Shepherd's pie is a classic mashed potato and meat dish originally from the UK. Traditional shepherd's pie was made with lamb, which shouldn't come as a surprise to anyone who knows what a shepherd is (a herder or "sheepman"). When the recipe crossed the pond, it became more Americanized and lamb was swapped out for beef. As it circulated further inland and south, even more iterations were made to the recipe, especially when it arrived in southern kitchens. As more ingredients were retired (like Worcestershire sauce), a slew of new ingredients was added to the dish, including black beans, Jack cheese, and corn muffin mix. These additions gave the recipe new life. Today, cowboy shepherd's pie bears so little resemblance to nouveau or old-fashioned shepherd's pie, that "shepherd" was completely dropped from the name of the recipe. Cowboy pie has taken on a life all its own. For our cowboy pie recipe, we personalize the dish even more. We suggest using black beans, tomatoes and Hillshire Farm smoked sausage, made with pork, turkey, and beef. These ingredients are distinctly southwestern flavors. 1 package Hillshire Farm® Smoked Sausage diagonally cut into ¼ inch slices
3 cloves garlic minced
1 medium onion 1/2 inch diced
1 green bell pepper 1/2 inch diced
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 can diced tomatoes
1 can black beans drained
1 cup shredded Monterey Jack cheese
1 box corn muffin mix prepared as directed on box
1 jalapeno minced

Steps:

  • Preheat oven to 400°F.
  • Heat a 10" oven-safe skillet over medium-high heat and add smoked sausage, cook until browned. Add garlic, onion and bell pepper and cook until vegetables are soft, about 6 minutes.
  • Stir in chili powder, cumin, salt, tomatoes with their juice and beans. Cook for 3 - 5 minutes, until mixture starts to bubble. Turn off heat and stir in cheese.
  • Mix jalapeno into the prepared corn muffin mix. Spread corn muffin batter over the mixture and bake until golden brown and cooked through, 20 - 25 minutes.

2 1/2 sticks (1 1/4 cups) butter, softened
2 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 cup good semisweet chocolate chips, plus extra for topping if desired
1 cup milk chocolate chips, plus extra for topping if desired
1/2 cup white chocolate chips, plus extra for topping if desired
16 ounces semisweet chocolate

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a mixer, cream the sugar and butter until fluffy, scraping the sides once. Add the eggs one at a time, mixing after each addition. Mix in the vanilla.
  • Sift together the flour, cocoa, baking soda and salt in a bowl, then add in batches to the mixer, mixing until just combined after each addition. Gently mix in the semisweet, milk and white chocolate chips.
  • Using a cookie scoop, add generous 1-tablespoon portions of dough to a baking sheet (about 12 portions). Repeat with the remaining dough and additional baking sheets. Dot the top of each cookie with 2 to 3 chocolate chips if you'd like them to really show up on top. Bake until the cookies are barely done and are still soft and chewy, 9 to 11 minutes. Don't overbake! Let cool on a baking rack.
  • Melt the semisweet chocolate in a bowl over a pan of simmering water.
  • Dip the cookies one by one into the melted chocolate to coat, then transfer to parchment-lined baking sheets to set.

  • Preheat the oven to 350 degrees F (175 degrees C).

1 onion, chopped
1 lb. lean ground beef
1 can (15.5 oz.) red kidney beans, rinsed
1 can (14.5 oz.) diced tomatoes, drained
4 oz. (1/3 of 12-oz. pkg.) OSCAR MAYER Natural Uncured Beef Sausage, cut lengthwise in half, then sliced crosswise
1 cup HEINZ BBQ Sauce Classic Sweet & Thick
1 VELVEETA Fresh Packs (4 oz.), cut into 1/2-inch cubes
1 pkg. (8.5 oz.) corn muffin mix
1 egg
1/3 cup milk

Steps:

  • Heat oven to 450ºF.
  • Cook and stir peppers and onions in large heavy ovenproof skillet sprayed with cooking spray on medium heat 5 min. Crumble ground beef into skillet; cook 10 min. or until evenly browned, stirring frequently.
  • Add beans, tomatoes, sausage and barbecue sauce; mix well. Top with VELVEETA.
  • Mix corn muffin mix, egg and milk just until blended; pour over ingredients in skillet. Place skillet in oven.
  • Bake 12 to 15 min. or until toothpick inserted in center of cornbread topping comes out clean and top is golden brown.

I found a recipe for "Cowboy Pie" in a recipe book ages ago, it was a really simple dish of baked beans, sausages and mash. My version has been a real work in progress and is a very satisfying comforting meal. Children always love it, and its a great way to get them eating a few veggies! PLease dont take the measurements as absolute, especially the bbq sauce, as there are so many different kinds, enough should be added to give it a zing! If you dont have mini/cocktail sausages, you can just use regular ones, I find it best to cook them whole first and then chop them up, as if you try to chop them and then cook them you end up with a gooey mess! You can really add whatever you like to this, although I do recommend the shredded cabbage as it gives it a nice crunch.

4 medium white potatoes, peeled and chopped
2 sweet potatoes, peeled and chopped
1/2 swede, peeled and chopped
3/4 cup grated mature cheddar cheese
3/4 cup grated red leicester cheese
1 tablespoon butter
1/4 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
400 g cocktail franks
2 medium red onions, sliced
1/2 red pepper, chopped
1/2 green pepper, chopped
3 garlic cloves, chopped
1/2 tablespoon mixed herbs
6 drops maggi seasoning sauce
1 (400 g) can chopped tomatoes
1 (400 g) can baked beans
1 (400 g) can kidney beans
2 tablespoons barbecue sauce
1 cup frozen mixed vegetables
1/2 savoy cabbage, shredded
1 1/2 tablespoons beef gravy granules

Steps:

  • Preheat oven to 180C/350°F.
  • Put potato, sweet potato, and swede in saucepan of cold water, bring to boil and simmer till cooked. Once cooked drain and mash with the grated cheese, butter, milk, salt and pepper.
  • Meanwhile, heat oil in pan (I find a wok works best), and brown sausages.
  • Add onions, pepper, garlic and cook till onions and peppers are going soft, dont let them burn as this will affect the taste.
  • Add cabbage and give good stir and cook till cabbage just beginning to go slightly soft.
  • Add all the remaining ingredients and give good stir.
  • Heat till bubbling and then reduce heat and allow to simmer for 5/10 mins, or till the cabbage is just beginning to wilt.
  • Spoon the bean mixture into an ovenproof dish and top with the potatoes mixture.
  • Put in oven for around 15 to 20 minutes.
  • Serve and enjoy!
