1 lb ground beef
3/4 cup water
1 3/4 cup milk ( If you are using gluten free pasta it might need a little more milk/liquid)
8 ounces tomato sauce
1 package taco seasoning or homemade taco seasoning
2 cups uncooked penne or macaroni noodles, use gluten free pasta for gluten free version
1 cup sour cream ( optional, but makes it nice and creamy)
1 ½ cups shredded cheddar cheese
Salt to taste

Steps:

  • In a large saucepan brown the ground beef. Drain any fat from the meat.
  • Add the water, milk, tomato sauce, and taco seasoning to the meat and bring to a boil.
  • Add the pasta.
  • Reduce heat to low. Cover and cook for 17-20 minutes. Test at 17 minutes to see if the pasta is done. If pasta is not done, cook a few minutes longer.
  • When the pasta is tender and done, stir in shredded cheese and sour cream if using.
  • Let sit 5- 10 minutes before serving and it will thicken more.

1 pound ground beef
3 tablespoons Homemade Taco Seasoning (OR 1 packet store-bought)
1 cup long-grain white rice (such as Jasmine)
3 cups low-sodium beef broth
1 cup grated sharp cheddar

Steps:

  • Set a large skillet, pan, pot, or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. Drain the grease from the pot and sprinkle the cooked meat with taco seasoning.
  • Add the rice and beef broth and stir well to combine. Increase heat to high and bring to a boil, then stir and reduce to a simmer.
  • Simmer, covered, for 15 to 20 minutes, stirring occasionally, until rice is tender and liquid is mostly absorbed. Stir in the grated cheese and serve immediately.

I just made this on a whim...why I have no idea but it was awesome and you can't tell a difference from the boxed stuff *yuck* It's soooo much cheaper to make it from scratch! I use Penzey's Taco seasoning but they advertise Old El Paso on the box so I assume that's what they use (could also use your own!). Also the noodles are an approximation since I kinda didn't pre-measure them I grabbed a couple of handfuls to fill up my skillet lol...same with the cheese, I had a half bag of "taco seasoned" shredded cheese left over and just threw it in there too. My husband didn't believe I made it from scratch! He was looking all over for the box haha

1 lb ground beef
1/2 onion, diced
4 tablespoons taco seasoning
1/2 cup shredded cheddar cheese
1/2 cup water
1 cup milk
2 cups uncooked egg noodles

Steps:

  • Brown ground beef and cook with diced onions. After the beef is cooked drain and rinse.
  • Put back in the pan and add and mix well the seasoning, milk, water and cheese let it come to a slight boil.
  • Add the egg noodles, let the pan simmer for about 10 minutes until egg noodles are cooked and sauce has thickened.
  • Now Enjoy! I guarantee no one will be able to tell the difference :).

1 Tbsp olive oil ($0.16)
1 yellow onion ($0.32)
2 cloves garlic, minced ($0.16)
1/2 lb. ground beef ($3.00)
1 packet taco seasoning* ($0.67)
1 15oz. can diced tomatoes ($0.79)
1 4oz. can diced green chiles ($0.67)
1/2 lb. small pasta shells ($0.50)
2 cups beef broth ($0.26)
1 cup shredded cheddar cheese ($1.15)
2 green onions, sliced ($0.20)

Steps:

  • Dice the onion and mince the garlic. Add the onion, garlic, and olive oil to a deep skillet or wide-bottomed pot. Sauté over medium heat until the onions are soft.
  • Add the ground beef and taco seasoning and continue to cook and stir until the ground beef is cooked through.
  • Add the diced tomatoes (with juices) and diced green chiles (with juices) to the beef and stir to combine.
  • Finally, add the pasta and beef broth and stir to combine once again. It's okay if the pasta is not fully submerged under the broth.
  • Place a lid on the pot and turn the heat up to medium-high. Allow the broth to come up to a full boil. Once boiling, give the pasta a stir, place the lid back on top, and turn the heat down to medium-low.
  • Let the pasta continue to simmer, stirring every few minutes and always replacing the lid, for about 10 minutes or until the pasta is tender. There should be some thick saucy liquid left in the pot once the pasta is cooked.
  • Add the shredded cheddar cheese and stir until it has melted into the sauce. Top with sliced green onions and serve!

Toppings: crushed tortilla chips, salsa, sliced avocado, chopped green onions

Steps:

  • Brown ground beef with shallot in a large skillet over medium-high heat. Drain then return to the skillet. Add taco seasoning, salsa, and chicken broth then bring to a boil. Add rice then place a lid on top and reduce heat to medium-low. Simmer for 15-20 minutes or until rice is tender then remove from heat and stir in cheddar cheese until melted. Place lid back on the skillet then let sit for 5 minutes before serving with toppings.
