Homemade Cheez Whiz image

Homemade Cheez Whiz for nachos, cheese fries or dipping can be made in 15 minutes without adding scary chemicals or preservatives. You're welcome.

1 teaspoon cornstarch
1/4 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon mustard powder
1/4 teaspoon turmeric
1/4 teaspoon granulated sugar
1/2 cup whole or reduced-fat milk
2 ounces cream cheese, sliced
1 cup (4 ounces; 113 grams) shredded Cheddar cheese

Steps:

  • Whisk the cornstarch, salt, garlic powder, onion powder, mustard powder, turmeric, and granulated sugar together in a small bowl.
  • Add the milk and cream cheese to a small (1 quart or smaller) saucepan. Bring to a simmer over medium-low heat, whisking frequently, until the cream cheese has dissolved into the milk.
  • Whisk the spice blend into the simmering liquid and continue to cook for a minute more until it thickens.
  • Turn off the heat and gently stir in the shredded cheese, folding it into the liquid until completely melted and incorporated.
  • Serve immediately.

1 lb Velveeta cheese

Steps:

  • Melt the milk and cheese in a double boiler.
  • When creamy and smooth add remaining ingredients and mix well.
  • Cook for 5 minutes.
  • Fill Pint jars to 3/4 full.
  • Seal and process in a boiling water bath 10 minutes.

This is the simplest recipe that I use to make a version of Mexican 'Queso Fresco' and the same recipe for Homemade Ricotta Cheese.

1 gallon whole milk
¼ cup white or cider vinegar
1 pinch salt

Steps:

  • Pour the milk into a large pot, and heat until the temperature reaches 195 degrees F (90 degrees C), or almost boiling. Stir constantly to prevent scorching on the bottom of the pot. When the milk reaches the temperature, remove from the heat, and stir in the vinegar. Let stand for 10 minutes.
  • Line a strainer with cheesecloth, and set over the sink or a large pot or bowl. The milk should separate into a white solid part, and a yellowish liquid (whey). Stir the salt into the milk, then pour through the cloth-lined strainer. Let the curds continue to drain in the strainer for 1 hour. Discard the whey.
  • After the cheese has finished draining, pat into a ball, and remove from the cheese cloth. Wrap in plastic and store in the refrigerator until ready to use. Fresh cheese will usually last about a week.
