and a pinch of red pepper flakes. Cook, stirring occasionally, until the tomato paste is brick red, about 1 minute. Stir in the wine, scraping any browned bits from the bottom of the pan, and cook until the liquid is almost completely evaporated, about 3 minutes.
  • Add the tomatoes and basil to the sauce, smashing and breaking up the tomatoes into bite-size pieces with a wooden spoon. Bring the sauce just to a boil, and then add the meatballs with any accumulated juices. Cover the pan, reduce the heat to low and simmer until the meatballs are cooked through, about 30 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Cook the spaghetti according to the package directions. Drain well.
  • Transfer the meatballs to a plate. Discard the basil and season with salt.
  • Add the pasta to the sauce. Gently stir until the sauce coats the pasta. Transfer the spaghetti to a serving platter and top with the meatballs. Sprinkle with Parmesan before serving.

Steps:

  • Preheat the oven to 425°F (220°C). Set a wire rack over a baking sheet and grease with nonstick spray.
